- Place the bread pieces and cranberries, if desired, into a lightly greased 3-quart shallow baking dish.Beat the eggs, half-and-half and vanilla extract in a medium bowl with a fork or whisk. Pour the egg mixture over the bread pieces. Stir and press the bread pieces into the egg mixture to coat. Refrigerate for 1 hour or overnight.Heat the oven to 350°F. Bake for 50 minutes or until a knife inserted in the center comes out clean. Tips Serving Suggestion: Serve with butter and maple syrup or sprinkled with confectioners' sugar.

This warm, sweet cinnamon roll casserole is a great twist on French toast, kind of like a French toast casserole and custard mixed. We have it every Christmas morning. Serve with whipped cream and either blackberry or strawberry preserves.

- Butter 6 slices of cinnamon swirl bread; place butter-side down into a casserole dish. Butter 6 more slices of bread and place butter-side down on top of other slices.
- Mix milk, sugar, eggs, vanilla extract, and salt together in a bowl and pour over bread. Let sit for 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Place casserole dish inside a larger pan; pour water into the outside pan, making sure not to get water into the casserole.
- Bake in the preheated oven until a knife inserted into the center comes out mostly clean, about 50 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
- In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
- Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
- Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.

- Line the bottom of a greased 13x9-in. baking dish with six slices of bread. butter remaining bread; place with butter side up over bread in pan. In a bowl, beat eggs. Add milk, cream, sugar and vanilla; mix well. Pour over bread; let stand for 15 minutes. Place the dish in a larger baking pan. Pour boiling water into large pan to a depth of 1 in. I had some homemade cinnamon swirl bread that I needed to use up so this recipe was born. Very easy to put together and bake the next morning.

- Mix remaining ingredients in a small bowl.

- Put in fridge overnight. The next morning.

- Heat griddle or skillet over medium-low heat or to 375.

- In a medium bowl whisk flour & milk together. Add salt, eggs, cinnamon, vanilla and white sugar. Mix well. Heat up a griddle or frying pan on medium heat with 2 tablespoons of butter, allow butter to melt. Whisk batter again to evenly distribute cinnamon and then dip bread into mixture and put in hot pan. Whisk batter between each dip as cinnamon will float to top. Cook french toast on each side until cooked through and golden. (approx. 2 minutes each side). Add more butter between batches to ensure pan stays well coated. Serve immediately.

- In a large bowl, dissolve yeast in warm water. Add milk, 1/2 cup sugar, eggs, butter, salt and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Mix cinnamon and remaining sugar. Punch down dough. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18x8-in. rectangle; sprinkle each with about 1/4 cup cinnamon sugar to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in 2 greased 9x5-in. loaf pans, seam side down., Cover with kitchen towels; let rise in a warm place until doubled, about 1-1/2 hours. CINNAMON SWIRL BREAD AND VALENTINE BRUNCH FRENCH TOAST
This is another variation of the Dutch oven no-knead bread that I've been experimenting with for the last few weeks, and a request by one of my daughters. After making the loaf someone asked for french toast and this is what we used. This is definately going to be on our Valentines Brunch menu next Sunday! Can't wait!!

- ~~~*~~~THE BREAD~~~*~~~
- for bread.. mix dry ingredients, then pour into water and mix until moistened, dump into greased container and close lid for 12 hours on counter.
- dump dough onto floured surface and fold edges into middle several times. If you're going to add raisins you can do that now by folding them into the bread. turn over and form ball. sprinkle with flour and cover with plastic wrap for 2 1/2 hours on counter.
- put dutch oven or covered casserole dish into oven. set oven at 500 degrees.
- while oven is heating melt butter and mix sugars in a seperate bowl.
- remove plastic wrap from dough, and turn over. brush butter onto dough, and spread sugar mixture over it. loosely roll it up.
- when oven is heated remove dutch oven and remove lid. gently lift dough and drop into dutch oven, replace lid and put back in oven. bake for 30 minutes.
- remove lid and bake for another 10 minutes. keep your eye on it, this recipe is exact for my oven but others have reported burning so check on it!
- remove from oven and immediately dump onto cooling rack to cool. yumm!! The bread is done now and you can go ahead and eat it without making the french toast...its so good it might never make the next steps!!!!

- slice bread into 3/4 inch slices the night before and lay on cooling racks in cool oven overnight. This will allow the bread to become slightly stale and hold the custard better.
- In the morning, preheat the oven to 350 degrees. mix the ingredients for the egg dip and pour some into a large baking dish. lay bread in the dip and pour more on to soak. after 5 minutes flip and soak another 3 or 4 minutes.
- fry 2 slices at a time in butter until browned, lay in greased baking dish. The frying cooks the outside but the custard is still raw in the middle of the bread, so you have to bake for 15 minutes after frying. Serve with butter, cinnamon sugar, maple syrup or fresh berries and whipped cream!
