SLOW COOKER CITRUS CHICKEN

1 orange (halved and sliced thinly)
6 chicken thighs (skinless, boneless (about 1.5 lbs.))
1 Tbsp flour
1 tsp lemon zest
1/4 tsp salt
1/8 tsp pepper
1/2 C sweet chili sauce
1 tsp sugar
1 Tbsp soy sauce
1/2 tsp ginger (minced )
4 cloves garlic (minced)
cilantro (for garnish)

Steps:

  • Place orange slices in bottom of slow cooker.
  • Toss the chicken in flour, lemon zest, salt and pepper.
  • Add chicken to slow cooker.
  • Combine chili sauce, soy sauce, sugar, ginger and garlic in a bowl.
  • Pour over chicken
  • Cover and cook on low for about 4 hours.
  • Remove chicken from cooker and cover with foil to keep warm
  • Pour remaining liquid into a sauce pan.
  • Mix together 1/4 C chicken broth or water with 2 tsp cornstarch. Mix until smooth
  • Add into sauce in pan and stir over medium heat until thickened.
  • Spoon sauce over chicken.

4 skin-on chicken leg quarters, cut into 8 pieces
1 1/3 cups ketchup
2 tablespoons light brown sugar
Juice and zest of 1 orange
Juice and zest of 1 lemon
3 cloves garlic, grated
1 tablespoon Dijon mustard
2 tablespoons Worcestershire sauce
2 teaspoons ground cumin
1 1/2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Put the chicken in a large resealable plastic bag.
  • Whisk the ketchup, brown sugar, orange zest and juice, lemon zest and juice, garlic, Dijon, Worcestershire sauce, cumin, smoked paprika, 1 teaspoon salt, and a few grinds of black pepper together in a 4-cup liquid measuring cup (or alternatively a medium bowl) until combined.
  • Remove 1 cup of the sauce and add the remaining sauce to the resealable plastic bag with the chicken. Seal and toss the bag to evenly coat the chicken. Marinate the chicken in the refrigerator for 1 hour and up to overnight.
  • Meanwhile, add the remaining sauce to a small saucepan. Bring the sauce to a boil over medium-high heat. Reduce the heat to low and simmer until the sauce thickens, about 10 minutes. Reserve reduced sauce for glazing and serving.
  • Prepare a grill for medium-high heat.
  • Remove the chicken from the marinade and allow any excess marinade to drip off. Arrange the chicken skin-side down on the grill, leaving some space between each. Cook until deep grill marks form and releases easily from the grill, about 4 minutes. Flip the chicken skin-side up. Cover the grill and cook until an instant-read thermometer inserted into the thickest part of each thigh reads 165 degrees F, 20 to 25 minutes more.
  • Brush the skin side of the chicken with some of the reduced sauce. Flip the chicken pieces and brush the other side of the chicken with the sauce and continue to cook, sauce-side down, for an additional minute. Flip and grill for 1 minute more. Transfer the chicken to a platter and let rest for 5 minutes.
  • Serve the chicken with the remainder of the sauce.

Steps:

  • Season chicken breasts with salt and pepper on all sides. Place in slow cooker and pour 1/4 cup barbecue sauce and vinegar on top.

  • Combine brown sugar, onion powder, garlic powder, and red pepper flakes in a small bowl.
  • Pour out all the liquid from the slow cooker and add remaining barbecue sauce. Sprinkle chicken with brown sugar-spice mixture.

5 lbs. Whole Chicken
2 oz. McCormick Grill Mates Baja Citrus Marinades (two 1 oz. packets)
2 tsp. Cilantro Leaves
1 Lemon (cut into 4 quarters)
1 Lime (cut into 4 quarters)
½ cup Water

Steps:

  • Rinse chicken, remove innards and pat dry with paper towels.
  • Carefully place chicken into 5.5 - 7 qt. Oval Crockpot.
  • Squeeze two Lemon quarters and two Lime quarters into chicken cavity, then place inside.
  • Squeeze remaining Lemon and Lime quarters into Crockpot, and add 1/2 cup Water.
  • Add Baja Citrus Marinade and Cilantro Leaves to small bowl and mix well.
  • Generously sprinkle mixture onto outside of chicken.
  • Cook on HIGH for 4 hours or LOW for 8 hours, or until done. ENJOY!

1 tablespoon all-purpose flour
1/2 teaspoon grated lemon zest

1 tablespoon low-sodium soy sauce
1 1-inch piece ginger, peeled and minced
3 cloves garlic, minced
6 ounces thin rice noodles
1 bunch watercress, tough stems removed, coarsely chopped
1 tablespoon chopped fresh cilantro

Steps:

  • Lay the orange slices in a 6-quart slow cooker. Toss the chicken with the flour, lemon zest, 1/4 teaspoon salt and a few grinds of pepper in a large bowl; add to the slow cooker in a single layer. Combine the chili sauce, soy sauce, ginger and garlic in a bowl; pour over the chicken.
  • Cover the slow cooker and cook on low, 7 hours. Uncover and gently stir, breaking up the chicken into large pieces; let stand 10 minutes.

You can fudge this recipe to your taste fairly easily. It is ideal to do the dry rub over night but the 3 hours works pretty well also. ***** Prep time doesn't include "marinade" time

2 vidalia onions
2 lemons
2 oranges
1 whole chicken (about 4 lbs)
20 ounces chicken broth
10 ounces barbecue sauce
2 -3 tablespoons canola oil
1/4 cup butter
dry rub seasonings (make to your taste)
3 tablespoons salt
1 tablespoon pepper
1 tablespoon garlic powder
1 tablespoon ginger
1 teaspoon rosemary (optional)

Steps:

  • Prep chicken: rinse, take out gizzards and other innards; dry with a paper towel; rub oil on chicken thoroughly.
  • Put half stick of butter into chicken cavity; fill the rest of the cavity with as much onion, lemon and orange that you can (most likely won't be too much).
  • Apply dry rub all over chicken; wrap tightly in plastic wrap (two pieces in opposite directions should do the trick); drop into Ziploc bag; refrigerate 3 hours or overnight.
  • When chicken is ready, slice leftover onion, lemon & orange in thick slices; arrange in the bottom of a crock pot to form a bed.
  • Pour in chicken broth until it's just below tops of onions and fruit.
  • Put chicken on top of onions and citrus; set cook time to high for about 6 hours; chicken broth shouldn't be touching bottom of the chicken initially.
  • About 4 hours into the process, remove majority of liquid in the bottom of the crock using a baster; pour half of BBQ sauce on top of chicken.
  • About 5 hours into the cooking process, baste chicken with juices from the bottom of the crock pot, pour remaining BBQ sauce over chicken.
  • Baste chicken every 15 minutes with juices in the bottom of the crock.
  • After 6 hours of cooking, remove chicken from crock and remove meat from bones; drop meat back into crock pot and shred; leave crock on warm and serve.
