New Year's Eve is all about champagne, and this punch is fun for everybody involved. The secret is oleo saccharum-a citrusy, three-ingredient syrup that's hard to pronounce, but easy to make.

Steps:
- For the Oleo Saccharum: In a mixing glass, add sugar. Peel a grapefruit and two lemons in long, thin ribbons and add them to the sugar. Muddle the citrus peels, pushing the oils from the peel into the sugar. Over time, the oils will dissolve the sugar making a thick syrup. Cover and let rest overnight so the syrup can be fully infused with the citrus peels.
- For the punch: Place the oleo saccharum into a punch bowl along with the lemon and pineapple juice and stir. Add gin and a bottle of champagne.
- Place a large piece of ice into the punch (fill a plastic container with water, freeze, then unmold). Serve.

- With a vegetable peeler, remove zest from each lemon in a long, continuous spiral. Juice lemons, and strain pulp (you should have 3/4 cup juice). Set aside.
- Heat sugar and 1/2 cup water in a small saucepan over medium-high heat, stirring until sugar has dissolved. Bring to a boil. Remove from heat. Add zest. Let syrup cool completely, about 2 hours.
- Pour Champagne, vodka, lemon juice, and syrup into a punch bowl; stir. Serve glasses of punch with candied peels.

Arrange lemon and lime slices around sides of a small (8-cup) metal tube or Bundt pan or freezer-safe bowl. Scoop softened sorbet into pan, packing citrus slices against sides; smooth top. Cover with plastic wrap and freeze until firm, about 5 hours.
- When ready to serve punch, pour gin into a large chilled punch bowl, and add remaining 1 pint sorbet. Mash sorbet with a spoon to incorporate with gin; add frozen citrus ring to bowl. Gently pour Champagne around inside of bowl; stir gently to combine with gin mixture. Garnish with maraschino cherries. Place ladle in bowl, and allow guests to serve themselves.
