This is another meatloaf--everyone makes them. I think it should be proclaimed the national food of the USA. But, this recipe is very good--simple but good. It must be the combination of all that is in it. I like things that are easy. The sauce that goes over this adds to the flavor. I have one other meatloaf that I have listed and both are great. This makes a huge one. If you don't want it as big as it is, see my recipe for Italian Stuffed Pepper (made out of Meatloaf Recipe #102545) and you can use part of this mixture in that recipe which is out of this world.

3 3/4 lbs hamburger
2 slices bread, made into crumbs
1/3 cup oatmeal
4 eggs (beaten)
2 teaspoons salt
1 tablespoon prepared mustard
1 cup tomato sauce
1 medium onion (chopped)
1 (5 ounce) can evaporated milk
4 tablespoons dark brown sugar
1 cup tomato sauce
1/2 cup milk
4 tablespoons prepared mustard
4 tablespoons vinegar

Steps:

  • MEATLOAF:.
  • Mix all the ingredients together.
  • Shape into a loaf in a large greased baking dish.
  • Bake 400 degree oven for 1 hour, basing occasionally with pan juices.
  • SAUCE:.
  • In a saucepan, on the stove, mix the ingredients for the sauce.
  • Bring to a medium boil and simmer for about 3-5 minutes.
  • Serve warm at the table.

Meatloaf is a delicious addition to your weeknight dinner repertoire. Full of savory flavor and topped with a sweet, sticky ketchup glaze, it's the perfect pair to your favorite vegetable side dishes, such as classic mashed potatoes and steamed green beans.

Number Of Ingredients 14

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
  • Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
  • Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
  • Slice and serve.
  • Enjoy!

Meat Loaf recipes are endless online, not mentioning the endless cookbooks in my kitchen cabinet. Through the years, I was always looking for a "Different" Meat Loaf recipe, and I found it. I reviewed multiple recipes and combined some different ingredients. This was such a hit with my family. Accompany this Meat Loaf with Mac-n-Cheese and sweet corn as sides.

1 lb lean ground beef
1 lb maple sausage, pork (Any Kind)
1 lb ground turkey
1/2 large onion (fine chop)
2 eggs
1/2 cup 2% low-fat milk
1 1/2 cups stove top pork stuffing mix
1 1/4 cups Heinz ketchup
1/4 cup tiger sauce
2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon ground pepper
3/4 tablespoon garlic powder

Steps:

  • 1. Mix all ingredients together, keeping mixture light and chunky, don't over mix!
  • 2. Place mixture in loaf pan sprayed with Pam, dent top of loaf and drizzle Heinz Ketchup into dent, and over top of loaf.
  • 3. This recipe should make two loafs, place in loaf pans at 375 F for 1 hour and 15 minutes.
  • 4. Let loafs rest for 10 minutes before removing to serving plate and slicing. Drain loaf pans of excess oil and juices before serving.
  • 5. Garnish with parsley and green onion tops.
  • 6. Enjoy!

This recipe has evolved over decades of cooking and really is wonderful. Every component adds something - the grated zucchini, carrot and potato add nutrition, flavour and moistness, and the diced bell pepper just finishes it all off. The vegetables 'melt' into the meat mixture as it cooks, and if you didn't tell someone they were there, no one would be the wiser. I'm asked for the recipe all the time, so here it is. It makes two loaves, as it is our tradition to have leftovers sliced and fried for sandwiches the next day. I've also made this recipe into patties and fried them in a skillet like burgers instead of baking, the whole family loves it.

2 pound(s) ground beef
1 pound(s) ground pork (unseasoned, not sausage)
1 medium onion, diced or grated
2 to 4 clove(s) garlic, minced
1 large potato, peeled and grated
2 medium zucchini, grated
2 - 3 - carrots, grated
1/2 - bell pepper, diced or grated
1 cup(s) uncooked old fashioned oatmeal
3 large eggs
2/3 cup(s) milk
1/2 cup(s) ketchup
1 - 2 tablespoon(s) brown sugar
- salt to taste (i use kosher salt)
- pepper to taste

Steps:

  • Preheat oven to 350 degrees F. Crumble the ground beef and ground pork into a large mixing bowl. Add all ingredients and mix well with your hands. (Disposable kitchen gloves come in handy and help keep your manicure nice for this step but aren't a necessity.)
  • Shape into two large loaves. Bake side by side in a 13x9 inch pan, leaving at least a couple inches between the loaves. (I always use a glass pan but metal works as well) for 1-1/2 to 2 hrs.
  • Let stand for ten minutes after removing from oven.
  • This recipe makes two good sized loaves. It is our tradition that the day after a meatloaf dinner, the leftovers are sliced and fried in a cast iron skillet for sandwiches (on white bread with ketchup), and in order to have leftovers I had to increase the size of the recipe to what you see here.
