1 (8 ounce) package cream cheese, softened
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon minced garlic
2 teaspoons lemon juice

Steps:

  • Whip together all the ingredients.
  • If the dip needs to be a little thinner, add in some of the clam juice from the can.
  • Serve with your preferred dipping snacks, and enjoy!

16 oz Philly Cream Cheese / softened
6 + Tbls. Worcestershire's Sauce / Lee & Perrine
1 + Tbls. Onion Juice / Watkins Products
1 Whl Bulb. Roasted Garlic
1 +/- tsp Lemon Juice
2 +/- cans. Clams 6.5 oz cans
1 -minced
1 - chopped

Steps:

  • Be sure to save the juice drained off of the clams to use for thinning the dips consistency, but can also be used to punch up the flavor of the clams in the dip. I have listed the ingredients by brand named products. These are the brands I use, as well as the ones used in my Mother?s recipe. Believe me, it does make a major difference in the overall taste. If you want rave reviews, do not shortcut on the ingredients. Mix the cream cheese on med/high speed. Continue until the cream cheese is softened and is very creamy. Add clam juice, 1 or 2 T at a time if needed. Mix in Onion juice, Roasted Garlic, Worcestershire Sauce, Lemon Juice until all are well blended into the cream cheese. Add both cans of clams, and gently blend them in with whisk. Taste using your scoop/dipper of choice, since they have their own flavor profile, their flavor will affect the end product. At this point add/exchange ingredients to your personal flavor profile. Refrigerate till chilled (may freeze briefly, whip briskly for consistency), overnight is best to chill properly and give time for flavors to marry. This recipe is MY personal favorite, it is my friends preference. If you have never had this dip, this is will spoil you.

Here now a taste of New England game days circa the time when televisions had dials instead of remotes and, if you couldn't get fresh clams to steam and chop, a can or two from the supermarket would do just fine. (That's still true!) The recipe comes from Brendan McCarthy, a saltwater fishing guide whose charters range from Brooklyn to Montauk, and south to Florida, the Bahamas and the azure waters off Panama, but whose tastes and kitchen skills were first developed in New England and see an apogee in the simplicity of this recipe. The dip benefits from some curing time in the refrigerator and, for some, a heavy hand on the cayenne.

1 garlic clove
1 (8 ounce) package cream cheese
2 teaspoons lemon juice
1/2 teaspoon Worcestershire sauce

1 dash paprika
8 ounces minced clams, drained (but reserve liquid)
1/4 cup clam broth (reserved from the can)

Steps:

  • Peel and halve garlic clove, and rub on interior wall of serving bowl. (This seems like an unimportant step -- but my Mom used to swear that this one step made all the difference -- We don't question Jolean. You shouldn't either -- ). Mince the rest of the garlic clove to add to the other ingredients.
  • Leave cream cheese in bowl until it has reached room temperature. (Don't nuke it -- let it rest and thaw on it's own --) Then cream with a fork until smooth.
  • Gradually add remaining ingredients (except minced clams), blending well. (Use a hand mixer to get the lumps out, if any.).
  • Fold in minced clams last. Blend well --.
  • Chill for 1 hour, sprinkle paprika on top and serve with rippled potato chips.
  • YUM!

3 tablespoons thinly sliced scallions, plus more for garnish
1 jalapeño, seeded (if desired) and finely chopped
1 tablespoon freshly squeezed lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce, plus more to taste
1 teaspoon fish sauce (optional) or clam juice, plus more to taste
Salt, if needed, and freshly ground black pepper
1/4 cup grated Parmesan
Potato chips, for serving

Steps:

  • Heat oven to 425 degrees. In a large bowl, using a fork or rubber spatula, stir and mash together the softened cream cheese and sour cream until smooth.
  • Add clams, mozzarella, parsley, scallions, jalapeño, lemon juice, Worcestershire sauce, hot sauce, fish sauce or a teaspoon of reserved clam juice, and lots of black pepper, and stir until well combined. If the mixture seems thick, stir in a little more reserved clam juice.
  • Taste and adjust seasonings, if necessary. If you think it needs salt, add it lightly, or try adding a little more fish sauce or more clam juice instead. Dip can be made up to 3 days in advance and stored in the refrigerator before baking.
  • Transfer mixture to shallow 1-quart ceramic baking dish or gratin dish. Sprinkle Parmesan on top and bake until golden brown and bubbling, about 30 to 35 minutes. Garnish with sliced scallions, and serve hot or warm with potato chips.
