1 cup water
3 tablespoons butter, softened
1 egg
3 ½ cups White Lily® All Purpose Wheat Flour, or more as needed
¼ cup sugar
1 ¼ teaspoons salt
1 (.25 ounce) package active dry yeast
Crisco® Original No-Stick Cooking Spray

Steps:

  • Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. When Dough/Manual cycle is complete, remove dough from bread machine pan. Place on lightly floured surface.
  • Coat 13 x 9-inch baking pan with cooking spray. Pat dough into rectangle. Cut with pizza cutter or serrated knife into 15 equal pieces. Shape each into a ball. Place evenly in prepared pan. Cover and let rise in warm place until doubled, about 35 to 45 minutes.
  • Heat oven to 375 degrees F. Uncover rolls. Bake 15 minutes or until golden brown. Serve warm or cool completely on wire rack.

1 cup water
2 tablespoons butter or margarine, softened
1 egg
3 1/4 cups Gold Medal™ Better for Bread™ flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons bread machine or active dry yeast
Butter or margarine, melted, if desired

Steps:

  • Measure carefully, placing all ingredients except melted butter in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle.
  • Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
  • Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. (Dough is ready if indentation remains when touched.)
  • Heat oven to 375°F. Bake 12 to 15 minutes or until golden brown. Brush tops with melted butter. Serve warm, or cool on wire rack.

This recipe produces a light and airy slightly-sweet dinner roll you can mix up in your bread machine. Shape by hand and bake in your conventional oven for the best of both worlds.

1 cup milk (227 gr)
1 egg ( 50 gr)
3 tablespoons granulated sugar (40 gr)
1 teaspoon salt (6 gr)
1/4 cup butter ((chopped finely) 57 gr)
3 cups unbleached all-purpose flour (360 gr)
2 teaspoons bread-machine or instant yeast (6 gr)

Steps:

  • Place 1 c milk (227 gr), 1 egg (50 gr), 3 T sugar (40 gr), 1 t salt (6 gr), ¼ c butter (57 gr, finely chopped), 3 c (360 gr) unbleached all-purpose flour, and 2 t (6 gr) instant yeast into your bread machine pan in the order listed. Select the DOUGH cycle and press START.
  • Check the dough at least twice during the mixing and kneading phase by lifting the lid to take a peek. The first time, look immediately after the machine starts mixing to ensure the paddles are engaged correctly. The dough should start to form a ball. Look again 10-15 minutes into the DOUGH cycle to assess the consistency of the dough. For most recipes, the dough should stick to the side, then pull away cleanly.If your dough is too wet, add flour one tablespoon at a time.Conversely, if the dough is too dry, add one tablespoon of liquid at a time until the dough looks just right.   • When the dough cycle finishes, the dough should be doubled in size. If not, leave the dough in the bread machine a few more minutes until you can punch two fingers into the dough and it fills in gradually. If it doesn't fill in, it has risen too much. If the dough bounces right back and the dough fills in immediately, then it needs to proof (rise) a little bit longer. (This may happen if your kitchen is cold.)
  • Pull dough out of the machine and onto a floured surface. Lightly knead the dough to remove any large bubbles, and form it into one large ball. Divide in half, making 2 balls. Divide each of those balls into 8 equally-sized lumps.
  • Make a ball from each piece of dough by pulling the dough toward the bottom while turning the dough (see video) or use whatever method works best for you.
  • Arrange balls into 2 well-greased 8 or 9-inch round or square pans (non-stick is better) and cover with a tea towel or a cheap shower cap. Place in a warm spot until almost doubled. (I put mine in the microwave where I have already boiled a cup of water for 5 minutes to make it warm and steamy.)
  • Heat your conventional oven to 350˚F.
  • Bake in the oven until golden brown, usually about 12-15 minutes. Rotate to get even browning. The internal temperature should reach 190˚F.
  • Within 5-10 minutes, dump baked rolls out of the pan and let cool on a rack or paper plate so they won't get soggy from the steam they produce. Brush with melted butter if desired.

3 tablespoons white sugar
1 teaspoon salt
¼ cup dry milk powder
1 cup warm water (110 degrees F/45 degrees C)
2 tablespoons butter, softened
1 (.25 ounce) package active dry yeast
1 egg white
2 tablespoons water

Steps:

  • Place the bread flour, sugar, salt, milk powder, water, butter, and yeast in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle; press Start.
  • Remove risen dough from the machine, deflate, and turn out onto a lightly floured surface. Divide the dough into twelve equal pieces, and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix together the egg white and 2 tablespoons water; brush lightly onto the rolls. Bake in the preheated oven for 15 minutes, or until the rolls are golden brown.

  • 1. While this recipe is EASY enough for a beginner to use successfully please be aware that it is NOT quick to make. Real yeast rolls take time to rise properly. Please use bread machine yeast in this recipe. Be careful to store this yeast properly as it can become "inactive".
  • 2. Measure all ingredients carefully, placing everything, except melted butter, in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle. Process until machine beeps that dough cycle is complete.
  • 3. Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface. Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. 1 envelope Fleischmann's® RapidRise Yeast

½ cup milk
¼ cup water

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

This is a great recipe that can be made the day ahead and refrigerated for up to twenty four hours, then baked when needed. Very easy to do and soooo good!

3/4 cup milk, warmed
6 tablespoons soft butter
1 egg, beaten
3 cups bread flour
1/4 cup sugar
1 teaspoon salt
1 1/2 teaspoons active dry yeast

Steps:

  • Place ingredients into bread machine according to manufacturers directions.
  • Select dough cycle.
  • When cycle is complete, shape dough as desired or wrap in plastic wrap and refrigerate up to 24 hours.
  • If refrigerated, let dough set out for an hour before using.
  • To shape, divide dough into 24 equal parts and roll into balls in your hand.
  • Place on lightly greased baking sheet.
  • Cover rolls with damp cloth and let rise for about 20 minutes or until doubled in size.
  • Bake in preheated 400° oven for 15 to 20 minutes.

1 cup water (70° to 80°)
1/4 cup butter, cubed
1 large egg
1-1/4 teaspoons salt
3-1/4 cups bread flour
1/4 cup sugar
3 tablespoons nonfat dry milk powder
1 package (1/4 ounce) quick-rise yeast
EGG WASH:
1 large egg
4 teaspoons water

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed., When cycle is completed, turn dough onto a lightly floured surface. Divide and shape into 24 balls. Roll each into an 8-in. rope; tie into a loose knot. Tuck ends under., Place 1-1/2 in. apart on greased baking sheets. Cover with a kitchen towel; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 400°., For egg wash, in a small bowl, whisk egg and water; brush over rolls. Bake 8-9 minutes or until golden brown. Remove from pans to wire racks; serve warm.
