1 lb. medium shrimp, peeled and deveined
1 stalk celery, thinly sliced
1/4 c. mayonnaise
2 tbsp. fresh lemon juice
1 tbsp. prepared horseradish
1 tsp. paprika
kosher salt
8 hot dog buns, preferably split top, toasted
Scallions, for garnish

Steps:

  • Boil shrimp in salted boiling water until opaque, 2 to 3 minutes. Drain and transfer to a cutting board to cool.
  • In a large bowl, mix together celery, mayonnaise, lemon juice, horseradish, and paprika and season with salt.
  • Chop shrimp and add to mayo mixture. Spoon shrimp mixture into toasted buns and garnish with scallions.

Juice of 1 lemon
3/4 cup mayonnaise
1 tablespoon white vinegar
1 teaspoon Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds cooked shrimp, peeled, tails removed and cut in half crosswise
2 celery stalks, finely diced
2 scallions, thinly sliced
4 top-split hot dog rolls, outsides buttered and toasted
Lemon wedges, for garnish

Steps:

  • Mix the lemon juice, mayonnaise, vinegar, mustard, sugar, salt and pepper in a large bowl. Stir in shrimp, celery and scallions. Evenly divide the shrimp mixture among the hot dog rolls and serve with lemon wedges.

2 ounces rice vermicelli
8 rice wrappers (8.5 inch diameter)
8 large cooked shrimp - peeled, deveined and cut in half
1 ⅓ tablespoons chopped fresh Thai basil
3 tablespoons chopped fresh mint leaves
3 tablespoons chopped fresh cilantro
2 leaves lettuce, chopped
4 teaspoons fish sauce
¼ cup water
2 tablespoons fresh lime juice
1 clove garlic, minced
2 tablespoons white sugar
½ teaspoon garlic chili sauce
3 tablespoons hoisin sauce
1 teaspoon finely chopped peanuts

Steps:

  • Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until al dente, and drain.
  • Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place 2 shrimp halves, a handful of vermicelli, basil, mint, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
  • In a small bowl, mix the fish sauce, water, lime juice, garlic, sugar and chili sauce.
  • In another small bowl, mix the hoisin sauce and peanuts.
  • Serve rolled spring rolls with the fish sauce and hoisin sauce mixtures.

2 ounces uncooked bean threads (cellophane noodles)
2 tablespoons oil, or more as needed
8 ounces tofu, drained and sliced into strips
8 rice paper sheets
1 bunch fresh basil
⅓ cup fresh cilantro
1 cup bean sprouts
1 cucumber, peeled and julienned
1 medium carrot, peeled and julienned
1 cup shredded lettuce
½ cup chopped onion
16 cooked small peeled and deveined shrimp
2 ounces sweet chili sauce
1 tablespoon soy sauce
1 tablespoon lemon juice

Steps:

  • Cover noodles with boiling water for 20 minutes. Drain and set aside.
  • Heat oil in a skillet over medium-high heat. Add tofu strips; pan-fry until golden, 5 to 7 minutes per side. Remove from heat and let cool, about 10 minutes.
  • Fill a large bowl with hot water. Dip one sheet of rice paper in the water for 20 seconds, then lay flat. Place 2 basil leaves, 2 cilantro leaves, 3 to 4 bean sprouts, a small handful of cucumber, carrot, lettuce, and onion, 2 shrimp, and 1 strip of tofu in rows across the middle of the rice paper. Fold the wrapper at both ends and roll tightly. Repeat with remaining ingredients.
  • Combine chili sauce, soy sauce, and lemon juice in a small bowl for dipping sauce. Serve with spring rolls.

Inspired by jiao yan xia, the classic Chinese dish of head-on, fried shrimp finished with a Sichuan or white pepper salt seasoning, these shrimp rolls celebrate the flavors of salt and pepper. Peeled shrimp are seasoned, breaded with cornstarch and fried until super crunchy, then sprinkled with a black pepper-salt. Once cooked, they're tucked into toasted rolls smeared with a zingy garlic mayo. Fresh cilantro, sliced chile and a squeeze of fresh lime brighten the hearty sandwich. Store any leftover pepper-salt in an airtight container and use it as a seasoning for roasted meats and vegetables.

Vegetable oil, for frying (about 2 1/2 cups)
1/2 cup mayonnaise
1/4 teaspoon grated garlic
1 teaspoon ground black pepper
1/2 teaspoon kosher salt
4 hot dog buns, preferably top-split
1 pound peeled and deveined jumbo shrimp (16 to 20 shrimp), tails removed
1/4 cup whole (or 2-percent) milk
1 cup cornstarch
2 Fresno chiles, thinly sliced
Tender cilantro sprigs, for garnish
Lime wedges, for serving

Steps:

  • In a 12-inch cast-iron or heavy skillet, heat 1 inch of oil over medium-high until an instant-read thermometer registers 350 degrees.
  • Meanwhile, in a small bowl, combine mayonnaise and garlic; mix well. In a separate small bowl, combine pepper and salt.
  • Heat a medium nonstick skillet over medium. Using 1 teaspoon of garlic mayonnaise per bun, spread on outer sides of buns, then toast them until golden, about 1 minute per side. Transfer to plates.
  • Season shrimp with about 1 teaspoon of the pepper-salt, dip in milk, then dredge in cornstarch, gently pressing so cornstarch adheres. Working in two batches, fry shrimp until crispy and cooked through, turning halfway, about 2 minutes. Transfer to a paper towel-lined plate to drain. Season with more of the pepper-salt mixture.
  • Smear some garlic mayonnaise on the inner center of buns, then divide shrimp among buns. Top with chiles, cilantro and more pepper salt. Serve with lime wedges.

PRAWN (SHRIMP) MOUSSE ROLLS OR TRIANGLES

250 g prawns (raw flesh)
2 eggs
150 g rice flour
6 spring onions (scallions, roughly chopped)
6 sheets phyllo pastry
100 g butter (melted)
1/2 cup chives (chopped)
4 tablespoons mayonnaise
2 teaspoons green olive tapenade

Steps:

  • Preheat oven to 200°C.
  • Place the prawns into a blender and pulse and then add the chives and spring onions and give another quick pulse and then add the eggs and pulse again this time until smooth.
  • Place the mousse into a mixing bowl, add the rice flour and stir through.
  • Lay out a sheet of filo pastry, using a pastry brush, liberally coat the pastry with the melted butter and then place another filo sheet on top and brush with butter and then cut the buttered sheets in half.
  • Spoon 1/3 of the prawn mix into the centre and smear over 1/2 of the sheet diagonally and roll up into a spring roll shape.
  • Continue this process with the remaining sheets.
  • Place on a greased baking sheet and bake at 200C for 15 minutes.
  • Cut each one in half on a diagonal.
  • Dipping sauce - mix the mayonnaise and the olive tapenade until blended.
  • Serve with prawn mousse rolls.
  • TO MAKE TRIANGLES - Lay out a sheet of filo pastry, using a pastry brush, liberally coat the pastry with the melted butter and then place another filo sheet on top and brush with butter.
  • Cut the layered pastry into 10cm wide strips, place 1 heaped tablespoon of prawn mix on top and fold over to form a triangle, then continue folding in alternate directions until the mouse in encased (repeat this process until all your prawn mix and filo pastry is used).
  • Bake as per the rolls.
