HOMEMADE ANIMAL CRACKERS RECIPE

Homemade Animal Crackers Recipe image

My Homemade Animal Crackers recipe is so easy that even a 16-month-old can make them! They're big, crunchy, and sweet like the store-bought animal crackers you know and love.

Provided by Gemma Stafford

Categories     Dessert

Number Of Ingredients 9

9 tablespoons (4½oz/129g) butter ((at room temperature))
¼ cup (2oz/57g) granulated sugar
2 tablespoons honey
1 large egg
1 teaspoon vanilla extract
1 cup (5oz/142g) all-purpose flour
1 cup (5oz/142g) whole wheat flour
1 teaspoon baking powder
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, cream together the butter, sugar, and honey until well combined.
  • Add the egg and vanilla, and beat in.
  • Next, add the dry ingredients: the flours, baking powder and cinnamon and mix to form a dough.
  • Wrap the dough in cling wrap and refrigerate for 30 minutes. (You can use it straight away but it's a little easier to roll when it has chilled for a bit).
  • Pre-heat the oven to 350°F (180°C). Line two baking sheets with parchment paper.
  • Roll half of the dough out onto a floured surface, about ¼ inch thick.
  • Using Animal Cookie Cutters or any cookie cutters cut out the dough into shapes. Place the crackers onto prepared baking sheet.
  • Bake for 12-15 minutes, or until lightly golden brown around the edges.
  • Let cool for 5 minutes on the baking sheets before enjoying. Stored cooled cookies in an airtight container at room temperature for up to 7 days.

CLASSIC SNACKS MADE FROM SCRATCH ANIMAL CRACKERS

Your favorite childhood snack can easily be made at home.

Categories     classic dessert     animal crackers     Cookies     ginger     vanilla extract     allspice     kid friendly dessert     mace

Time 2h

Yield 3 dozen

Number Of Ingredients 10

2 c. unbleached all-purpose four
1 tsp. baking powder
1/4 tsp. ground mace
1/4 tsp. ground allspice
tsp. ground ginger
5 tbsp. unsalted butter, at room temperature
1/4 c. vegetable shortening
1/2 c. granulated sugar
1 large egg
1 tsp. vanilla extract

Steps:

  • Whisk flour, baking powder, mace, allspice, and ginger together in a medium bowl; set aside.
  • In bowl of a stand mixer fitted with paddle attachment, beat butter, shortening, and sugar together on medium speed for about 3 minutes, until shiny, fluffy, and creamy. Add egg and vanilla and stir on low speed until fully incorporated. Gradually add flour and spice mixture until fully incorporated into soft dough.
  • Pat dough into a ball and wrap in plastic wrap. Chill for at least 1 hour; flavor of dough improves as it's chilled, so chill overnight for best results. Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper or Silpat liners.
  • Divide chilled dough into 4 pieces. On a floured surface, gently roll one of the pieces to a 1/4 to 1/2-inch thickness. (Keep remaining pieces refrigerated.) Use floured cookie cutters to stamp out shapes (lions and tigers and bears?) and carefully transfer cookies to a prepared baking sheet, using a cookie spatula or turner if necessary. Save scraps for re-rolling.
  • Bake for 12 to 15 minutes, until cookies are puffy and golden brown at edges. Transfer cookies to a wire rack to cool completely. Repeat with remaining dough. Scraps can be re-rolled once to make additional cookies.
  • Store cookies at room temperature in an airtight container for up to a week.

  • To make the cookies: To the bowl of a stand-up mixer, add the butter, sugar and salt. Beat until light and fluffy, about 3 minutes. Add the egg, egg yolk, vanilla extract and beat once more until combined. In two batches, add the flour, being sure each addition is combined before adding the next one. Divide the dough in half, transfer it to two sheets of plastic wrap (it’ll be quite soft!), shape into a disc and transfer to the fridge. Allow to chill for about 1 hour. Ideally it should be at least 3 hours.
  • Line two baking sheets with parchment paper and set aside. Remove the first disc of dough from the fridge. Allow to come to room temperature for about 10 minutes. Liberally flour a rolling pin and work surface. Roll out the cookie dough to a 1/8-inch thickness. Stamp out the cookies with a cookie cutters. Transfer the cookies to the baking sheet, spacing them about 1-inch apart (these spread slightly). Transfer to the freezer for 10 minutes. Preheat the oven to 375 degrees F. Repeat with the second disc of dough.
  • Bake the cookies, one baking sheet at a time, for about 8 to 10 minutes, until lightly golden brown around the edges. Cool on the baking sheet before transferring to a cooling rack. Repeat with the remaining cookies.
  • To make frosting #1: whisk the powdered sugar and heavy cream together. It should be thick but pourable.
