2 cups KELLOGG'S® RICE KRISPIES® cereal, crushed
1 tablespoon ground ginger
Kosher salt and freshly ground black pepper, to taste
2 Ahi tuna steaks (about 6 ounces each)
1 tablespoon vegetable oil
1 English cucumber, halved, seeds scooped out
4 ounces rice noodles
1 lime, juiced
3 tablespoons chopped fresh cilantro
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
Honey, to taste
Freshly ground black pepper, to taste
2 teaspoons hoisin sauce
1/4 cup hoisin sauce
Juice of 2 limes

Steps:

For the tuna:
Heat a cast iron pan over medium-high heat for 8 minutes. In a bowl, combine the crushed KELLOGG'S RICE KRISPIES, ground ginger, salt, and pepper, to taste. Coat the outside of the tuna steaks with the cereal mixture. Put the vegetable oil in the hot pan and swirl to coat, and then sear the tuna on all sides, until the coating just turns brown in color, about 2 minutes per side. This should cook the tuna perfectly with the inside remaining rare. Remove the pan from the heat.
For the cucumber salad:
Cut the ends off the cucumber, and then cut it into thirds. On a mandolin slicer with fine teeth in the blade, and using the hand guard, grate the cucumber pieces in a long motion. This will make cool cucumber noodle looking strands. Repeat with the remaining cucumber pieces. Put the rice noodles into a bowl and pour the boiling water over them until covered. Let noodles soak until soft and a little chewy. Drain and rinse in cold water. Cut the rice noodles down to about the same length as the cucumber and put them together in a bowl. Add the lime juice, cilantro, soy sauce, some pepper; and hoisin. Toss to combine.
For the sauce:
Whisk together the hoisin sauce, lime juice, rice wine vinegar, soy sauce, and honey, to taste. Season the sauce with salt, and pepper, to taste.
On each plate, place a swirled pile of the cucumber salad. Slice the tuna on a slight angle and lay over the salad. Spoon some of the hoisin-lime sauce over the top and dig in.

1 pound shredded Cheddar cheese
1 cup butter, softened
2 cups all-purpose flour
2 cups crisp rice cereal
½ teaspoon salt
2 dashes Worcestershire sauce
1 pinch garlic powder
¼ teaspoon cayenne pepper
freshly ground black pepper

Steps:

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.
Bake for 12 minutes; or until the Cheese Crispies are golden and slightly brown around the edges. Enjoy!

1970s recipe taken from a box of Rice Crispies cereal. I was a fairly new cook back then and I always made some kind of casserole when my in-laws came to visit. They said they especially liked this crunchy tuna recipe!!

2 tablespoons margarine or 2 tablespoons butter
1 1/2 cups Rice Krispies
1/4 cup slivered almonds
1/4 cup finely chopped onion
1 (10 1/2 ounce) can cream of mushroom soup
1/4 cup milk
1 cup shredded swiss cheese or 1 cup American cheese
1 1/2 cups cooked rice
2 (5 ounce) cans tuna, well-drained and flaked
1/4 cup sliced green olives
paprika

Steps:

Melt 1 tablespoon of margarine. Pour over cereal and almonds, coating well. Set aside for topping.
In large saucepan, melt the remaining 1 tablespoon of margarine. Add onion. Cook just until tender, stirring occasionally. Add soup, milk and cheese. Cook over medium heat until cheese is melted, stirring occasionally, Remove from heat. Lightly stir in rice, tuna and olives.
Spread tuna mixture evenly in greased 10x6-l/2x2" (1-1/2 quart) baking dish. Spoon cereal topping evenly over casserole. Sprinkle paprika over topping.
Bake in 325 degree oven about 20 minutes, or until thoroughly heated.
