The old monthly magazine is now called Arkansas Living...but back then it was called Rural Arkansas. Here are a couple recipes from "back in the day"...? BTW...it does not say who the recipes were submitted by, so I do not know who to give credit to!!!

FIRST RECIPE: COMPANY SPINACH
1/4 c light cream
1/4 c chopped onion
1 Tbsp butter
1/4 c bacon (cooked and chopped)
3 c hot spinach (chopped)
SECOND RECIPE: LEMON CARROTS
12 young carrots
2 Tbsp butter
1 Tbsp lemon juice
1/4 tsp nutmeg
some chopped parsley

Steps:

  • 1. DIRECTIONS FOR FIRST RECIPE: COMPANY SPINACH
  • 2. Sauté onion in the butter, add cream, chopped bacon and spinach. Heat thoroughly. Season with salt and pepper to taste. Serves 6
  • 3. DIRECTIONS FOR SECOND RECIPE: LEMON CARROTS
  • 4. Cook carrots in boiling, salted water until tender. Mix and heat remaining ingredients. Pour over boiled, drained, carrots. Serves 6
