"CODE RED" CHEESE SPREAD
This 'dangerously spicy' party snack is so easy and tasty. People sometimes say this creamy, cheesy pepper spread is too spicy, but then they keep eating it. Naturally, you can adjust the heat for your personal tastes. I like to serve this with crisp flatbreads.

Steps:
- Place cream cheese, fromage blanc, tomato paste, cider vinegar, Worcestershire sauce, onion, and garlic powder in a bowl. Add sriracha sauce, ghost pepper sauce, sweet and hot paprika, chipotle powder, and cayenne pepper. Stir until well combined and the cheeses are completely blended in.
- Cover bowl with plastic wrap and refrigerate about 3 hours or, ideally, overnight. Season with salt, if desired.
- Transfer to a serving bowl.

COACH FARM MARINATED GOAT-CHEESE HORS D'OEUVRES

Steps:
- With a mortar and pestle, or by hand, crush thyme and rosemary. Transfer herbs to a small bowl and stir in peppercorns and coriander seeds.
- In a 1-pint jar carefully place 3 cheese halves and sprinkle with half of herb mixture. Add remaining cheese and sprinkle with remaining herb mixture. Add enough oil to cover cheese completely and slide bay leaves down opposite sides of jar. Cover jar tightly and chill, covered, 4 days.
- Let mixture come just to room temperature and preheat broiler.
- Top each bread slice with a tomato and a marinated cheese half and arrange on a baking sheet. Broil about 4 inches from heat until cheese is golden, about 3 minutes.

- Transfer mixture to a bowl and stir in scallions and capers. Chill spread, covered, at least 2 hours and up to 2 weeks. Serve as a dip for crudité or as a spread for crackers or sandwiches. Makes about 2 1/2 cups.
