1 jar (10 oz) maraschino cherries, drained, 1/4 cup liquid reserved
1 box Betty Crocker™ Super Moist™ devil's food cake mix
1 cup cherry cola carbonated beverage
1/2 cup vegetable oil
3 eggs
1 container Betty Crocker™ Whipped vanilla frosting
1 cup marshmallow creme
24 maraschino cherries with stems, well drained, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour. Chop cherries; set aside.
  • In large bowl, beat cake mix, cola beverage, oil, eggs and 1/4 cup reserved cherry liquid with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in chopped cherries. Pour into pan.
  • Bake 34 to 42 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In small bowl, mix frosting and marshmallow creme until smooth. Frost cake. Top each piece with 2 cherries with stems. Store loosely covered.

Cherry Coke Cupcakes 113g (½ cup) unsalted butter, softened 145g (¾ cup) brown sugar 1 egg 1 tsp vanilla extract 125ml (½ cup) cherry coca-cola/coke 63ml (¼ cup) buttermilk 125g (1 cup) self-raising flour 15g (1 tbsp) cocoa powder ½ tsp bicarbonate of soda (baking soda) a few drops of cola extract (Sainsbury's or Lorann's oils) a few drops of cherry flavouring (Lorann's oils or any extract) Cherry Coke Frosting approx. 50ml (¼ cup) Cherry Coca-Cola 110g (almost ¼ cup) unsalted butter, softened approx. 350g (2¾-3 cups icing (confectioners') sugar a few drops of cola extract (Sainsbury's or Lorann's oils) a few drops of cherry flavouring (Lorann's oils or any extract) Decorations (optional) 12 fresh cherries

approx. 50ml (¼ cup) Cherry Coca-Cola
110g (almost ¼ cup) unsalted butter, softened
approx. 350g (2¾-3 cups icing (confectioners') sugar
a few drops of cola extract (Sainsbury's or Lorann's oils)
a few drops of cherry flavouring (Lorann's oils or any extract)
(optional) 12 fresh cherries

Steps:

  • To make the cupcakes, preheat the oven to 180°C, 350°F, Gas Mark 4. Place 12 cupcake liners into a muffin pan and set aside. Beat the butter with the sugar until creamy. Add the egg and vanilla extract. Mix the cola and the buttermilk together in a jug. In a bowl, sift the flour, cocoa powder and bicarbonate of soda (baking soda) together. Pour about a third of the cherry coke and buttermilk mixture into the creamed butter and sugar, the sieve in about a third of the flour, cocoa powder, soda mix and stir well. Repeat this process until all ingredients are added and stir until blended and smooth. Taste test the batter. If you feel the cherry cola flavour needs a little lift, add a few drops of both the cherry and cola extract/flavouring until desires taste is reached. Pour into each cupcake liner to about ½ to ¾ full and bake for 20-25 minutes until a skewer comes out clean, then remove from the oven and allow to cool in the pan for 5 minutes then transfer to a wire rack to cool completely. To make the frosting, cream the butter with the icing sugar adding the cherry coca-cola a little at a time until smooth and creamy. Again, taste test the frosting. If you feel the cherry cola flavour needs a little lift, add a few drops of both the cherry and cola extract/flavouring until desires taste is reached. To decorate, use a piping bag with a large star tip and pipe swirls onto each cupcake. Top off with a fresh cherry.

3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda

2 large eggs
1 cup half-and-half
1/2 cup canola oil
1 tablespoon pure vanilla extract
1 cup cherry cola, warmed in microwave for 1 minute
Red Licorice Filling, recipe follows
2 cups crushed yogurt-covered pretzels
Marshmallow Frosting, recipe follows
Cherry Cola Glaze, recipe follows
5 ounces red licorice (about 10 jumbo pieces) (recommended: Red Vines)
2 cups water
1 1/2 cups granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 egg yolks, slightly beaten
8 egg whites
2 cups granulated sugar
3/4 teaspoon cream of tartar
1 teaspoon pure vanilla extract
3 to 5 teaspoons cherry cola
3/4 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Line 2 regular size cupcake pans with cupcake liners.
  • In a large bowl using an electric mixer on low speed, combine the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, half-and-half, oil, and vanilla and beat on medium speed for 2 minutes. Stir in the warmed cherry cola until fully combined.
  • Fill the cupcake liners three-quarters full with batter and bake until the cupcakes spring back when touched with your finger, 10 to 15 minutes. Let cool in the pans for a few minutes, and then remove to a wire rack to cool completely.
  • Fill each of the cupcakes with Red Licorice Filling. Sprinkle the crushed yogurt covered pretzels on top. Top with Marshmallow Frosting and drizzle with Cherry Cola Glaze.
  • Tear the licorice into 1 inch pieces and place in a saucepan with the water over medium heat until it comes to a boil. Remove from the heat and let cool. Whisk in the sugar, cornstarch, salt, and egg yolks. Cook over medium heat, whisking constantly, until thick and bubbly. Continue to cook for 1 minute, and then remove from the heat. Cool to room temperature.
  • Place the egg whites, sugar, and cream of tartar in a heat-safe bowl over a saucepan with boiling water. Whisk constantly over the heat for 1 to 3 minutes. Once the sugar has dissolved, remove from the heat and beat with an electric mixer on high until stiff peaks have formed, 5 to 7 minutes. Stir in the vanilla extract.
  • Add the cherry cola, 1 teaspoon at a time, to the powdered sugar until it has a good consistency to drizzle on cupcakes.

1 (21 oz) can cherry pie filling
1 cup heavy whipping cream
4 Tablespoons powdered sugar

Steps:

  • Preheat the oven to 350 degrees and line a muffin pan with cupcake liners. Set aside. Mix the flour, cocoa powder, baking soda, and salt in a medium sized bowl and set aside.

  • In a separate large mixing bowl, cream together the sugar and butter with an electric mixer, beating on medium-high speed until fluffy. Add the egg and beat for one more minute. In another small bowl, combine the buttermilk, Coke, and vanilla extract. Allow time for the foam to go go down when measuring the Coke. Your mixture might look curdled when you add the buttermilk. That's normal.
  • Beginning with the flour mixture, add in small parts to the butter mixture, alternating with the Coke mixture. Beat each addition just until incorporated.
  • Divide the batter evenly between the muffins tins. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool and then transfer to a wire rack to cool completely.
  • Once cooled, use a small sharp knife to cut out a cone shape in the middle of each cupcake. Add a spoonful of cherry pie filling (2 to 3 cherries) to the well.
  • Beat the heavy whipping cream in a chilled bowl with whisk attachment (or hand mixer), beginning on low speed. I like to place my mixing bowl and whisk attachment in the freezer for a few minutes before mixing. Once the cream gets frothy begin adding the powdered sugar, 1 tablespoon at a time, increasing speed as the cream comes together until you reach medium-high speed. Whip the cream until it holds stiff peaks (if you dip a spoon in it, the whipped cream should stay on the spoon when you turn it upside down). Pipe the whipped cream onto cupcakes as desired and top with maraschino cherries for garnish. Enjoy!
