What can be better then chocolate and coconut? This muffin makes a wonderful breakfast when you are looking for something a bit sinful, it also makes a wonderful snack or dessert.

Number Of Ingredients 12

2 cups all-purpose flour
1/2 cup sugar
3 tablespoons baking cocoa
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 egg
1/3 cup vegetable oil
1 1/4 cups flaked coconut, divided
1/4 cup sweetened condensed milk
1/4 teaspoon almond extract
1/2 cup milk chocolate chips

Steps:

  • In a bowl, combine flour, sugar, cocoa, baking powder, salt and chocolate chips.
  • Combine milk, egg and oil; mix well.
  • Stir into dry ingredients just until moistened.
  • Spoon 2 tablespoonfuls into 12 greased or paper-lined muffin cups.
  • Combine 1 cup coconut, condensed milk and extract; place 2 teaspoonfuls in the center of each cup (do not spread).
  • Top with remaining batter.
  • Sprinkle with remaining coconut.
  • Bake at 400 degrees for 20-22 minutes or until muffins test done.
  • Cool for 5 minutes before removing from pan to a wire rack.

2 egg whites
1 egg
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 1/4 cups flour
1 cup sugar
1/3 cup baking cocoa
1/2 teaspoon baking soda
3/4 cup buttermilk
1 cup fat-free ricotta cheese
1/4 cup sugar
1 egg white
1/3 cup flaked coconut
1/2 teaspoon coconut extract or 1/2 teaspoon almond extract
2 teaspoons confectioners' sugar

Steps:

  • In a mixing bowl, combine the egg whites, egg, applesauce and vanilla. Combine the flour, sugar, cocoa and baking soda; gradually add to egg white mixture alternatively with buttermilk. Spoon half of the batter into 18 muffin cups coated with nonstick cooking spray.
  • In another mixing bowl, beat the ricotta cheese, sugar and egg white until smooth. Stir in coconut and extract. Spoon 1 tablespoonful in the center of each muffin cup.
  • Fill muffin cups two-thirds full with remaining batter.
  • Bake at 350F for 28-33 minutes or until a toothpick inserted in cupcake comes out clean.
  • Cool for 5 minutes before removing from pans to wire racks; cool completely. Dust with confectioners' sugar.

MUFFINS:
1 c butter, softened
1/2 c granulated sugar
1 large egg
1 tsp vanilla
1/2 tsp almond extract
2 c all purpose flour
MACAROON FILLING:
2 large eggs
1/2 c granulated sugar
1 c finely chopped blanched almonds
1 tsp almond extract
1/2 c flaked coconut, chopped fine

Steps:

  • 1. Muffin mixture: In a large bowl, cream butter and sugar. Beat in eggs, flavorings and flour. Drop by teaspoon into sprayed, mini muffin cups. Press dough on bottom and up sides of cups. Chill Fill cups with Macaroon Filling. Bake for 25-30 minutes at 325^ . makes about 50 mini muffing.
  • 2. Macaroon Filling: Beat eggs until light and foamy. Gradually beat in sugar until well blended. Fold in almonds and coconut and extract. These freeze well.

2 cups flour
1/2 cup sugar
3 tablespoons cocoa
1 tablespoon baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
1/3 cup vegetable oil
1 cup sweetened flaked coconut
1/4 cup sweetened condensed milk
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 400 degrees.
  • Filling: Combine all ingredients, mixing well.
  • Muffins: Combine dry ingredients in a large bowl.
  • Make a well in center.
  • Combine egg, milk and oil and pour into well.
  • Stir until dry ingredients are just moistened.
  • Spoon batter into greased or paper lined muffin tins, filling 1/3 full.
  • Spoon 2 tsp of filling into center of each muffin cup.
  • Spoon remaining batter over tops, filling each until they are 2/3 full.
  • Bake for 20 minutes.
  • Serve warm.
