CHOCOLATE CRACKLE-TOPS
Yummy little balls of soft chocolate cookie with powdered sugar.... a delicious (yet messy) treat for young and old. (Note: time to chill cookie dough not included in time estimates)

Steps:
- In a medium saucepan over low heat, melt the chocolate and butter until smooth, stirring frequently. Remove from heat; stir in sugar and continue stirring 2-3 min or until sugar dissolves. Add eggs one at a time, beating well after each addition; stir in vanilla.
- In a separate bowl sift together flour, cocoa, baking powder and salt. Gradually stir into the chocolate mix in batches, until just blended. Cover dough and refrigerate for at least 1 hour, until the dough is cold and holds its shape.
- Preheat oven to 325 deg. Grease two or more large baking sheets. Place powdered sugar in a small, deep bowl. Using your hands scoop cold dough into small balls and roll into 1 ½ in balls. Drop each ball into the powdered sugar and roll until heavily coated. Remove with a slotted spoon and tap against the side of the bowl to remove excess sugar. Place on the baking sheets 1 ½ in apart.
- Bake for 10-15 min or until tops feel slightly firm when touched. Place baking sheet on wire rack for 2-3 min, then remove cookies and cool on rack completely.
CHOCOLATE MUDDIES
Adapted from Betty Crocker's New Cookbook. Wonderful chewy chocolatey cookies. You can also substitute Kahlua for some or all of the extracts, for a slightly different taste.

- Preheat oven to 350 degrees F.
- Line cookie sheet with foil or parchment paper (if using foil, grease with shortening).
- In a large bowl, beat cream cheese and margarine or butter with and electric mixer (medium speed) until fluffy, about 2 minutes.
- Add sugars, extracts, eggs, and ice cream topping.
- Beat about 3 minutes, or until fluffy.
- Mix flour, cocoa, baking soda, and salt in a separate bowl.
- Stir flour mixture into margarine mixture until evenly mixed.
- Stir in chips.
- Drop dough by heaping teaspoonfuls 2 inches apart onto cookie sheet.
- Bake 13-15 minutes, or until edges are set (cookies will appear underbaked).
- Cool for 5 minutes, then remove to wire rack to fully cool.
CHOCOLATE BLAMANGE

- Bring 3 C.
- milk to a boil.
- Add remaining ingredients together in a small bowl.
- Add to boiling milk.
- Stir until thickened and smooth.
- Pour in individual custard dishes and put in fridge until set.
- This is great served covered with cool whip or half and half.
CHOCOLATE HEART COOKIES
I found this last year in the "Taste of Home" magazine. They were an instant hit and left everyone craving more. Excellent for Valentines especially, but they are good any time of the year. I dip them in the milk chocolate and drizzle white - though the recipe calls for it the other way, you can chose to reverse the amounts between white and milk chocolate chips according to your taste.

Steps:
- In a small mixing bowl, cream butter and sugar.
- Beat in vanilla.
- Combine the flour and cocoa; gradually add to creamed mixture.
- On a lightly floured surface roll the dough to 1/4-inch thickness.
- Cut with a heart-shaped cookie cutter placing 2-inches apart on ungreased cookie sheet.
- Bake at 350°F for 8-10 minutes.
- Remove to wire racks to cool.
- In a microwave safe bowl, heat vanilla chips and 1 Tablespoon of shortening until melted, stirring frequently. Dip both sides of the cookie into melted mixture (so you make a V-shape from the point of the cookie out to the middle of both rounded tops).
- In another microwave safe bowl, melt chocolate chips and remaining shortening, stirring frequently.
- Drizzle over the cookies.
- Place on wire rack to dry.
CHOCOLATE FACIAL
I saw a special on FoodTV about the Hershey Spa and found this recipe on the internet. Note that "prep time" includes the time needed for leaving the facial on your face.

- 1. Line an 8-inch square baking pan with parchment, with overhang on two sides. In a saucepan, bring heavy cream and salt to a simmer.
- Place chocolate in a heatproof bowl and pour hot cream mixture over top; let stand 5 minutes then stir until smooth. Pour mixture into baking pan and refrigerate until set, at least 2 hours.
- When mixture is firm, cut into 1-inch squares and toss in cocoa powder. (See variation section below for instructions on rolling the truffles into balls). To store, box up truffles and refrigerate them at least 15 minutes and up to 2 weeks.

- For the Pudding: Melt chocolate and butter in bowl over simmering water.
- In medium bowl, whisk cornstarch, cocoa, and 1/4 cup of the sugar into 1/2 cup of the milk.
- Then whisk in eggs and yolks.
- In saucepan bring 2 cups of milk and 1/4 cup of sugar just to a simmer.
- Temper with egg mixture, return all to pan and whisk constantly until bubbles boil up for 3 seconds.
- Remove from heat and strain.
- Thoroughly mix in melted chocolate.
- Cover surface with plastic.
- Cool for 1 hour then refrigerate.
- For the Cake: Preheat oven to 350.
- Spray and line with parchment 1 8-inch cake pan.
- Tripple sift together: flour, cocoa, baking soda, baking powder and salt.
- Cream butter and sugar.
- Add eggs one at a time until incorporated.
- Beat until light and fluffy- 6 minutes Mix liquid ingredients together.
- Alternately beat in wet and dry ingredients.
- Pour into cake pan.
- Bake until tests done.
- About 30-40 minutes.
- Cool.
- Make ganache.
- Let sit until spreadable.
- Turn cake out of pan.
- Trim top to flatten (save scraps) and slice into 3 layers.
- Toast scraps on sheetpan for 5 minutes, cool and process coarsley in food processor.
- Spread pudding between layers, frost with ganache and coat sides with crumbs.

CHOCOLATE MOCHA CAKE I
This is a one bowl cake. You can substitute sour milk for buttermilk - mix 1 cup milk with 1 tablespoon vinegar or lemon juice and let stand for 10 minutes. Frost with Coffee Icing.

- Preheat oven to 350 degrees F (175 degrees C). Grease two 9 inch round cake pans.
- Measure flour, sugar, cocoa, oil, eggs, buttermilk, baking powder, soda, and salt into a mixing bowl. Dissolve instant coffee in hot water, and add to mixing bowl. Beat at medium speed for 2 minutes until smooth; batter will be thin. Pour into prepared pans.
- Bake for 30 to 35 minutes, or until an inserted wooden pick comes out clean. Cool in pans for 10 minutes, and then turn out onto racks to cool completely.
- Frost cooled cake with Coffee Icing. After frosting, melt some semisweet chocolate baking squares or chips in a double boiler. Drizzle chocolate around top outside edges letting it run down sides, or over top of cake.
