Dreamy Coconut Buttercream Frosting image

This Dreamy Coconut Buttercream Frosting is extremely light and creamy! It pairs perfectly with any flavour of cake or cupcakes, and if you replace the butter with vegan margarine, it'll be 100% dairy free!

½ cup unsalted butter, softened to room temperature
½ cup hi-ratio shortening (can substitute with solid vegetable shortening)
⅛ teaspoon salt
4 cups powdered sugar, sifted
¼ cup canned coconut milk (shake well before opening)*

Categories     Dessert

Number Of Ingredients 6

1/2 cup (1 stick) salted butter
3 ounces cream cheese, (at room temperature)
16 ounces powdered sugar
1/4 cup canned cream of coconut
1 teaspoon vanilla extract
toasted coconut for garnish, optional ((see Recipe Notes below))

Steps:

  • In a large bowl, beat the butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add the powdered sugar, beating at low speed until blended. Increase the speed to medium, and slowly add the cream of coconut and vanilla, beating until smooth.
  • Spread onto cupcakes or cake. You can try to use a piping bag, but it's a pretty soft frosting so it may or may not pipe very well. Keep refrigerated until ready to serve.

COCONUT BUTTERCREAM

Coconut Buttercream image

Easy to make, smooth coconut buttercream which is packed full of flavour. Perfect for decorating cupcakes, layer cakes and biscuits.

Provided by Charlotte Oates

Time 5m

Number Of Ingredients 4

200 g butter (softened)
200 g creamed coconut block
300 g icing sugar
A little milk

Steps:

  • Melt the creamed coconut (200g). This can either be done in the microwave in bursts of 20 seconds, mixing between each one, or on the hob over a very low heat. The consistency of the coconut should be thick but easily stirred. Leave to cool.
  • Cut the butter (200g) into cubes and beat (either by hand or with an electric mixer on a low speed) until smooth.
  • Add the icing sugar (300g) and beat until fully combined - I prefer to add the sugar a couple of spoonfuls at a time as this minimises the amount of sugar that flies out all over the kitchen! You'll find that at first it'll start to look lumpy but keep persevering and it'll smooth out.
  • Gradually add the melted creamed coconut, beating in each addition before adding more.
  • Take a look at the consistency of your buttercream. If it is a spreadable/pipeable consistency then it's ready to use. If it is a little too stiff then add milk (no more that 1 tsp at a time) until you have the right consistency. Beating in each addition of milk fully before adding more.
  • Your buttercream is now ready to use.

COCONUT CAKE WITH COCONUT BUTTERCREAM FROSTING

Coconut Cake with Coconut Buttercream Frosting image

This sweet southern scratch-made Coconut Cake with coconut buttercream frosting is moist, tender, melt-in-your-mouth perfection.

Provided by Renee

Categories     Dessert

Time 2h40m

Number Of Ingredients 16

3 cups cake flour (measure AFTER sifting)
1 tablespoon baking powder
1/2 teaspoon salt
6 large egg whites (room temperature)
1 1/2 cups white sugar (divided)
3/4 cup unsalted butter (softened )
2 teaspoons coconut extract
1/4 cup sour cream
1 1/2 cups full-fat, unsweetened coconut milk ((NOT coconut cream!))
1 1/2 cups unsalted butter (softened)
2-3 teaspoons coconut extract
1 teaspoon vanilla
1/4 teaspoon salt
6 cups powdered sugar (sifted)
5-6 tablespoons coconut milk
2 cups flaked, sweetened coconut

Steps:

  • Position oven rack in the center (or just below center) of the oven. Preheat oven to 350°F [175°C]. Grease and flour three round cake pans. Line pans with parchment paper for easy release and clean-up. NOTE: 8" or 9" cake pans will work for this cake. (They must, however, all be the same size!)
  • Measure sifted cake flour, baking powder, and salt; sift together three times. Set aside.
  • Combine sour cream and coconut milk in a small bowl and set aside.
  • Using an electric mixer with a large mixing bowl, cream butter and 1 cup of sugar together until light and fluffy. Add coconut extract and mix to combine. Add flour mixture alternately with coconut milk and sour cream mixture, beating after each addition. Remove bowl from mixer and set aside.
  • [DO NOT begin this step until you have completed the previous step.] In a medium mixing bowl, beat egg whites until foamy. Add 1/2 cup sugar gradually, beating until meringue will hold soft peaks.
  • [Do this step by hand. Do not use a mixer.] Carefully fold beaten egg whites into batter.
  • Pour batter evenly into the three prepared cake pans. Bake layers in preheated oven: 22-25 for 9" cake pans / 25-30 minutes for 8" cake pans - or until a toothpick or skewer comes out clean. (If your oven cooks unevenly, carefully rotate pans on rack at the 15-minute mark.)
  • Allow cakes to cool in their pans over wire rack for 10 minutes. Carefully tap out onto wire rack to cool completely. Wrap and chill layers in refrigerator for at least an hour (or up to a week if you need to).
  • Using an electric mixer, beat butter on medium-high until light and fluffy. Add coconut and vanilla extracts and salt and mix to thoroughly combine.
  • Slowly add powdered sugar, mixing well after each addition.
  • Add coconut milk, one tablespoon at a time time, beating on medium-high until fully incorporated.
  • Once the cake is completely chilled, trim the layers.
  • Spread the top of the bottom layer of cake with frosting. Add the middle layer and frost top. Add the top layer.
  • Apply a crumb coat to the entire cake. (A crumb coat is a thin layer of frosting that covers the top and sides of a cake.) Return the cake to the refrigerator for another 15 minutes.
  • Frost the entire cake with a generous layer of frosting. Sprinkle flaked coconut over top and sides of cake before the frosting sets.

Number Of Ingredients 10

cooking spray
1 (16.5 ounce) package refrigerated sugar cookie dough
1 tablespoon all-purpose flour, or as needed
¾ cup unsalted butter, at room temperature
3 cups confectioners' sugar, sifted
3 tablespoons canned coconut milk, or more as needed
1 teaspoon coconut extract
¼ cup colored sugar
¼ cup candy sprinkles
¼ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a mini muffin tin with cooking spray.
  • Scoop up 2 teaspoons of cookie dough and roll into a ball. Place the ball in the prepared tin. Repeat with remaining cookie dough.
  • Dip the bottom of a shot glass in flour and use to press each ball of dough into a cup shape; the top of each cup should be about 1/4 inch below the rim of the tin.
  • Bake in the preheated oven until golden, about 10 minutes. Press again with the shot glass to reinforce the cup shape. Continue baking cookie cups until very lightly browned, about 1 minute more. Cool in the tin for 5 minutes. Transfer carefully to a wire rack to cool completely.
  • Beat butter in a bowl with an electric mixer until fluffy. Beat in confectioners' sugar, 1 cup at a time, until well blended. Add coconut milk and coconut extract; beat at high speed until frosting is light and fluffy. Add 1 tablespoon coconut milk if frosting is too thick.

COCONUT CUPCAKES WITH FLUFFY COCONUT BUTTERCREAM

Coconut Cupcakes with Fluffy Coconut Buttercream image

A flavorful, moist coconut cake topped with the creamiest, fluffiest coconut buttercream frosting!

Provided by Brenda | A Farmgirl's Dabbles

Categories     Dessert

Time 53m

Number Of Ingredients 18

1 c. unsalted butter, at room temperature
3-1/2 c. powdered sugar
pinch of kosher salt
2 T. half and half
2 tsp. coconut extract
1 tsp. pure vanilla extract
1/4 c. large flake coconut
1/3 c. packed sweetened shredded coconut
1-1/4 c. all-purpose flour
1-1/4 tsp. baking powder
1/4 tsp. kosher salt
1/2 c. unsalted butter, softened to room temperature
3/4 c. sugar
1 large egg, at room temperature
1 large egg white, at room temperature
2 tsp. coconut extract
1 tsp. pure vanilla extract
1/2 c. unsweetened coconut milk, very well stirred

Steps:

  • For the coconut cupcakes: Preheat oven to 350° F. Line a standard muffin tin with twelve paper liners. Set aside.
  • Add shredded coconut to the bowl of a food processor and pulse until finely ground. Transfer ground coconut to a medium bowl. To the bowl, flour, baking powder, and salt. Whisk to combine.
  • In the bowl of an electric stand mixer, cream butter and sugar on medium-high speed until pale and fluffy, about 3 minutes. Add egg, egg white, coconut extract, and vanilla extract, and beat until completely combined, occasionally scraping down the sides of the bowl. Reduce mixer speed to low and then add the coconut/flour mixture in three batches, alternating with two additions of coconut milk, and beating until each addition is just combined. Divide batter evenly between the lined cups.
  • Bake until a toothpick inserted in the center comes out just barely clean, about 18 minutes. Remove from oven and let cupcakes cool in the pan for 10 minutes, and then remove cupcakes to a wire rack to cool completely.
  • For the fluffy coconut buttercream: In the bowl of a stand mixer fitted with a paddle attachment, whip butter on medium-high speed until very fluffy, about 8 minutes, occasionally scraping down the sides and bottom of the bowl. Add powdered sugar and salt, and beat on low to incorporate. Add half and half, coconut extract, and vanilla extract, mixing on low until combined. Increase mixer speed to medium-high and beat until very light and fluffy, about 5 to 6 minutes, occasionally scraping down the sides and bottom of the bowl.
  • To assemble the cupcakes: Use a large cookie scoop (I use this one) to top each cupcake with a round of coconut buttercream. Gently tap the bottom of the cupcake on the counter once or twice to settle the buttercream onto the cupcake. The coconut buttercream recipe makes just enough frosting for twelve cupcakes frosted in this generous manner, so try not to snitch too much out of the bowl! Top the buttercream with some large flake coconut, if desired, to finish off the cupcakes.
