EASY COCONUT CARAMEL SAUCE



Easy Coconut Caramel Sauce image

This is an easy and unbelievably good coconut caramel sauce.

170 g (0.75 cup) unsalted butter
210 g (1.25 cups) light brown sugar
2 tbsp water
1/4 teaspoon salt
120 ml (1/2 cup) full fat coconut milk (or more to your taste)
1 tsp coconut extract

Steps:

  • Combine the butter, sugar, water and salt in a sauce pan, over medium heat and mix until the butter has melted.
  • Bring the mix to the boil and then boil for 5 mins stirring occasionally.
  • Switch off the heat and mix in the coconut milk and coconut extract.
  • Let the caramel sauce rest for at least 15 mins as it thickens upon standing.
  • Drizzle over everything.

Yield Makes about 2 cups

Number Of Ingredients 6

2 cups sugar
1/2 cup hot water
1/2 cup heavy cream
2 tablespoons unsalted butter
1 cup sweetened flaked coconut, toasted and cooled
2 tablespoons dark rum, or to taste, if desired

Steps:

  • In a dry large deep heavy skillet cook the sugar over moderately high heat, stirring constantly with a fork, until it is melted and turns a deep golden caramel, remove the skillet from the heat, and into the side of it pour carefully the water and the cream, a little at a time.
  • Cook the mixture over moderate heat, stirring, until the caramel is dissolved and simmer it for 2 minutes. Remove the skillet from the heat, add the butter and the coconut, and stir the mixture until the butter is melted. Pour the sauce into a heatproof pitcher or glass measure, let it cool slightly, and stir in the rum. (The sauce will thicken as it cools. To return the sauce to liquid state, set the pitcher in a saucepan of barely simmering water and stir the sauce until it reaches the desired consistency.) Serve the sauce warm over ice cream.

3 tablespoons unflavored gelatin
Nonstick cooking spray
2 cups half-and-half
1 cup sugar
1 teaspoon pure almond extract
3 cups freshly grated coconut
3 cups heavy cream, whipped
1 cup fresh shaved coconut

Steps:

  • Sprinkle gelatin over 1/2 cup water, and let stand until softened, about 5 minutes. Spray a 10-inch round nonstick springform pan with nonstick cooking spray; set aside.
  • Bring half-and-half to a boil in a large saucepan over medium-high heat. Add gelatin mixture and sugar and cook, stirring, until gelatin and sugar have dissolved. Remove from heat and let cool slightly.
  • Stir in almond extract and grated coconut; stir in whipped cream. Transfer pudding to prepared springform pan and transfer to refrigerator until chilled and set, 2 to 3 hours.
  • Unmold pudding onto a serving platter and sprinkle with shaved coconut. Serve with caramel sauce.
