BAKED COCONUT FRENCH TOAST



Baked Coconut French Toast image

Such a nice recipe for Sunday mornings. Make it Saturday evening and Sunday morning just pop it in the oven!

cooking spray
16 (1 inch thick) slices French bread, cut diagonally
1 ¼ cups light coconut milk
1 ¼ cups egg substitute
½ cup white sugar
1 tablespoon vanilla extract
½ cup sweetened flaked coconut

Steps:

  • Spray the inside of a 9x13-inch baking dish with cooking spray.
  • Arrange bread slices in a single layer in the prepared baking dish.
  • Whisk coconut milk, egg substitute, sugar, and vanilla extract together in a bowl until evenly combined; pour over bread. Turn bread over to coat. Cover baking dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from baking dish.
  • Turn bread slices over and sprinkle coconut over bread; let stand for 15 minutes.
  • Bake in the preheated oven until egg is set and coconut is golden, about 30 minutes.

1-1/4 cups milk
2 teaspoons sugar
1 teaspoon ground cinnamon
14 slices day-old bread
1 package (7 ounces) sweetened shredded coconut
Maple syrup, optional

Steps:

  • In a large bowl, beat eggs; add milk, sugar and cinnamon. Add bread, a few slices at a time; let soak for 1 minute on each side. Coat both sides with coconut. Place on greased baking sheets. , Bake at 475° for 5 minutes on each side or until golden brown and cooked through. Serve with syrup if desired.

½ teaspoon ground cinnamon
3 slices whole wheat bread
½ cup mixed frozen berries
¼ cup shredded coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a small baking dish with cooking spray.
  • Whisk eggs, milk, vanilla, and cinnamon together in a bowl.
  • Cut bread slices into squares and place in the prepared baking dish. Pour egg mixture over top, making sure all bread is soaked. Sprinkle berries and coconut on top.
  • Bake in the preheated oven until egg mixture is set, 15 to 30 minutes; check often to make sure coconut doesn't burn.

Steps:

  • In large bowl, beat eggs, then add milk, sugar and cinnamon.
  • Add bread, a few slices at a time, and let soak for 1 minute.
  • Remove bread, and coat both sides with coconut.
  • Place on parchment lined baking sheet and bake at 475 degrees for 5 minute on each side (10 minutes total).

1 cup full fat coconut milk
2 eggs, beaten
2 tablespoons sugar or 2 tablespoons maple syrup
1 teaspoon coconut extract (optional)
1 1/2 teaspoons vanilla extract
6 slices bread, 1 inch thick (plain challah is good)
3 tablespoons butter (for frying pan)
powdered sugar

Steps:

  • In a large bowl, or pie plate, combine the coconut milk, eggs, sugar or maple syrup, coconut extract, and vanilla extract. Whisk well.
  • Melt the butter in a large frying pan.
  • Dip a slice of bread in the mix. Let it soak up the liquid for about 40 seconds on each side.
  • Place the bread in the pan and saute until it's golden on each side (about 2-3 minutes), then transfer to a serving dish.
  • Repeat with the remaining slices of bread.
  • Dust each slice with plenty of powdered sugar.

1 can (13.66 ounces) coconut milk
2 large eggs
1/2 cup orange juice
1 teaspoon vanilla extract
1/2 teaspoon orange extract
1/2 teaspoon salt
1 cup sweetened shredded coconut, toasted, divided
8 slices white bakery bread (3/4-inch thick)
1/2 cup macadamia nuts, chopped and toasted
Maple syrup and orange slices, optional

Steps:

  • In large bowl, whisk coconut milk, eggs, orange juice, extracts and salt. Stir in 1/2 cup coconut. Place bread slices in a 15x10x1-in. baking pan. Pour coconut milk mixture over bread; turn to coat. Let stand 10 minutes., Toast bread on a greased hot griddle over medium heat 3-4 minutes on each side or until golden brown. Transfer to a serving platter. Sprinkle with remaining coconut and macadamia nuts; keep warm. Serve with maple syrup and orange slices if desired.
