2 cups mushroom broth (see recipe)
4 6-7 ounce cod fillets
Salt and freshly ground black pepper to taste
2 cups mushroom ragout (see recipe)
2 tablespoons minced Italian parsley

Steps:

  • In a large skillet, warm the mushroom broth over medium heat. Carefully lay the cod fillets in the pan, skin side down. Season each fillet lightly with salt and pepper. Spoon the ragout over the cod fillets, cover, reduce the heat to low and cook for 5 to 7 minutes until the fish is tender.
  • Use a spatula to carefully lift the mushroom-topped fish onto 4 individual plates. Divide the poaching broth over each fillet, garnish each with minced parsley and serve with boiled potatoes.

1 teaspoon olive oil
2 1/2 cups cubed wild mushrooms
1 clove garlic peeled and minced
2 teaspoons salt
Freshly ground pepper to taste
3 tablespoons chopped Italian parsley
1 cup mushroom broth
3 teaspoons fresh lemon juice
4 4-ounce cod fillets

Steps:

  • Heat the olive oil in a large, nonstick skillet over medium heat. Add the mushrooms and cook, stirring occasionally, for 2 minutes. Add the garlic and cook for 30 seconds longer. Stir in 1 teaspoon of salt, pepper, 2 tablespoons of parsley and mushroom broth. Simmer for 10 minutes. Stir in 2 teaspoons of lemon juice.
  • Season the cod with 1 teaspoon of salt and pepper. Drizzle with 1 teaspoon of lemon juice. Place the fillets in the skillet, spooning the mushroom liquid over the top. Reduce the heat to medium-low and braise until the fish is cooked through, about 6 minutes. Place 1 cod fillet on each of 4 plates and spoon the mushroom sauce over the top. Sprinkle with the remaining parsley and serve immediately.

I had some left over sauteed mushrooms and a 1/2 pound boneless cod filet, so I decided to try something different. The fish was moist and the topping was flavorful.

1 lb cod fish fillet
8 ounces mushrooms (sliced)
3 tablespoons butter
1 teaspoon basil (dried)
1/4 cup parmesan cheese
1/2 cup butter flavored cracker (crushed)

Steps:

  • Preheat oven to 400 degrees F.
  • Crush crackers with rolling pin finely in a plastic bag.
  • In a frying pan, saute sliced mushrooms in 1 tablespoon of butter until tender.
  • Melt one tablespoon of butter (I use the microwave at 20 sec. intervals).
  • Drizzle melted butter into baking dish.
  • Cut the cod filet into 4 equal pieces and place into baking dish.
  • Melt one tablespoon of butter and drizzle it over the fish.
  • Cover fish with cracker crumbs.
  • Cover cracker crumbs with sauteed mushrooms.
  • Sprinkle basil and cheese over mushrooms.
  • Bake in oven for 15 minutes or until fish flakes with a fork.
  • Enjoy!

1 jalapeno pepper, seeded and finely chopped
2 tablespoons chopped onion
3 teaspoons butter, divided
2 cod fillets (4 ounces each)
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon steak seasoning
1 tablespoon dry bread crumbs
1/4 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet, saute the mushrooms, jalapeno and onion in 2 teaspoons butter until tender. Place fillets in an ungreased 8-in. square baking dish. Sprinkle with lemon-pepper, steak seasoning and bread crumbs. Top with mushroom mixture. Divide remaining butter and place on each fillet., Cover and bake at 400° for 10 minutes. 2 skinless, boneless chicken breasts
1 teaspoon dried oregano
¼ teaspoon cayenne pepper
1 pinch salt and ground black pepper to taste
1 tablespoon butter
1 (8 ounce) package chopped white mushrooms
¼ cup chopped white onion
1 tablespoon Worcestershire sauce
1 pinch salt and cracked black pepper to taste
1 splash red wine
½ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Coat both sides of chicken breasts with oregano and cayenne pepper and place on a baking sheet. Season with salt and pepper.
  • Bake in the preheated oven for 15 minutes.
  • Melt butter in a nonstick skillet over medium heat. Add mushrooms, onion, Worcestershire sauce, and red wine. Cook and stir until vegetables shrink down a bit, about 5 minutes. Season with salt and cracked black pepper. Reduce heat to medium-low to low; cook until tender, 10 to 15 minutes.
  • Pour mushroom mixture on top of the chicken. Continue baking until chicken is no longer pink in the center and the juices run clear, about 8 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Sprinkle mozzarella cheese on top of the chicken and cook until cheese is bubbly, about 5 minutes more.

1 teaspoon olive oil
4 boneless skinless chicken breast halves
1/4 teaspoon black pepper
1/4 teaspoon salt
4 cups cremini mushrooms, sliced (about 8 ounces)
4 cups shiitake mushroom caps, thinly sliced (about 8 ounces)
2 cups leeks, chopped (can easily substitute shallots or onions)
1/3 cup dry white wine
1/2 cup chicken broth
1 tablespoon sherry wine
1/4 teaspoon salt
1 cup sour cream (can use low-fat)
4 cups egg noodles, cooked and still hot
fresh parsley, chopped (optional)

Steps:

  • Heat olive oil in a large nonstick skillet over medium high heat. Sprinkle chicken with salt and pepper. Add chicken to pan and saute 6 minutes on each side. Remove from pan and keep warm.
  • Add mushrooms and leeks (or shallots/onions) to pan and saute for 8 minutes. Return chicken to pan.
  • Add wine, broth, sherry and salt and cook for 2 minutes until chicken is cooked through.
  • Remove from heat and add sour cream. If the sauce is too thick, thin it out with milk or half and half.
  • Serve over noodles and garnish with fresh parsley.

This is a updated version of my mom's pork chops with cream of mushroom soup. I don't care for the canned soup due to the high sodium. I use cream, mushrooms, onions and bourbon along with beef stock to make a sauce that is out of this world. I like to serve this with mashed potatoes and grilled asparagus.

4 (8 ounce) center-cut pork chops
salt and ground black pepper to taste
2 tablespoons vegetable oil
2 tablespoons butter
2 cups thinly sliced onion
1 (8 ounce) package thinly sliced baby bella mushrooms
1 teaspoon white sugar
¼ cup bourbon
1 ½ cups beef broth
½ cup heavy cream
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Season pork chops with salt and pepper. Heat oil in a frying pan over medium-high heat. Add pork chops; cook until browned, 3 to 4 minutes per side. Place browned chops in a 9x13-inch baking dish. Wipe out any residual oil from the pan.
  • Melt butter in the same pan over medium heat. Add onion, mushrooms, and sugar. Cook and stir for 1 minute. Cover pan and reduce heat to medium-low. Simmer mixture until onions are softened, about 10 minutes. Uncover pan and stir the mixture, scraping up browned bits from the bottom. Continue cooking onions for about 3 minutes more.
  • Pour bourbon into the onion mixture; cook until mostly evaporated, 3 to 4 minutes. Add broth and cream; bring to a simmer. Cook for 10 minutes; pour over the browned chops in the baking dish. Cover with aluminum foil.
  • Bake in the preheated oven until an instant-read thermometer inserted into the pork reads 145 degrees F (63 degrees C), 25 to 30 minutes.

1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt

2 tablespoons olive or canola oil
1/2 cup roasted garlic-seasoned chicken broth (from 14-oz can)
1 jar (4.5 oz) sliced mushrooms, drained
1 1/2 tablespoons Dijon mustard
Chopped fresh thyme, if desired

Steps:

  • Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick. In shallow pan, stir together flour, salt and pepper.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Coat both sides of chicken with flour mixture. Cook chicken in hot oil 6 to 8 minutes, turning once, until chicken is no longer pink in center. Remove chicken to serving plate; cover to keep warm.
  • Stir broth into skillet. Heat to boiling over medium-high heat. Stir in mushrooms and mustard. Cook 2 to 3 minutes, stirring frequently, until slightly thickened. Spoon sauce over chicken. Sprinkle with thyme.
