1/2 cup (1 stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons instant espresso coffee powder
1 1/2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F.
  • Cream the butter with the sugars using an electric mixer on medium speed until fluffy, approximately 30 seconds. Beat in the egg and the vanilla extract for another 30 seconds.
  • In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.
  • Using a 1-ounce scoop or a 2-tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2-inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.
  • Serve warm with a glass of milk.

3/4 teaspoon kosher salt
1 1/4 sticks (10 tablespoons) unsalted butter, at room temperature

1 cup packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup dark chocolate chips
3 1.4-ounce chocolate toffee bars, chopped (about 1 cup)
1 cup white chocolate chips
Red and white sprinkles, for decorating

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking soda and salt in a medium bowl. Beat the butter, espresso powder and brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg and vanilla until smooth. Reduce the mixer speed to low, then gradually beat in the flour mixture until just combined. Stir in the dark chocolate chips and toffee bars.
  • Roll the dough into 1 1/2-inch balls and arrange 2 inches apart on the prepared pans. Bake, switching the pans halfway through, until the cookies are puffed and just set around the edges, about 15 minutes. Let cool 10 minutes on the pans, then transfer to a rack to cool completely.
  • Melt the white chocolate chips in the microwave in 30-second intervals, stirring, until smooth. Drizzle over one side of each cookie and decorate with sprinkles. Refrigerate until set, about 30 minutes.

COFFEE COOKIE BUTTER CONES

2 cups semisweet chocolate chips
1/4 cup refined coconut oil
1/2 gallon coffee ice cream
6 sugar cones
1/2 cup cookie butter
1/2 cup speculoos cookies, crushed
Assorted sprinkles, for decorating

Steps:

  • Melt the chocolate and coconut oil together in a double boiler. Meanwhile, remove the ice cream from the freezer to soften, about 10 minutes. Transfer the chocolate mixture to a bowl to cool to room temperature (it will not firm up until it's on the ice cream).
  • Set each cone upright in a mason jar filled with sprinkles or sugar (this will help the cone stand up). Drizzle a teaspoon of chocolate in each cone. Using a small offset spatula or spoon, spread some cookie butter on the insides of the cones. Using a small offset spatula or spoon, fill the cones with ice cream to the top of the cone. Add a teaspoon of cookie butter. Add a scoop of ice cream on top and place in the freezer for 1 hour.
  • Place the cookies and sprinkles each in a shallow bowl. Dip the ice cream into the chocolate mixture, using a spoon to coat if needed. Immediately roll the cones in the sprinkles or cookies to coat. Place back in the jars and return to the freezer to set, 15 minutes. Serve immediately or wrap in plastic wrap to store.

3 tablespoons instant espresso or instant coffee crystals

Steps:

  • Preheat the oven to 375 degrees F. Place the racks in the center of the oven.
  • In a mixing bowl, make a well in the center of the chocolate chip cookie mix. Add the chocolate chunks, walnuts, softened butter, Kahlua, instant espresso, ground coffee and egg. Mix well to combine all the ingredients into the cookie dough.   • 1. In a small bowl stir together coffee crystals and milk until crystals dissolve; set aside.

1 cup unsalted butter, slightly softened
1 1/4 cups sugar
1/2 cup instant coffee powder
2 tablespoons vanilla extract
1 1/2 teaspoons vanilla extract
3 egg yolks
2 1/2 cups cake flour, plus
3 teaspoons cake flour

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter with an electric mixer on high speed until smooth (about 1 minute). Add sugar and beat on high until thouroughly blended (another minute).
  • In a separate bowl, mix the coffee powder, vanilla and egg yolks until the coffee is dissolved. Thoughoughly blend this into the butter/sugar mixture. Then add the flour and mix on high until well blened, about 1 to 2 minutes, scraping the sides of the bowl. Drop by the teaspoonful 1 1/2 to 2 inches apart onto a greased cookie sheet. Bake until lightly browned on the edges, about 16 to 18 minutes. Cool on the cookie sheet until they start to harden (about 3 to 5 minutes) and finish cooling on a wire rack. Store in an airtight container.

  • In a mixing bowl, cream butter, shortening and sugars.
  • Dissolve coffee in water.
  • Add to creamed mixture with egg and melted chocolate.
  • Mix well.

  • Gradually add to creamed mixture (dough will be sticky).
  • Shape into two 6 1/2 inch rolls.
  • Wrap each in plastic wrap.
  • Refrigerate for 4 hours.
  • Unwrap and cut into 1/4 inch slices.
  • Place 2 inches apaprt on ungreased baking sheets.
  • Bake at 350 degrees for 10-12 minutes or until firm.
  • Remove to wire racks to cool.
  • In a small saucepan over low heat, melt chocolate chips and shortening.
  • Dip each cookie halway, shake off excess.
  • Place on waxed paper to harden.

1/2 teaspoon baking soda
1/4 teaspoon salt

1 large egg
1 teaspoon vanilla
1 cup coarsely chopped pecans, divided
1 cup semi-sweet semisweet chocolate chunk, divided
3 -4 ounces favorite chocolate candy bars (Snickers is my favorite! See Note)

Steps:

  • Preheat oven to 350°F.
  • Combine flour, baking soda and salt and set aside.
  • In a large mixing bowl, beat butter and brown sugar until creamy.
  • Add egg and vanilla to creamed mixture; beat well.
  • Gradually add flour mixture to creamed mixture.
  • Stir in 2/3 cup pecans and 2/3 cup chocolate chucks into cookie dough.
  • Cut candy bars int small pieces and set aside.
  • Using a large scoop, drop dough onto stone or cookie sheet, about 3-inches apart.
  • (Cookies will spread when baking.) Flatten scoops slightly with palm of hand.
  • Lightly press a few pecan pieces, a few chocolate chucks and a few candy pieces into each cookie.
  • Bake for 14-16 minutes or until cookies are almost set.
  • (Centers will be soft, do not over bake.) Cook for 5 minutes on stone or cookies sheet.
  • Remove cookies to wire rack to cool completely.
  • ~NOTE~Chocolate candy bars with nougat and nuts are favorite choices for this cookie.
  • Also delicious are chocolate covered peppermint patties, chocolate covered caramels and chocolate peanut butter cups.
