Somen Salad image

Somen salad is extra refreshing on warm days. It's a chilled noodle dish with toppings (like fish cake, cucumbers, carrots, egg), and a flavorful sauce poured all over the noodles. Great to make ahead and serve chilled.

2 bundles (3-4 ounces each) dried somen noodles
3 ounces kamaboko, thinly sliced
1 small cucumber, julienned
1 small carrot, julienned
2 eggs, scrambled and thinly sliced
2 stalks green onions, chopped
1/2 cup chicken broth
1 tablespoon sugar
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon sesame seeds

Steps:

  • First step is to prepare all the toppings. Thinly slice the kamaboko (or can use char siu, ham, or Spam). Julienne the cucumber and carrot. Chop the green onions. Scramble the eggs, let cool, and then thinly slice.
  • Second step is to prepare the sauce. Put the chicken broth, sugar, rice vinegar, soy sauce, and sesame oil together in a small saucepan. Bring to a boil, stir to dissolve the sugar. Pour in a small bowl and set aside.
  • Now cook the somen noodles. Bring water to a boil. Slice in the two bundles of dried somen noodles and cook for 3 minutes. Drain immediately and rinse with cold water (this stops the somen from cooking and cools the noodles).
  • Then it is time to assemble! Divide the somen noodles between two bowls and top with the kamaboko, cucumber, carrots, green onions, and egg. Use as much or as little of the toppings as you prefer. Sprinkle sesame seeds on top.
  • Pour the sauce all over the noodles/toppings. Mix with chopsticks and eat. Enjoy ^_^

1 Head Lettuce
Ham
Kamaboko
2 Eggs, Fried

Parsley
Sauce:
1 T Sesame Seeds, Roasted
2 T Sugar
1 t Salt
2 T Sesame Oil
3 T Vinegar, White
2 T Shoyu

Steps:

  • Boil 1 package somen noodles. Shred 1 head lettuce. Slice thinly: ham, kamaboko, fried eggs, green onions, parsley. Sauce: Mix the above ingredients together, add sauce, mix, and serve.

A simple, quick, and very healthy salad to make for a light dinner. From a Hakubaku Somen noodle package. I use a mandolin to cut the vegetables. The salad is better if it can sit for about 10 minutes before eating. You could also blanch the carrots for them to be softer in the salad.

60 ml fresh lime juice
1 tablespoon brown sugar
2 tablespoons fish sauce
2 tablespoons olive oil
9 ounces somen noodles
1 carrot, peeled and finely shredded
1 small red capsicum, finely shredded (or use 2 cucumbers)
100 g snow peas, finely shredded (or use frozen peas instead)
1/2 bunch chives, minced
1/2 cup coriander leaves or 1/2 cup cilantro leaf

Steps:

  • In a large bowl whisk lime juice, brown sugar, fish sauce and olive oil together.
  • Cook Somen noodles as per packet instructions. Drain and rinse with cold water.
  • Mix dressing with noodles, carrot, capsicum, snow peas and chives, tossing to coat well. Divide salad between plates. Scatter coriander leaves on top and serve.
