COLIN PERRY'S SORGHUM AND APPLE STICKY PUDDING
Eastern Kentucky-born and -raised chef Colin Perry plies his art now in Montreal at Dinette Triple Crown. The food there taps into traditions of both the far north and the high country South, as in this delectably oh-so-sticky pudding.

Steps:
- Preheat the oven to 350ºF. Grease a 10-inch round cake pan.
- Place the lard and brown sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed to combine, and then increase the speed to high to cream them together. Mix until the mixture becomes smooth and a very light brown, scraping down the sides of the bowl as needed; this takes about 20 minutes.
- Meanwhile, whisk together the flour, cornmeal, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves in a large bowl. In a separate large bowl, whisk together the apple butter, buttermilk, and bourbon.
- Once the lard-sugar mixture is ready, reduce the speed to medium and add the eggs and egg yolk, one at a time, until incorporated. Add the flour mixture in thirds, alternating with the apple butter mixture, mixing only until the batter is smooth each time.
- Pour the batter into the prepared cake pan and bake for 40 to 45 minutes, until a toothpick inserted in the center comes out dry. Turn out of pan onto a rack to cool while you make the syrup.
- Combine the sorghum and cream in a heavy-bottomed saucepan, and bring to a boil. Then reduce the heat to low and simmer for 10 minutes. Whisk until well blended.
- Transfer the cake to a serving plate. Poke holes throughout the top of the cake with a fork, and slowly pour the syrup all over the cake until it has been absorbed. Serve slightly warm.
LITTLE ICKY STICKY PUDDINGS WITH CARAMEL SAUCE
These old fashioned puddings have now been rediscovered by 'cafe society' and are common on the menus of the best restaurants. I cook them in a muffin tin to provide easy individual servings. They are so good I've given batches of them, together with a bottle of their delicious sauce, as Christmas presents. In winter, it's wonderful to make a batch or two and keep them handy in the freezer - simply reheat gently in the microwave or in the oven. The sauce will keep for at least a week in the refrigerator, but it's easy to make when you need it anyway. Many thanks to Lorraine from the beautiful Maleny Lodge Bed & Breakfast for this recipe.

- Before you do anything else, place the dates and the water into a saucepan over a moderate heat and bring the mixture to a good rolling boil.
- Remove saucepan from the heat and stir in the bicarbonate of soda.
- Now, allow the date mixture to cool while you prepare the other ingredients.
- Set the oven to 180C (350F).
- Grease a muffin tin (I use one that makes 12 muffins) very well.
- In a medium sized mixing bowl and using an electric mixer, beat together the butter and the sugar until the mixture is light and fluffy.
- Still beating, add eggs, one at a time, and beat until the beaters leave a'trail' in the mixture- it should be the consistency of whipped cream.
- Add vanilla and mix briefly to combine.
- Sift the flour into this mixture, then fold it in lightly but thoroughly with a wooden spoon.
- When the date mixture is cooled (no hotter than luke warm), tip it into the other ingredients and stir lightly but thoroughly to combine.
- A light hand in mixing at this stage will ensure light puddings.
- Don't worry that the mixture looks very liquid at this stage- that's how it's supposed to look.
- Spoon mixture into muffin cups, filling each cup almost, but not quite, to the top (they don't rise too much).
- Bake on the centre shelf of a preheated 180C (350F) oven for 15-20 minutes or until a skewer, inserted in the centre of a pudding, comes out clean.
- When cooked, remove tray from oven and allow puddings to cool for 5-10 minutes before removing to serve or to cool on wire racks.
- (If puddings stick, run a knife around the outside, and allow puddings to cool a little more before carefully easing out of the pan.) Serve warm with hot caramel sauce.
- TO MAKE THE CARAMEL SAUCE Combine all sauce ingredients in a small saucepan over a moderate heat and bring to the boil.
- Reduce heat and simmer for 2 minutes.
- Serve over warm puddings.
EASY STICKY TOFFEE, APPLE AND COGNAC PUDDING
A decadant and very easy "All-In-One" sticky toffee pudding - just put all the ingredients into your food processor and whizz it all up together! This is a lovely lighter version of the traditional & very rich sticky toffee pudding - but is still gooey & very sinful! If you cannot get hold of Golden Syrup, use Maple Syrup or Honey instead - it will be a different flavour but still very yummy! Turn out to serve & it is delicious with vanilla ice cream, creme fraiche or chantilly cream. This makes a great "Alternative Christmas Pudding" for those who are not keen on the Traditional Pud! Bring to the table and flambe with cognac!

- Heat oven to 160C or 320°F.
- Whizz up the dates in a food processor until chopped up a little and then add the walnuts or pecans, apple, golden syrup & cognac. Pulse a few times until coarsely chopped & mixed together, but still chunky.
- Add the butter, eggs & sugar & pulse a few times to combine.
- Finally, add the flour & bicarbonate of soda & keep pulsing until everything comes together & is mixed well.
- Butter a 1.5 litre pudding basin & tip in all the mixture.
- Smooth and level the top & bake in the pre-heated oven for 1 hr 20 mins or 1 hr 30 mins or until a skewer inserted comes out almost clean.
- While the pudding is baking, make the toffee sauce; tip the sugar into a saucepan and add the butter & the cream. Bring to a rapid boil & then simmer until the sugar is dissolved & the mixture has thickened & is caramel in colour.
- To serve, turn out the pudding and place the walnuts or pecans over the top of the pudding & pour over the toffee sauce; place pudding under a grill and cook until the sauce is bubbling.
- Serve with Ice Cream, Creme fraiche or Chantilly Cream.
- FREEZER:.
- Make the pudding ahead of time and freeze in the pudding container for up to 1 month. To reheat, defrost & cook in the microwave for 8-10 minutes on medium.Make the toffee sauce and serve as before.
