This Collard-Artichoke-and-Mushroom Strata leans into the savory, combining fresh mushrooms and collard greens with eggs and frozen artichoke hearts to create a dish like no other.

Number Of Ingredients 12

1 (12-oz.) rustic baguette, cut into 1-inch cubes (about 8 cups)
3 tablespoons unsalted butter, plus more for greasing baking dish
1 cup chopped sweet onion (from 1 small onion)
1 (8-oz.) pkg. sliced fresh button mushrooms
6 cups chopped stemmed collard greens (from 1 [11-oz.] bunch)
1 teaspoon kosher salt, divided
1 teaspoon black pepper, divided
2 cups coarsely chopped thawed frozen artichoke hearts (about 8 oz.)
8 large eggs
2 cups half-and-half
1 (5.2-oz.) container garlic-and-herb spreadable cheese (such as Boursin)
8 ounces Swiss cheese, shredded (about 2 cups), divided

Steps:

  • Preheat oven to 375°F. Arrange bread pieces in a single layer on a large rimmed baking sheet. Bake 10 minutes. Turn off oven; let bread stand in oven until crisp and dry on the outside and chewy on the inside, 5 minutes.
  • Meanwhile, melt butter in a large skillet over medium. Add onion and mushrooms. Cook, stirring occasionally, until onion is slightly softened, about 4 minutes. Add collards and ½ teaspoon each of the salt and pepper. Cover and cook, stirring occasionally, until collards are wilted, about 5 minutes. Stir in artichoke hearts; cover and cook 3 minutes. Uncover; let cool slightly, about 5 minutes.
  • Whisk eggs in a large bowl until lightly beaten. Add half-and-half, spreadable cheese, 1 cup of the Swiss cheese, and remaining ½ teaspoon each salt and pepper. Whisk until well blended. Add toasted bread and collard mixture; toss well to combine. Spoon into a 13- x 9-inch baking dish greased with butter. Sprinkle evenly with remaining 1 cup Swiss cheese. Cover with aluminum foil; chill at least 7 hours or up to 12 hours.
  • Preheat oven to 350°F. Let the casserole stand at room temperature 30 minutes. Uncover; bake until cheese is browned in spots and filling is set, about 45 minutes. Let stand 5 minutes before serving.

ARTICHOKE, MUSHROOM AND BACON STRATA



Artichoke, Mushroom and Bacon Strata image

I saw a recipe on the internet by Climbing Grier Mountain but wanted to jazz it up a bit and use my leftovers. I decided to include 3 varieties of previously sauteed mushrooms, blue cheese crumbles, a mix of grated mozzarella & fontina cheese, bacon, marinated artichoke hearts, a small bag of previously diced red/green bell peppers, and a loaf of bread I had made in the bread machine a few days earlier. I love strata! There is just something wonderful about that warm, gooey custard one gets from combining eggs, milk and cheese. Please give this recipe a try and let me know what you think.

1 - loaf of bread, (any kind...dayold is best)
8 slice(s) bacon, chopped and cooked
1 1/2 cup(s) mushrooms (use crimini, white and oyster-sauteed)
1/2 cup(s) bell peppers, chopped (red and green)
2 cup(s) cheese (mozzarella and fontina)
1/2 cup(s) blue cheese, crumbled
2 cup(s) marinated artichoke hearts (save the liquid)
6 - eggs
4 cup(s) milk
2 tablespoon(s) butter

Steps:

  • Cut up the bacon and stir fry until done. Remove to drain on a paper towel.
  • Saute mushrooms (crimini, white and oyster) in a little butter until tender. Season with a little salt and pepper. Add the bacon to the mushrooms and mix. Dice red and green bell peppers. Grate and mix together the cheeses.
  • Slice bread into 8-1/2" thick slices and put in the bottom of a deep baking dish that has been sprayed with Pam.
  • Spoon some of the marinade from the artichoke hearts on both sides of the bread.
  • Layer in this order: Bread, Mushrooms/Bacon, Artichoke Hearts, Cheese, Peppers.
  • Repeat with another layer.
  • Whisk the eggs and the milk together and pour over the entire dish. Cover with foil (I prefer the no stick) and allow it to sit 1/2 hour before baking.
  • Preheat the oven to 375 and bake for 45 minutes with foil. Remove the foil and cook for an additional 25-30 minutes (until nice and bubbly and the bread is just turning golden brown.) Let it sit for 5-10 minutes before plunging in.

Artichoke Spinach Strata image

A wonderful comfort food with a pleasing blend of flavors. This dish is great for brunch or as a side dish for a cold winter's dinner or as a main dish for a light dinner (it's a very versatile dish!) The flavors need to meld in a Strata - so make this the night before for a brunch dish or the morning before if you are serving it for dinner (you could even prepare it the night before for the next evening's dinner). The preparation time does not include the refrigeration time.

7 ounces baby spinach leaves
6 1/2 ounces marinated artichoke hearts, drained
1 1/2 cups milk (2% or whole)
1/2 cup dry white wine
1 loaf Italian bread (10 ounce size, day old is best!)
6 large eggs, beaten
1 teaspoon oregano, dried
1/2 cup asiago cheese, grated

Steps:

  • Start preparation either the night or morning before (depending upon when you are serving, see note above in description).
  • Spray a 9 x 13 rectangular glass baking pan with cooking spray.
  • Place 7 ounces of freshly washed baby spinach in a microwave safe bowl, cover and cook for 5 minutes on high until wilted. Drain in colander in your sink and let cool. Then coarsely chop.
  • Drain jar of artichoke hearts but do not rinse. Chop into small pieces.
  • Mix the milk and wine in a shallow bowl. Tear the bread into medium pieces (a bit bigger than bite sized) and dip a few pieces at a time into the milk mixture. Gently squeeze as much liquid as possible from the bread without tearing it. Do not let the bread soak; dip and squeeze as quickly as possible or the bread will disintegrate! Spread the prepared bread in the 9 x 13 pan. Continue dip, squeeze and spread until all the bread is distributed nicely around the pan. Reserve any leftover milk mixture.
  • Sprinkle the prepared spinach and artichokes on the bread - distributing evenly. Push the vegetables into the bread mixture.
  • Beat 6 large eggs and mix with remaining milk & wine mixture. Add oregano and beat well. Pour over the bread & vegetable mixture in the pan.
  • Sprinkle the Asiago cheese on top of the strata.
  • Cover the pan with plastic wrap and refrigerate (overnight or until evening, depending upon when you are serving).
  • Preheat oven to 350 degrees F.
  • Remove plastic wrap and bake uncovered until puffy and browned, 45 minutes to 1 hour. Serve immediately.

1 medium onion, chopped (1/2 cup)
1 clove garlic, minced
2 tablespoons margarine or 2 tablespoons butter
4 cups assorted sliced fresh mushrooms (such as oyster, shiitake, button, white, and/or crimini)
1/2 cup shredded mozzarella cheese (2 ounces)
1/4 cup shredded Fontina cheese (1 ounce)
2 tablespoons assorted snipped fresh herbs (such as basil, oregano, thyme, and/or parsley)
5 cups French bread or 5 cups Italian bread, cubes
2 ounces prosciutto or 2 ounces Canadian bacon, chopped
4 eggs, beaten or 1 cup fat-free liquid egg product, thawed frozen or refrigerated
1 3/4 cups milk
1/2 cup single cream or 1/2 cup light sour cream
1 tablespoon dijon-style mustard
1/8 teaspoon pepper
fresh thyme sprig

Steps:

  • Preheat oven to 325 degrees F.
  • In a large skillet cook onion and garlic in hot margarine or butter over medium heat for 2 minutes.
  • Add mushrooms and cook about 3 minutes more or until tender, stirring occasionally.
  • Remove from heat.
  • In a small mixing bowl combine the mozzarella, fontina, and herbs; toss to mix.
  • In a greased 2-quart square baking dish place half of the bread cubes.
  • Top with the mushroom mixture, cheese mixture, and prosciutto or Canadian-style bacon.
  • Top with the remaining bread cubes.
  • In a mixing bowl combine beaten eggs or egg product, milk, sour cream, mustard, and pepper.
  • Pour over layers in dish.
  • Cover and chill in the refrigerator for 2 to 24 hours.
  • Bake, uncovered, for 55 to 60 minutes or until a knife inserted near the center comes out clean.
  • Let stand 10 minutes.
  • To serve, cut into squares; garnish with fresh thyme sprigs.

10 thick-sliced peppered bacon strips, cooked and crumbled
3/4 cup mayonnaise

Steps:

  • In a large bowl, mix the first 7 ingredients and 1 cup mozzarella cheese until blended. Transfer to a greased 11x7-in. baking dish. Sprinkle with remaining mozzarella cheese., Bake, uncovered, at 350° until heated through and cheese is melted, 20-25 minutes. Serve with naan.
