SOUTHERN SPOON BREAD BY EULA GIBSON
This is a recipe by my former food supervisor Eula Gibson, from my Corbin, Kentucky restaurant. You don't have to be a Southerner to enjoy this dish!

Steps:
- Heat 3 cups milk, 1 teaspoon salt and 1 teaspoon sugar to a moderate temperature in a saucepan.
- Add 1 1/4 cups corn meal to the milk.
- Return to heat and cook as mush.
- Beat together 3 eggs, 1 tablespoon baking powder, 2 tablespoons cold water, and 2 tablespoons butter.
- Beat the egg mixture into the mush.
- Pour mixture into casserole dish or pan.
- Bake in 400 F degree oven for 25 - 30 minutes.
- Slice and serve hot with my "Kentucky Whipped Butter".
COLONEL SANDERS' BUTTER THIN PANCAKES

Steps:
- Beat 3 cups half and half with 4 beaten eggs.
- Mix together sifted flour, baking powder, and salt (omit salt if using salted butter).
- Add 2 sticks hot melted unsalted butter slowly while stirring and mix.
- Pour batter onto hot lightly greased griddle and flip when bubbly on surface.
- Cook until golden brown on both sides.
- Serve with my "Kentucky Whipped Butter" and pure maple syrup.

COLONEL SANDERS' OLD FASHIONED BUCKWHEAT CAKES
This is my personal recipe for homemade buckwheat cakes, a real treat served with my Kentucky whipped butter and pure maple syrup.

Steps:
- Sift the flours together.
- Dissolve cake yeast in the warm water.
- Mix all ingredients well, into a batter.
- Set at room temperature for 1 hour.
- Cover and place into the refrigerator overnight.
- Stir in baking soda to the portion to be used to leaven the sourness of yeast.
- Pour onto greased hot griddle and cook until bubbly, then flip cake over until golden brown on both sides.
- Serve hot with my "Kentucky Whipped Butter" and pure maple syrup.

Steps:
- Cream the shortening and sugar until it is light and fluffy.
- Add mashed potatoes and cream some more.
- Heat the milk to lukewarm, dissolve one .25 ounce packet cake yeast in it.
- Pour warmed milk/yeast mixture into the shortening, sugar and potatoes.
- Add enough flour (approximately 1 cup) to make like cake dough.
- Stir in the salt.
- Let rise 2 hours.
- Stir in remaining flour, baking soda and baking powder to make a biscuit dough.
- Knead dough some.
- Refrigerate dough for 1/2 hour, then shape into rolls.
- Let rolls rise double their size.
- Bake at 450 F degrees for 12-14 minutes.
- Serve hot with my "Kentucky Whipped Butter".
COLONEL SANDERS' KENTUCKY WHIPPED BUTTER
This is my personal recipe for Kentucky whipped butter, served with my hot Kentucky biscuits or buckwheat cakes.

Steps:
- Add 2 sticks cut up softened butter to a mixing bowl.
- Beat until well beaten.
- Begin adding buttermilk slowly.
- Beat until fluffy.
- Scrape loose the first solid butter clinging to the bowl, then beat until there are no solid lumps in the whipped butter.
- Serve with my hot Kentucky biscuits.
- Store unused portion in refrigerator, tempering and whipping before serving again.
