Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.
- Bake in the preheated oven until no longer pink in the center, 1 to 1 1/4 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
- Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
- In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
- Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
- Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

I made a good meatloaf,but my son in law said it was to sweet. So, it got me to work on a better Meatloaf. Well, here it is. It's full of flavor,nice texture,and above all not sweet.Makes great sandwiches too!!

- In a skillet, saute onion and celery in butter until tender. In a large bowl, combine the bread cubes, egg and water. Stir in the onion mixture, poultry seasoning, salt and pepper; set aside. , In another large bowl, combine the egg, milk, bread crumbs and salt. Crumble beef over mixture and mix well. Pat two-thirds of the meat mixture onto the bottom and up the sides to within 3/4 in. of the top of a 9x5-in. loaf pan. - Preheat oven to 325 degrees.
- In a bowl, combine the ground beef, eggs, bread crumbs, tomato juice and seasonings.
- In a skillet, heat the oil and saute the onions until translucent, about 5 minutes. Add to the meat mixture; mix lightly. Turn mixture out onto a sheet of foil and flatten into an oblong shape, about 1-inch thick.
- Place ham slices on meat, keeping them about 1 inch from the edge. Sprinkle grated cheese over ham.
- Begin to fold the meat from one side to the other, rolling as you go. Pinch the ends to seal when the roll is complete. Turn loaf from foil into a greased 9-by-5-by-3-inch loaf pan. Bake for 60 to 75 minutes.

- Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
- In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
- Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
- Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
- Slice and serve.

- In a large mixing bowl, combine the egg, the bread crumbs, and the milk. Stir in the onion, salt, poultry seasoning, sage, pepper, nutmeg, and ginger. Add ground beef and mix well.
- In a shallow baking dish, pat mixture into an 8x4x1-1/2-inch loaf, smoothing the top. Bake meat loaf in 350 degree oven for 45 minutes.
- In a small bowl, stir together the ketchup and brown sugar. Spread over the meat loaf. Bake for 10 to 15 minutes more, until done.
- In the meatime, prepare Dried Tomato Mayonnaise: In a small bowl, cover dried tomatoes with boiling water. Let tomatoes stand 5 minutes; drain well. Finely chop the tomatoes. In the small bowl, combine the tomatoes, mayonnaise, sour cream, and milk. Use half of the mixture for the meat loaf sandwiches; refrigerate remaining mixture to serve with other meat or poultry sandwiches.
- Serve sliced meat loaf on bread with Dried Tomato Mayonnaise, cheese, lettuce, and tomato slice.
