1 (7 ounce) package caramelized spiced Belgian cookies (such as Trader Joe's® Speculoos Cookies), divided
⅓ cup unsalted butter, softened
4 (8 ounce) packages cream cheese, softened
¾ cup white sugar
1 cup cookie butter (such as Trader Joe's® Speculoos Cookie Butter®), divided
2 teaspoons vanilla extract
½ teaspoon ground ginger
5 large eggs
1 cup toffee baking chips (such as Bits O' Brickle Toffee Bits®)
1 cup sour cream
½ cup cookie butter (such as Trader Joe's® Speculoos Cookie Butter®)
½ cup toffee baking chips (such as Bits O' Brickle Toffee Bits®)

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Wrap the bottom of a 9-inch spring form pan with aluminum foil to create a water-proof barrier.
  • Pour water into a large baking pan, filling it 1/2 inch deep, and place it in the oven to create a water bath.
  • Set aside 6 cookies for the topping. Break up the remaining cookies and place in a blender. Pulse several times until the cookies have turned into uniform crumbs.
  • Combine softened butter and cookie crumbs in a bowl using a fork or pastry knife. Add mixture to the prepared springform pan and evenly press them into the bottom to form a crumb crust. Refrigerate while preparing the filling.
  • Combine cream cheese, sugar, cookie butter, vanilla extract, and ground ginger in the bowl of an electric mixer. Mix to combine on medium-high speed; mixture will be quite thick. Add eggs one at a time, beating well after each addition. Scrape the bowl with a spatula as needed. Stir in toffee chips.
  • Remove springform pan from the refrigerator. Pour filling on top of the crust, using a spatula to even out the top. Carefully place springform pan into the water bath, adding more hot water if necessary.
  • Bake in the preheated oven for 12 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake until the top of the cheesecake is golden brown, 50 to 60 minutes. Add more hot water as necessary, since there will be some evaporation.
  • Remove cheesecake and place on a wire rack to cool to room temperature, about 1 hour.
  • Whisk sour cream and 1/2 cup cookie butter together to make the topping. Spread topping on top of the cheesecake and garnish with 1/2 cup toffee chips. Crumble reserved cookies over on top. Refrigerate for at least 4 hours before serving.

4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup granulated sugar
1/4 cup packed dark brown sugar
1 Tbsp. vanilla
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
4 eggs
1/4 cup European-style cookie butter (speculoos cookie butter)

Steps:

  • Heat oven to 325ºF.
  • Reserve 6 cookies. Finely crush remaining cookies; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, sugars, vanilla and spices in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.
  • Crush remaining cookies coarsely; sprinkle over cheesecake just before serving. Microwave cookie butter in microwaveable bowl on HIGH 30 sec. or until heated through; stir. Drizzle over cheesecake.

1 batch Brown Butter Toffee Chocolate Chip Cookie
1 batch cheesecake batter, omit freeze-dried strawberries
hot water, for baking
½ cup dark brown sugar
¼ cup heavy cream, room temperature
2 tablespoons unsalted butter
1 teaspoon McCormick® vanilla extract
¼ teaspoon flaky sea salt
2 tablespoons mini chocolate chips

Steps:

  • Preheat the oven to 350°F (180°C).
  • Wrap the outer bottom of a 7-inch (18 cm) springform pan with 2 layers of foil, going at least halfway up the sides. This will prevent water from leaking into the pan when placed in the water bath. Then, line the inside bottom of the pan with parchment paper.
  • Press half of the cookie dough evenly against the bottom and about ⅓ of the way up the sides of the pan. Pour in the cheesecake batter.
  • Place the springform pan in an 11-inch (27-cm) round pan or roasting pan. Fill the larger pan with hot water until it reaches halfway up the sides of the springform, being careful not to splash any onto the cheesecake. Carefully transfer the pan to the oven and bake for 45-55 minutes. The center of the cheesecake should still jiggle slightly when you shake the pan.
  • Turn off the oven and leave the cheesecake inside for 1 hour to cool. Carefully remove the cheesecake from the water bath and let cool at room temperature for another hour, then transfer to the refrigerator to chill for at least 4 hours, or overnight.
  • Reduce the oven temperature to 325°F (160°C). Line a baking sheet with parchment paper.
  • Using a #30 (1-ounce) scoop, scoop the remaining cookie dough onto the prepared baking sheet. You should get about 18 cookies. (Alternatively, wrap the remaining dough in plastic wrap and store in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 2 months.)
  • Bake the cookies for 12-15 minutes, until the edges brown slightly. Remove from the oven and immediately sprinkle the cookies with flaky sea salt. Let cool on the baking sheets for 10-15 minutes, then transfer to a wire rack to cool completely. Cut 2-3 of the cookies in half, then crush 2-3 more for topping the cheesecake. Reserve the remaining cookies for another use.
  • Make the toffee sauce: In a medium pot, combine the brown sugar, cream, and butter. Cook over medium-low heat for 3-4 minutes, until starting to thicken. Add the vanilla and flaky salt and cook for another minute, until the salt dissolves.
  • Pour the sauce into a heatproof jar, cover, and let cool at room temperature. The sauce will keep in an airtight container in the refrigerator for up to 2 weeks.
  • Once the cheesecake has chilled, use a knife or offset spatula to loosen the cheesecake around the sides of the pan, then release the springform. Transfer the cheesecake to a serving platter.
  • Top the cheesecake with the toffee sauce, halved cookies, crushed cookies, and mini chocolate chips.
  • Slice and serve.

This is a recipe I've been making for a few years, and it's always a hit. My family loves it, party guests love it, and I certainly love it, too! It makes lots of dishes but it is so worth it - creamy, flavorful, and absolutely delicious.

2 cups finely crushed graham cracker crumbs
½ cup white sugar
½ cup salted butter, melted
1 teaspoon ground cinnamon
¼ teaspoon salt
3 (8 ounce) packages cream cheese, softened
1 cup white sugar
¾ cup sour cream
½ lemon, juiced
1 teaspoon vanilla extract
3 eggs
1 cup all-purpose flour
2 tablespoons all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup salted butter, melted
6 tablespoons packed brown sugar
6 tablespoons white sugar
½ teaspoon vanilla extract
1 egg
¾ cup mini chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Mix graham cracker crumbs, 1/2 cup white sugar, 1/2 cup melted butter, cinnamon, and 1/4 teaspoon salt together in a bowl until well combined and slightly sticky. Transfer mixture to the prepared baking dish and firmly press into the bottom.
  • Bake in the preheated oven until crust is lightly browned, about 10 minutes. Set aside to cool.
  • Reduce oven temperature to 325 degrees F (165 degrees C).
  • Beat cream cheese and 1 cup white sugar together in a bowl using an electric mixer on medium-low speed until creamy and smooth. Reduce mixer speed to low; add sour cream, lemon juice, and 1 teaspoon vanilla extract. Beat in 3 eggs, 1 at a time, blending well after each addition. Pour cream cheese mixture over crust.
  • Bake in the oven until edges are set and middle is still slightly soft, 30 to 35 minutes.
  • Mix 1 cup plus 2 tablespoons flour, baking soda, and 1/2 teaspoon salt together in a bowl. Beat 1/2 cup melted butter, brown sugar, 6 tablespoons white sugar, and 1/2 teaspoon vanilla extract together in a large bowl using an electric mixer until creamy. Beat 1 egg into creamed butter mixture until incorporated; gradually beat into flour mixture until cookie dough is creamy. Fold chocolate chips into cookie dough.
  • Dot cookie dough onto cheesecake; return to the oven and bake until cookie dough is set, 5 to 10 minutes. Cool cheesecake to room temperature, about 1 hour. Cover and refrigerate until chilled, 3 hours to overnight.
