185g golden caster sugar
150g soft light brown sugar
2 medium eggs , beaten
2 tsp vanilla extract
335g self raising flour

Categories     dessert

Time 37m

Yield 8 servings

Number Of Ingredients 21

Nonstick cooking spray
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 (8-ounce) package cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 teaspoons vanilla extract
1/2 teaspoon lemon zest
Pinch salt
2 tablespoons orange marmalade
1/2 teaspoon herbs de Provence
1 cup blueberries
1 cup sliced kiwi
1 cup sliced nectarines
1 cup raspberries
1 cup strawberries, sliced

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. Add in the egg and vanilla and mix until incorporated. Slowly incorporate the flour mixture into the creamed butter, and mix until blended. Remove the dough from the bowl and press it into the prepared pan. (You may need to dust your hands with some flour to prevent the dough from sticking to them; it is a wet dough when it comes together.) Bake until the edges just start to brown, 10 to 12 minutes. Remove from the oven and let cool.
  • For the spread: In a large mixing bowl, beat the cream cheese, confectioners' sugar, vanilla, lemon zest and salt until smooth. Spread evenly on the cooled crust.
  • For the glaze: Add the marmalade, 2 tablespoons water and the herbes de Provence to a small skillet and cook over medium heat until loosened and warm.
  • To assemble: Arrange the fresh fruit in the desired pattern on top of the pizza. Brush the fruit with the glaze. Slice and serve.

CHOCOLATE-CHIP COOKIE PIZZA

Chocolate-Chip Cookie Pizza image

You like chocolate chip cookies. You like pizza. What could be better than a giant chocolate chip pizza cookie? If your answer is, "pretty much nothing," we'd say you're 100% right. This Instagram-worthy treat starts with a batch of our famous chocolate chip cookie dough (with a smidge of cornstarch to keep the cookie soft and gooey in the center), but from there, it's all yours. When we took it out of the oven, we spread on cherry jam "pizza sauce," drizzled on melted white chocolate "mozzarella," and added rounds of raspberry fruit leather "pepperoni." But warmed Nutella and blobs of marshmallow fluff are a pretty awesome combination, too. We developed this recipe for a special print-only edition of The New York Times for Kids, but our sources tell us grown-up sweet tooths can't resist this oversized treat either. For a more sophisticated dinner party-worthy variation, leave off the toppings and serve generous wedges with scoops of vanilla ice cream and salted caramel sauce.

Categories     cookies and bars, dessert

Time 1h

Yield 2 10-inch cookies or 1 sheet-pan pizza cookie

Number Of Ingredients 10

3 2/3 cups minus 2 tablespoons all-purpose flour
3 1/2 teaspoons cornstarch
1 1/4 teaspoons baking soda
1 1/2 teaspoons coarse salt
2 1/2 sticks (1 1/4 cups) unsalted butter, softened
1 1/4 cups (10 ounces) light brown sugar
1 cup plus 2 tablespoons (8 ounces) granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 pound bittersweet or semisweet chocolate chips

Steps:

  • Heat the oven to 350 degrees. Sift flour, cornstarch, baking soda and salt into a large bowl. Set aside.
  • Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes, on medium-high. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until the white streaks of flour just disappear, 5 to 10 seconds. Stir in chocolate chips.
  • For one large rectangular pizza, transfer the dough to a sheet pan lined with parchment paper and flatten out with your fingers or a rubber spatula. For two cookies, divide the dough into two equal pieces on two separate sheet pans lined with parchment paper and flatten into the shape of a circle. Be sure to leave a border of at least 1 1/2 inches as cookie will spread.
  • Bake until golden brown but still soft, 18 to 25 minutes. Transfer sheet to a wire rack for 10 minutes. Top as desired (see note). Cut in wedges and serve.

PIZZA DOUGH

Pizza Dough image

Provided by Mark Bittman

Categories     dinner, pizza and calzones, side dish

Time 1h

Yield 1 large pizza

Number Of Ingredients 5

3 cups all-purpose or bread flour, plus more as needed
2 teaspoons instant yeast, such as SAF-Instant Yeast
2 teaspoons coarse sea or kosher salt, plus extra for sprinkling
1 to 1 1/4 cups water
2 tablespoons olive oil

Steps:

  • If using a food processor, combine flour, yeast and salt in work bowl. Turn machine on and add 1 cup water and the oil through the feed tube. Process 30 seconds, adding up to 1/4 cup more water, a little at a time, until mixture forms a ball and is slightly sticky to the touch. (In unlikely event mixture is too sticky, add flour, a tablespoon at a time.) To make dough by hand, combine half the flour with the yeast and salt in a bowl and stir to blend. Add 1 cup water and the olive oil; stir with a wooden spoon until smooth. Add remaining flour bit at a time; when mixture becomes too stiff to stir with a spoon, begin kneading, adding as little remaining flour as possible, just enough to keep dough from being sticky mess. Knead 5 to 10 minutes.
  • Turn dough onto a floured work surface and knead by hand a few seconds to form a smooth, round ball. Transfer to a bowl and cover with plastic wrap; let rise until doubled in size, 1 to 2 hours. (You can cut rising time if you are in a hurry, or you can let dough rise more slowly in refrigerator for 6 to 8 hours.) Dough can then be used immediately or wrapped tightly in plastic wrap and frozen for a month. Defrost in covered bowl in refrigerator or at room temperature.
  • Form risen dough into a ball and divide into two or more pieces; roll each into a ball. Place each on a lightly floured surface, sprinkle with a little flour, and cover with plastic wrap or a towel. Let rest until slightly puffed, about 20 minutes.
  • Oil one or more baking sheets, then press each dough ball into a flat round directly on sheet. Pat out dough as thin as you like, using oiled hands if necessary.
  • Proceed with any recipe.
