SNOWMAN SUGAR COOKIES
Steps:
- Preheat the oven to 350 degrees F. Line a half-sheet pan with parchment paper.
- Sift the flour into a medium bowl. In a stand mixer fitted with the paddle attachment, cream together the butter, sugar, vanilla extract and almond extract, 3 to 5 minutes. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Decrease the speed to low, add the flour and mix to incorporate. Scrape down the sides of the bowl and increase the speed to medium for 30 seconds. Chill the dough for 1 hour in the refrigerator.
- Lightly dust a clean surface with flour. Using a rolling pin, roll out the dough between 1/4-inch and 1/2-inch thick. Cut the dough with a snowman cookie cutter and place on the prepared sheet pan (about 24 cookies). Refrigerate the dough for 15 minutes. Bake for 10 to 15 minutes. Cool completely, then serve the cookies as-is, or frost the cookies and then serve.
NO-BAKE COOKIE DOUGH SNOWMEN
Kids don't have to bundle up to make snowmen--they'll have a blast (indoors) making these eggless chocolate chip cookie dough truffles. They can help measure the ingredients, roll and dip the dough balls and decorate the adorable snowmen with candy accessories. Serve alongside your holiday cookie platter and stay warm.

- Line a baking sheet with parchment. Microwave the flour in a small microwave-safe bowl for 1 minute. Stir well, then microwave again until the temperature reaches 180 degrees F, about 1 minute more (see Cook's Note). Sift into a medium bowl, then whisk in the salt; set aside.
- Beat the brown sugar, granulated sugar, butter, yogurt and vanilla in a large bowl with an electric mixer on medium-high speed until well combined, about 2 minutes. Add the flour mixture and mix on low speed until well incorporated. (If needed, turn off the mixer and use your hands to help combine.) Fold in 1/3 cup of the chocolate chips with a rubber spatula, or mix them in with your hands.
- Scoop fourteen 1-tablespoon portions of dough and roll into smooth balls; scoop fourteen 1-teaspoon portions of dough and repeat. Put the balls on the prepared baking sheet and freeze until chilled, about 20 minutes.
- To make the coating, microwave the melting wafers and 4 teaspoons of the coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each, until melted. (Alternatively, melt in a double boiler.)
- One at a time, drop the chilled balls into the coating and roll around with a fork to fully coat. Remove each ball with the fork, letting any excess coating drip off, and return to the baking sheet. Fill in any holes with extra coating.
- To make the hats, put the nonpareils on a work surface white-side up. Dip the narrow end of the chocolate caramels into the coating and place one on each nonpareil. Put the hats on the baking sheet with the balls and refrigerate until the coating is set, about 5 minutes.
- Trim any excess coating around the balls with a paring knife. To make heads, dip the flat part of the small balls in the coating and stack one on top of each large ball. To make noses, dip the flat end of the jelly bean pieces in the coating and press one into the center of each head. Dip the bottoms of the hats in the remaining coating and attach one to each head. Refrigerate until the coating is set, about 5 minutes.
- Tie a sour belt strip around the neck of each snowman. Combine the remaining 2 tablespoons chocolate chips, 1/2 teaspoon coconut oil and the black food coloring in a small microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until melted. Transfer to a piping bag or a resealable plastic bag and snip off the corner. Pipe 2 eyes on each head and 3 buttons down the front of each body. Refrigerate until completely set, about 10 minutes.

- Beat pudding mix and milk with whisk 2 min. Let stand 5 min. or until thickened.
- Line 8-inch round pan with plastic wrap. Arrange 14 cookies on bottom of pan, cutting to fit if necessary; cover with 1 cup pudding. Repeat layers. Cover with plastic wrap. Refrigerate 24 hours.
- Uncover dessert. Invert onto serving plate; remove plastic wrap. Frost dessert with COOL WHIP. Add remaining cookies for the eyes, carrot for the nose and licorice pieces for the mouth.

- In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. - Heat oven to 400°F (if using dark or nonstick cookie sheet, heat oven to 375°F). In large bowl, beat butter, powdered sugar and vanilla with electric mixer on medium speed until smooth. Beat in flour and salt.

- Empty 1 bag white candy melts into a microwave-safe bowl. Microwave at 50% power for 1 minute. Stir and continue to microwave in 15- to 30-second intervals until candy is almost completely melted. Let sit for about 1 minute and stir until smooth. Set the second bag of white candy melts aside.
- Dunk a cookie in the white melted candy. Use a fork to turn it over to ensure it's completely coated on all sides. Transfer to a parchment-lined baking sheet. Place 2 sprinkles in the middle for eyes. Place 1 half of a Tic Tac® under the eyes for a nose. Place 4 more sprinkles in a semi circle on the bottom for the mouth. Repeat for remaining cookies, melting the second bag of white candy melt as needed.
- Place the baking sheet in a cool, dry area for about 25 minutes so candy coating can harden. Do not place in the freezer or the snowmen will sweat.
- Melt the red candy melts as in step 2.
- Cut any excess chocolate off around each cookie. Dip the top part of each cookie in the red melted candy to make a hat and add an M&M® for a design. Place on a new parchment-lined baking sheet and allow to harden, about 25 minutes. Cut off any excess chocolate before serving.
