ARLENE'S PRIZE-WINNING CINNAMON ROLLS
My go-to recipe for cinnamon rolls or just plain dinner rolls. I won 2 awards at the Stafford KS County Fair, Hudson Cream Flour Bake-fest with these, along with overwhelming approval from friends and family!

Steps:
- 1. In large mixing bowl, combine 1 1/2 cups flour with yeast. Using a microwave safe 2 cup measuring cup, heat milk, sugar, and Crisco to very warm-about 130F. Add to flour mixture, mix well and let rest for a few minutes.
- 2. Add egg and salt, mix for 3 minutes with electric mixer or by hand with a wire whisk. Stir in remaining 2 cups flour with large rubber spatula, adding the 2nd cup gradually until a soft dough forms.(Humidity may affect texture of dough and amount of flour needed)Spray a clean mixing bowl with cooking spray, place dough in bowl and cover with plastic wrap. Dough may be placed in refrigerator to rise overnight, or left to rise at room temperature for immediate use.
- 3. After dough has doubled in size, punch down and let rest for 5 minutes. On a large floured surface, roll dough into a large rectangle. Spread with softened butter and sprinkle with cinnamon sugar mixture. Roll up tightly and pinch seam together. Cut into 1 inch slices with sharp knife. Place slices evenly on large (approx. 12" X 16") sheet cake pan sprayed with cooking spray. Cover with clean dish towel or waxed paper and let rise until double. Preheat oven to 375F. Bake rolls for approx. 10-15 minutes until they are light golden brown. Watch rolls closely! Remove from oven.
- 4. For the icing, melt butter in microwave safe dish until it boils. Add powdered sugar and mix well. Add vanilla and cream until icing is thin enough to drizzle over warm rolls.
- 5. Options and helpful hints: Substitute about 1/2 cup whole wheat flour for the white flour when mixing with yeast. Sometimes the dough has to be kneaded a few times to reach the right consistency and more or less flour may be needed. Use a long piece of dental floss to cut slices...slide floss underneath, cross at top and pull through dough. Maple flavoring and chopped pecans may be added to the icing for a different taste experience.
MINI CANNOLI CREAM PASTRY CUPS

- Prepare filling: In a large bowl with an electric mixer combine all ingredients for the filling except the chocolate chips and mix well until creamy. Place the filling in a 1-gallon plastic storage bag and chill while you make the cups.
- Prepare pastry cups: Heat oven to 425 degrees F. Unroll the piecrusts onto a lightly floured surface and sprinkle the top of each crust with the natural sugar and the cinnamon. Lightly roll over it with a rolling pin so that sugar and cinnamon are pressed into the dough. With a 2 1/2-3 inch round biscuit cutter or cookie cutter, cut out circles and lightly press them inside an ungreased mini muffin or mini cupcake pan to create a pastry cup.
- Bake for about 10 minutes or until cups are golden. Remove from oven and allow cups to cool. Once cups are cool, they can be removed from tin and filled.
- Remove filling from refrigerator, cut one of the bottom corners off the bag and pipe a little less than a tablespoon of filling into the cooled cannoli cups. Sprinkle with mini chocolate chips, dust with powdered sugar, and serve.
CHICKEN GLORIA CASSEROLE
I got this recipe in a Betty Crocker newsletter, submitted to them by blogger Arlene Cummings (Cooking with Sugar). Easy and delicious!

Steps:
- Heat oven to 350°F.
- Sprinkle both sides of the chicken with salt and pepper. Spoon flour onto shallow dish or pie plate. Coat both sides of chicken with flour; shake off excess.
- In 12-inch skillet, heat oil over medium heat. Brown chicken on both sides. (You don't need to cook the chicken completely because it will finish cooking in the oven.) Transfer chicken to 13x9-inch (3-quart) glass baking dish.
- Place butter in same skillet; let melt over medium-high heat. Add mushrooms; sprinkle with salt and pepper. Cook and stir mushrooms until golden brown. Stir in sherry; cook and stir for additional 1 to 2 minutes. Stir in soup; mix well. Cook until thoroughly heated.
- Pour mushroom sauce over chicken; top each piece of chicken with one slice cheese. Fold cheese in half if it is too wide for chicken piece.
- Cover dish with foil; bake 30 minutes. After 30 minutes, turn oven to boil setting. Remove foil from dish; broil 1 to 2 minutes to brown the cheese. Remove from the oven; set aside to cool slightly.
- Top with parsley.
PINEAPPLE STUFFING
SO EASY!! I originally got the recipe from "At Home with Arlene Williams"...after playing with it, my mom and I tweaked it and made it exactly how we like it! Everybody LOVES it, and it has become a staple with any holiday meal that we serve ham (and my favorite dish!). I usually add a little more sugar than the 1/2 cup called for, but the original recipe called for 1 cup and it was WAY too sweet! :)

- Using a small dough scoop or a teaspoon to scoop the dough form balls that are about 1 1/2 inches round.
