Steps:
- Saute onion and garlic in butter until onion is soft. Add remaining ingredients and bring to a boil.
- Cover and simmer on low for 20 minutes. Fluff with a fork, and enjoy!
INSTANT POT CILANTRO LIME RICE
Steps:
- In the bowl of the Instant Pot, combine rice, butter, garlic, 1 Tablespoon lime juice, chicken broth, and sugar. Place the lid on top and set the Instant Pot to manual high pressure for four minutes. When the timer goes off, let the pressure naturally release for 10 minutes. Stir in cilantro and last tablespoon of lime. Fluff and enjoy!

CHIPOTLE COPYCAT LIME RICE RECIPE
This is a copycat recipe I found for this amazing rice, it works perfectly with a nice savory pulled pork that I use for making burritos. But it really is good enough to have on it's own. *edit* I will have to revisit this recipe soon and come up with more precise measurements and possibly using more generic rice.

Steps:
- In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.
- Add rice and lime juice, stir for 1 minute.
- Add water and salt, bring to a full rolling boil.(Some people have had success with 1 cup of water, but when I've made it with 2 it worked for me).
- At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes.
- Add in the cilantro and fluff rice with a fork.

Steps:
- Brown onion and rice in oil.
- Place water/stock, bouillon, cilantro, lime zest, and salt in blender till blended thoroughly.
- Add water mixture to rice and bring to boil.
- Reduce heat and simmer 20 minutes.
- When rice is cooked, fluff with fork and add lime juice.
- Serve with Cafe Rio pork and beans.
HEALTHY MEALS MONDAY: CAFE RIO SLOW COOKER CHICKEN AND CILANTRO RICE

- Mix cumin, chili powder & dressing in bowl
- Place frozen chicken breasts in crock pot
- Pour mixture over chicken & cover
- Cook on high for 5 hrs or on low for 7 to 8. Shred chicken in the crockpot and mix it well.
- Wash and chop the cilantro. Mix the cilantro with 2 cups of water and pour in the pan for cooking the rice. Add two more cups of water, the salt, Salsa Verde, and onion. Bring to a boil. Stir in the rice in the boiling water. Cover and turn down heat to very low; steam for 30 minutes. Makes about 10 servings.
- Put it all together with Toppings:
- Cook whole wheat burrito tortillas on non-greased skillet 10-15 seconds on each side
- Put Chicken, Cilantro Rice, black beans, avocado, lowfat cheese, cilantro, tomatoes, (I also added red pepper, green onions and spinach) inside of tortilla.
- Add anything else you like (fat free sour cream, salsa, etc.)
- Roll up your tortilla and eat your delicious and healthy Cafe Rio Burrito!
