1 bottle bottle organic ketchup ((I used Annie's 24-ounce bottle))
1/4 cup of apple cider vinegar
1/4 cup brown sugar
1.5 Tablespoon Worcestershire sauce
2 teaspoons onion powder
1 Tablespoon dijon mustard
2 teaspoons paprika
1 teaspoon liquid smoke ((you could add more if you prefer a smokier BBQ sauce))
1 teaspoon black pepper

Steps:

Combine all ingredients in a sauce pan, and whisk to combine.
Simmer for about 5 minutes (or longer if you prefer a thicker texture).
Store for up to two weeks in the refrigerator.

1-6oz. can tomato paste
1 1/2 cups water
11/2 Tbls. canned pineapple juice
1/2 heaping tsp. kosher salt
1/2 tsp. garlic powder
3/4 tsp. liquid smoke
1/4 cup white vinegar
3/4 Tbls. fresh squeezed lemon juice
4 Tbls. molasses
3 Tbls. light corn syrup
3 Tbls. brown sugar
3 Tbls. cold water + 1 Tbls. corn starch for slurry to thicken sauce

Steps:

In a medium size saucepan over medium heat, mix together all ingredients except for the slurry. Cook and stir til well combined and heated through. Allow mixture to boil, stirring often. Reduce heat to a simmer and let cook for 30 minutes, stirring occasionally. Then add in the slurry. Stir and cook about another 5 minutes. Remove from heat and let cool. Pour into glass jar and refrigerate until ready to use.

1 cup dark brown sugar
1/4 cup molasses (60 grams)
1/4 cup pineapple juice
1/4 cup water
1 tablespoon hickory liquid smoke
2 1/2 teaspoons ground mustard
2 teaspoons paprika
1/2 teaspoon garlic powder
pinch cayenne pepper
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
1 tablespoon corn starch dissolved in 2 tablespoons cold water (optional)

Steps:

Whisk together all ingredients (except the corn starch in water) in a medium pot over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, until sugar has dissolved.
For a thicker sauce, add the cornstarch and water mixture. Then simmer for up to 15 minutes, until desired thickness is reached. Keep in mind that it may thicken slightly more as it cools.
Serve immediately or cover and store in the refrigerator.

A copycat of the famous Sweet Baby Ray's Barbecue Sauce. In my experience there is little to no need for the cornstarch slurry, but it's there as an optional step in case you want your sauce thick. Personally I just use a little of the slurry because the 10-15 minutes simmering time would already reduce the sauce and it would continue to thicken while cooling.

SIMMER: When it starts bubbling, lower the heat so it just simmers and allow it to cook for 5-7 minutes until it thickens. Keep in mind the sauce will thicken even further as it cools so you don’t want to cook it too much longer than that.
SERVE: brush on meats or poultry when grilling, as a sauce for pizza, or as a base for dips and dressings!
