Time 1h

Yield 4 serving(s)

Number Of Ingredients 10

1 lb chicken breast, cut into small strips
2 egg whites, beaten
1/2 teaspoon salt
1 cup water chestnut starch (or use cornstarch)
1 cup raw walnuts (not cooked or salted, available at Asian markets)
1/3 cup honey
corn oil (for frying)
1 cup mayonnaise
1/4 cup sweetened condensed milk
1/2 cup reduced-fat milk (do not substitute)

Steps:

  • Put chicken strips in medium bowl, then add beaten egg whites and salt. Mix to coat chicken, then set aside for 10 minutes.
  • After 10 minutes, toss chicken pieces in water chestnut starch. Dust off excess starch. Set aside.
  • Rinse walnuts in water, then toss in honey and mix well.
  • Using wok or deep skillet, add enough oil so that you will be able to deep-fry first the nuts and then the chicken. Heat oil to 350 degrees.
  • Add walnuts to oil and fry until they turn golden brown, stirring regularly. This will take just 1 to 2 minutes.
  • Remove walnuts from oil and drain on paper towels.
  • To hot oil add chicken. Cook, turning occasionally, until chicken is cooked through, about 3 minutes.
  • In medium saucepan, combine mayonnaise, sweetened condensed milk and 2% milk. Cook over low heat, stirring constantly. Sauce is done when it starts to bubble.
  • Put chicken in large bowl. Pour hot sauce over chicken pieces and mix well.
  • To serve: Divide chicken pieces among 4 serving plates. Top each serving with walnuts. Garnish with vegetables if desired. Makes 4 servings.

CHICKEN AND WALNUTS

Chicken and Walnuts image

This is one of my all-time favorite foods. I first had it at my best friends house in high school over 20 years ago. Her mother gave me the recipe and I have been making it ever since. I don't even like green peppers and I love them in this recipe. It is easy and the sauce is divine! For non-soy sauce/salt lovers--don't even try this recipe. The sauce is wonderful if you like the salty flavor of soy sauce, which obviously I do. For those that want a bland, non-salty light sauce, this is NOT the recipe for you! Look elsewhere! Enjoy!

WALNUT CHICKEN FOR A CROWD

Walnut Chicken for a Crowd image

Marinated chicken, grilled and served in a lemon-olive sauce, topped with toasted walnuts. This recipe serves 10, but can easily be modified to serve smaller numbers. On those occasions when you are serving a crowd, it's great to have a recipe that doesn't need to be doubled or tripled. Because the chicken is marinated, this recipe is obviously suited to those occasions when the guests have been invited: NOT to those occasions when they just turn up - uninvited. The marinading time has not been included in the preparation and cooking times. I have not tried freezing this recipe, but from experience with other chicken dishes my guess is that it would freeze well. I am not so sure about the walnuts. I'd been inclined to omit them from any portions that are frozen, and toast fresh ones at the time of serving. Slivered almonds or chopped pecans could be used in place of the walnuts. • GRILLING: Preheat the grill to high, cook the chicken breast halves, turning and brushing with the reserved marinade, for 15 minutes or until the juices run clear.
  • SERVING: Arrange the chicken on a platter, top with a little of the sauce and sprinkle the toasted walnuts over the top. Serve with the jug of Lemon-Olive Sauce, grilled tomatoes, sautéed onions and mushrooms and your favourite rice dish.

WALNUT-CRUSTED CHICKEN BREAST

Walnut-Crusted Chicken Breast image

I almost never order a nut-crusted entree in a restaurant, as they often feature a sugary glaze or a too-sweet nut, like pecan or macadamia. That's not an issue here since we're going with buttery, subtly bitter walnuts, held on with a very savory 'nut glue,' made with a garlic and mustard base. This protective layer of deliciousness makes boneless, skinless chicken breast taste like it was just carved off a freshly roasted carcass.

Provided by Chef John

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 2h25m

Yield 4

Number Of Ingredients 10

5 cloves garlic, crushed
3 tablespoons Dijon mustard, divided
2 teaspoons fresh thyme
2 (8 ounce) skinless, boneless chicken breast halves
salt and freshly ground black pepper to taste
cayenne pepper to taste
1 ½ cups finely chopped walnuts
1 tablespoon olive oil, or to taste
½ cup chicken broth
2 teaspoons honey

Steps:

  • Mix garlic, 2 tablespoons Dijon mustard, and thyme together in a bowl to make the "nut glue."
  • Season chicken breasts generously with salt, pepper, and cayenne. Spread nut glue all over the chicken. Refrigerate until ready to use.
  • Toss walnuts over the chicken, press down firmly, and repeat on the other side to coat thoroughly. Refrigerate for 1 1/2 to 3 hours.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Coat the bottom of an oven-proof skillet with some olive oil. Place chicken breasts on top, reserving excess nuts if desired. Season with a pinch of salt and drizzle more olive oil on top.
  • Bake in the center of the preheated oven until walnuts are lightly toasted and an instant-read thermometer inserted into the thickest part of a breast reads 150 degrees F (66 degrees C), about 25 minutes.
  • Quickly remove chicken to a plate to rest. Transfer skillet to the stovetop; stir in broth, 1 tablespoon Dijon mustard, and honey and bring to a boil over high heat; cook until reduced by about half, 3 to 4 minutes. Spoon pan sauce over and around the chicken to serve.
