BUTTERY CHERRY-CHIP SCONES (WHITE WHOLE WHEAT FLOUR)
These dense, rich and buttery scones are full of dried cherries and mini chocolate chips--perfect with coffee or tea for breakfast or brunch.

Steps:
- Heat oven to 400°F.
- In large bowl, mix flour, sugar, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs. Stir in cherries, chocolate chips, egg, vanilla and whipping cream just until dry ingredients are moistened.
- Place dough on lightly floured surface; gently roll in flour to coat. Knead lightly 10 times. On ungreased cookie sheet, roll or pat dough into 8-inch circle. Cut into 8 wedges with sharp knife that has been dipped in flour, but do not separate wedges. Sprinkle with sugar.
- Bake 18 to 20 minutes or until light golden brown. Immediately remove from cookie sheet; carefully separate wedges. Serve warm.

SEEDED WHOLE-WHEAT SCONES
True scones are not overly sweet. These have wonderful texture; even with whole-wheat flour and all the seeds, they're light. The seed mix I use includes sunflower, pumpkin, sesame, flax and poppy seeds.

- Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment.
- Sift together the flours, baking powder, baking soda, sugar and salt. Dump anything remaining in the sifter into the bowl with the sifted ingredients. Place in a food processor fitted with the steel blade and cut in the butter until the mixture is crumbly.
- Combine the buttermilk and vanilla and, with the machine running, add to the flour mixture. Stop the machine and add the seeds. Pulse a few times to combine.
- Flour your hands and a spatula, as well as your work surface, and scrape out the dough. Gently shape into a rectangle 1 inch thick. Cut into 6 squares, then cut the squares diagonally to give you 12 triangular scones. The dough will be tacky but should not be too sticky to work with. If it is, add a little more flour.
- Place the scones on the baking sheet about 1 inch apart and bake 15 minutes, or until lightly browned. Remove from the heat and allow to cool, or serve warm.

- Heat oven to 400 . Spray cookie sheet with cooking spray.
- In medium bowl, mix flour, sugar, baking soda and salt. Cut in butter, using pastry blender, until mixture looks like fine crumbs. Stir in yogurt, cherries and chocolate chips (dough will seem a little crumbly).
- On lightly floured surface, shape dough into a ball. Knead dough lightly 10 times. Divide dough in half. On cookie sheet, pat each half of dough into 6-inch circle. Cut each circle into 6 wedges, using sharp knife, but do not separate wedges.
- Bake 10 to 15 minutes or until golden brown. Immediately remove from cookie sheet to rack. Carefully separate wedges. Cool 10 minutes. Serve warm.

WHOLE GRAIN CHERRY CARDAMOM SCONES

We enjoyed them, however. They are not super sweet and tasted great with my morning coffee. This is from Whole Foods so the recipe called for all organic ingredients.

- Preheat oven to 400°F Line a cookie sheet with parchment paper (do not spray or oil) and set aside.
- In a blender, pulverize the oats until you have coarse flour.
- Place the oats in a large mixing bowl. Add the spelt flour, cane sugar, baking powder, cardamom, baking soda, and salt.
- Using a pastry blender or two knives, cut in the butter until it is well mixed and the flour resembles coarse crumbs. Set aside.
- In a separate medium bowl, lightly beat the egg. Whisk in the buttermilk and vanilla. Add this to the flour and oat mixture. Stir to combine.
- Gently fold in the cherries.
- Drop the scones into 8 rounded balls on the parchment-lined cookie sheet a couple of inches apart from one another. The scones will rise and enlarge considerably.
- Bake until golden brown, about 17 to 20 minutes or until a toothpick inserted into the center of a scone comes out clean.
- Cool on a wire rack for 5 minutes before serving.

- Cut frozen grated butter into the flour mixture until well combined.
- Combine egg, buttermilk and vanilla, and mix into the dry ingredients until dough forms.

SAVORY WHOLE WHEAT, SPINACH, AND CHEDDAR SCONES
Steps:
- Position a rack in the middle of the oven. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Combine the flour, baking powder, and salt in a large mixing bowl and set aside.
- Whisk the honey and cream in a separate bowl until smooth.
- Stir together the spinach and Cheddar cheese in a small bowl and set aside.
- Whisk the cream mixture into the flour mixture. Stir in the spinach mixture until smooth. Don't overmix the dough. It's okay if a few lumps of dry ingredients are visible.
- Turn out the dough onto a lightly floured work surface. Knead the dough very briefly, about 30 seconds, just until it sticks together. There should be as little handling as possible. Gently form the dough into a ball and lightly dust it with a little flour. Sprinkle a little more flour on the work surface and using a floured rolling pin, roll out the dough into a 1-inch-thick round that is 8 to 9 inches in diameter.
- Cut the dough into desired shapes. Gather up the scraps, reroll them, and cut out more scones until the dough is used up. Pat the scones lightly to smooth the tops.
- Place the scones about 2 inches apart on the prepared baking sheet. Bake the scones for 12 to 14 minutes, or until the tops spring back when pressed lightly and they are golden brown on the top and bottom.
- Remove the scones from the oven and cool for 5 minutes on the baking sheet. Transfer the scones to a wire rack to cool for at least 5 minutes before serving.
