Tibetan food is usually very mildly seasoned. According to the chef at my favorite Tibetan restaurant, it is the least spicy of the Himilayan cuisines. However, various hot sauces are served on the side. This chili sauce is one of the popular ones. It has two versions, one featuring yogurt, the other with tomato. This sauce does not keep for longer than a few days because the fresh cilentro loses flavor quickly.

1 bunch cilantro
4 green chilies, small size or 2 jalapeno chiles
1/2 cup red chile, dried and crushed
1 cup yogurt or 1 large tomatoes
5 garlic cloves
1 teaspoon salt
1/2 cup water

Steps:

  • Cut the cilantro into short lengths; if you are making the tomato version, cut it into quarters.
  • Place all ingredients into a blender until just uniform but still chunky.

500 g tomatoes, chopped coarsely
60 ml water
80 ml lime juice
50 g brown sugar
1 teaspoon fish sauce
80 ml sweet chili sauce
2 tablespoons chopped fresh coriander

Steps:

  • Combine first 6 ingredients in a pan and stir over low heat until the sugar dissolves.
  • Bring to boil, simmer uncovered for about 10 minutes until it thickens.
  • Remove from heat and cool.
  • Then stir in the coriander.

A delicious Thai version of salsa. Everyone I make this for loves it. Meant to accompany grilled fish, but you will find many uses for it. I usually add at least twice as much cilantro and double the recipe as guests will eat all of it. It is just as good the next day. I have mistakenly omitted chili-garlic sauce and still tasty. Use a sweet onion like Vidalia or a red onion if unavailable.

1/4 cup red pepper, finely chopped
1/4 cup onion, finely chopped
1 tablespoon cilantro, finely chopped
1 teaspoon sugar
1 teaspoon chili-garlic sauce
2 tablespoons lemon juice
3 tablespoons soy sauce
1 tablespoon oil

Steps:

  • In small bowl combine and beat a little to blend. Chill until ready to serve.
  • If serving with grilled or fried fish, dress with several tablespoons of sauce and lemon wedges and remaining sauce alongside. Delicious with steamed rice.
  • Don't try to substitute green pepper as flavors are not the same.
