3 dried ancho peppers, stemmed and seeded
2 tablespoons dried oregano
2 tablespoons sweet paprika
2 tablespoons whole coriander
1 tablespoon cumin seed
1 tablespoon chili powder
3 tablespoons extra-virgin olive oil
2 onions, chopped
3 pounds beef chuck, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
6 cloves garlic, chopped
1 canned chipotle chile, chopped
1/2 jalapeno pepper, chopped
2 (28-ounce) cans whole tomatoes, hand crushed
1 cinnamon stick
1 teaspoon sugar
2 tablespoons masa harina
Grated queso fresco, for garnish
Cilantro leaves, for garnish
Lime wedges, for garnish

Steps:

  • In a small dry skillet over low heat add the ancho peppers, oregano, paprika, coriander, cumin, and chili powder. Cook until they begin to smell, about 2 minutes. Put the spices into a spice mill or food processor and grind until they are powdered. Set aside.
  • Heat a large heavy bottomed casserole over medium heat; add 3 tablespoons olive oil and the onions. Cook until the onions are soft and beginning to caramelize, about 10 minutes. Pat the beef dry and season it with salt and pepper. Add it to the pot and cook, stirring frequently, until it has browned on all sides, about 10 minutes. Add 2 tablespoons of the toasted spice mix, the garlic, chipotle, jalapeno, tomatoes, cinnamon stick, and sugar. Season with salt and stir well. Add some hot water until the meat is just covered with liquid. Return to the boil, reduce to a simmer, cover, and cook for 1 1/2 hours. Remove the meat and shred it with a fork. Return it to the pot, stir in the masa harina, and cook for another 10 minutes, uncovered, to thicken. Taste and adjust seasoning. Serve with the queso fresco, cilantro, and lime for garnish.

TIBETAN HOT SAUCE

1 cup whole dried small red chile peppers
1 teaspoon whole Sichuan peppercorns (optional)
1/2 cup coarsely chopped fresh cilantro stems and leaves
2 teaspoons minced garlic
2 tablespoons minced ginger

Steps:

  • If possible, soak chiles overnight in plenty of cold water. If time is short, cover chiles with boiling water and soak for 20 minutes. Drain and discard soaking liquid.
  • If using peppercorns, coarsely grind in a mortar or spice grinder
  • In a blender or mortar, combine all the ingredients with 2 tablespoons of water and grind until smooth (the seeds of the chiles will remain whole). The finished sauce should be as thick as ketchup; thin with water as needed.

2 jalapeno peppers
2 large bunches fresh coriander, approximately
2 large cloves garlic
1 cup water
2 tablespoons butter
2 tablespoons olive oil
1/2 cup finely chopped onion
1 tablespoon finely chopped hot fresh chili pepper, stem removed but with seeds
1/2 cup chopped peeled red tomato
Salt to taste if desired

Steps:

  • Put peppers over a gas flame or heat over charcoal, turning often, until the outsides are burnt or charred, about 5 to 7 minutes. Dampen a cloth and wrap the peppers in it to cool.
  • Remove peppers and peel. Discard stems, veins and seeds. Cut peppers into fine shreds.
  • Meanwhile, pick the leaves from the sprigs of coriander. There should be about 1 1/2 cups of leaves, loosely packed.
  • In the container of a food processor blend the coriander leaves, garlic cloves and water. Blend thoroughly.
  • Heat butter and oil in a heavy skillet. Add onion. Cook, stirring, until wilted. Add jalapeno and chili peppers and tomato and cook, stirring, about a minute.
  • Add the coriander mixture. Add salt to taste and bring to a boil. Remove from the heat.

THREE-BEAN SALAD WITH CORIANDER CHILI DRESSING



Three-Bean Salad with Coriander Chili Dressing image

1 pound dried black beans, picked over
1 pound dried white beans, picked over
2 garlic cloves
2 bottled pickled jalapeño chilies, seeded if desired (wear rubber gloves)
2 cups loosely packed fresh coriander, rinsed and spun dry
1/3 cup plus 2 tablespoons fresh lemon juice
1 cup vegetable oil
1 pound green beans, trimmed and cut into 1-inch pieces
Note: It is important to soak and cook the black beans and the white beans separately because one bean variety can become mushy in the few minutes it takes another to become tender.

Steps:

  • In a large saucepan combine the black beans with triple their volume of cold water and in another large saucepan combine the white beans with the same proportion of cold water. Bring the water to a boil and simmer the beans, uncovered, for 2 minutes. Remove the pans from the heat and let the beans soak for 1 hour. Drain each pan of beans separately in a colander. In each pan put 2 1/2 quarts water and stir the black beans into the water in one pan, the white beans into the water in the other. Cook the beans at a bare simmer, testing for doneness every 5 minutes, for 15 to 40 minutes, or until they are just tender but still hold their shape. Drain the beans and let them cool to warm.
  • In a blender purée 1 of the garlic cloves, the jalapeños, and 1 cup of the coriander with 1/3 cup of the lemon juice, 2/3 cup of the oil, and salt to taste, scraping down the side of the blender, until the dressing is smooth. In a very large bowl toss the beans with the dressing and let them marinate, covered and chilled, stirring occasionally, overnight. The salad may be prepared up to this point 1 day in advance and kept covered and chilled.
  • In a saucepan of boiling salted water boil the green beans for 5 minutes, or until they are crisp-tender, and drain them in a colander. Refresh the beans under cold water and pat them dry. In the blender purée the remaining garlic clove and the remaining 1 cup coriander with the remaining 2 tablespoons lemon juice, the remaining 1/3 cup oil, and salt to taste, scraping down the side of the blender, until the dressing is smooth. Add the green beans and the dressing to the bowl of dressed beans, toss the salad well, and serve at room temperature.

1/4 cup sour cream
1/4 cup plain yogurt
2 garlic cloves, chopped
1 fresh jalapeño or other fresh green chili, seeded and chopped (wear rubber gloves), or to taste
2 cups packed fresh coriander, washed well and spun dry

Steps:

  • In a blender or small food processor blend together all ingredients with salt and pepper to taste, scraping down sides, until very smooth. Cream may be made 6 hours ahead and chilled, covered.

Tibetan food is usually very mildly seasoned. According to the chef at my favorite Tibetan restaurant, it is the least spicy of the Himilayan cuisines. However, various hot sauces are served on the side. This chili sauce is one of the popular ones. It has two versions, one featuring yogurt, the other with tomato. This sauce does not keep for longer than a few days because the fresh cilentro loses flavor quickly.
