Steps:
- Put the lime juice, zest, coriander, cilantro, scallion and honey in the bowl of a food processor and pulse to combine. With the processor running, add the olive oil in a steady stream. Turn the motor off and add the salt and pepper. Pulse to combine. Pour the mixture into a nonreactive bowl and add the chicken legs to it. Toss to coat well and refrigerate for 1 hour.
- Place a 10-inch cast iron grill pan over high heat for 3 minutes. Put 4 of the chicken legs into the pan and grill 3 to 5 minutes per side, or until the juice runs clear if speared with a knife. Repeat the process with the rest of the chicken. Allow to cool to room temperature and refrigerate until ready to use.

Steps:
- Mix the honey with the coriander (cilantro) and stir in the lime zest and juice.
- Add the chicken drumsticks and mix well, cover and chill for at least 1 hour.
- Heat the grill (broiler).
- Grill (broil) the chicken drumsticks, turning and brushing frequently with the marinade for about 25 minutes or until cooked through (to check, pierce the drumsticks at its thickest part, next to the bone, the juices should run clear), timing could depend on size of drumsticks too.

- To make the marinade, blend all ingredients together in a food processor or blender until a paste. Alternatively, if you don’t have a food processor or blender, chop the coriander very finely and mix with all other ingredients, or crush all ingredients (except lime juice) in a mortar and pestle until a paste, then stir in lime juice.
- Combine chicken with marinade and leave to marinate in the fridge for at least 1 hour, or up to 8 hours.
- When ready to cook, remove chicken from fridge and stand at room temperature for 20-30 minutes (your meat will cook much more evenly if it is at room temperature before cooking). Cook on a preheated BBG grill (medium to high heat) for 3-5 minutes on each side or until cooked through. Allow to rest for a few minutes before serving.

- Use fist (or rolling pin!) to pound fat end of chicken breast to about 1.7 cm / 2/3" thickness (not required for thigh).
- Place chicken and Marinade in a ziplock bag, massage to distribute marinade evenly. Place on a plate or bowl and refrigerate for 24 hours (min 12 hrs, max 48 hrs - Note 3)
