1 lb smoked sausage
1 (16 ounce) can corn
1 (10 ounce) package cornbread mix
salt, to taste
pepper

Steps:

  • Brown sausage in skillet.
  • Drain and put sausage in greased pie pan.
  • Pour drained can of corn over sausage.
  • Salt and pepper to taste.
  • Prepare corn bread mix according to package directions.
  • Pour over sausage/corn mixture.
  • Bake at 400° for 25-30 minutes, or until corn bread is golden.

1 lb smoked sausage links (quartered and diced into ½ inch pieces)
1 onion (small, diced)
1 Tb butter
1 ½ c self-rising cornmeal
½ teaspoon salt
¼ teaspoon chili powder
2 eggs (beaten)
¾ c milk
¼ c vegetable oil
14 oz. creamed style corn (canned)
4 oz. diced green chilies (canned)
1 ½ c shredded sharp cheddar cheese (divided)

Steps:

  • To begin, preheat your oven to 350 degrees.
  • Grease a 9x9 square baking dish, and set it aside for now.
  • In a skillet, sauté the sausage and onion with the butter over medium-low heat until the onions are tender and the sausage is slightly browned. Transfer the sausage mixture to a plate lined with paper towels to drain any excess grease.
  • In your mixing bowl, combine the cornmeal, salt and chili powder.
  • Stir in the eggs, milk, oil, creamed corn and green chilies.
  • Add 1 cup of the shredded cheese and the sausage mixture. Fold it together.
  • Spread the batter into your prepared baking pan. Sprinkle with the remaining cheese.
  • Bake for 35-40 minutes or until it tests done with a toothpick in the center. If it begins to get too brown on top while it is baking, simply cover it with some aluminum foil for the remainder of the baking time.
  • Enjoy!

1 pound pork sausage
1 onion, chopped
2 large eggs eggs, lightly beaten
1 ½ cups buttermilk self-rising cornmeal mix
1 (15 ounce) can cream style corn
½ cup sour cream
¼ cup vegetable oil
2 cups shredded sharp Cheddar cheese
½ cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 10 inch ovenproof skillet.
  • In a medium skillet, brown the sausage and onion; drain well.
  • In a large bowl, combine eggs, corn meal mix, corn, sour cream, milk, and oil. Pour half of corn meal mixture into the greased pan, and sprinkle with sausage mixture and cheese. Pour remaining batter over top.
  • Bake for 30 to 40 minutes. Let stand 10 minutes before serving.

1 lb bulk Italian sausage
1 medium onion, chopped (1/2 cup)
1 small bell pepper, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 can (15 oz) tomato sauce
1 box (9 oz) frozen whole kernel corn, thawed
1 jar (4.5 oz) sliced mushrooms, drained
2/3 cup cornmeal
1/3 cup all-purpose flour
1/2 cup milk
1 tablespoon sugar
2 tablespoons vegetable oil
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg
1/4 cup shredded Monterey Jack cheese with jalapeño peppers (1 oz)

Steps:

  • Heat oven to 400°F.
  • In 10-inch skillet, cook sausage, onion, bell pepper and garlic over medium heat 8 to 10 minutes, stirring frequently, until sausage is no longer pink; drain. Stir in tomato sauce, corn and mushrooms. Heat to boiling; remove from heat.
  • In medium bowl, stir all topping ingredients except cheese. Beat vigorously with spoon 30 seconds. Stir in cheese.
  • Spoon sausage mixture into ungreased 2-quart casserole. Pour topping over hot sausage mixture, spreading evenly.
  • Bake uncovered 20 to 25 minutes or until topping is golden brown.

4 ounces turkey sausage
1 cup chopped onion
1 garlic clove, crushed
1 (28 ounce) can chopped tomatoes, undrained
1/4 cup chopped green chili, undrained
3/4 cup frozen corn
1 teaspoon chili powder
2/3 cup cornmeal
1/4 cup white flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1/3 cup low-fat milk (1%)
1 tablespoon canola oil

Steps:

  • Preheat oven to 375°F.
  • Cook sausage, onion, and garlic in a large skillet over medium heat until meat is browned and crumbled.
  • Add tomatoes, chilies, corn, and chili powder and simmer 20 minutes.
  • Spoon mixture into an 8-inch baking dish coated with nonstick cooking spray. Set aside.
  • Combine cornmeal, flour, baking powder, and salt in a medium bowl, mixing well.
  • Combine egg, milk, and oil in a small bowl.
  • Add to dry ingredients, stirring just until moistened.
  • Spread corn bread mixture over sausage mixture.
  • Bake for 30-40 minutes or until golden brown.
  • Let cool for 5 minutes. Enjoy!
