CORN CASSEROLE I
This is the best corn casserole I've ever made. I know you will love it too! It tastes more like a souffle than anything else!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- In a large mixing bowl, combine eggs, cream style corn, sour cream and melted butter. Stir in whole kernel corn, cheese, onion and chilies. Stir in the corn muffin mix until just moistened.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 75 minutes; or until an inserted knife comes out clean and the top is golden. Let stand 5 minutes before serving.

CHEESY CORN & RICE CASSEROLE
This was one of my mothers most requested dishes for the holidays. Originally named "Mexicorn Casserole". I changed the name because it was deceiving. The only thing Mexi about it, is the Mexicorn used in it. Excellent side for your holiday cooking. It's quick, it's easy and it's always a big hit! Hope you enjoy! NOTE: Double recipe if cooking for a crowd.

Steps:
- Cook rice according to package directions. Add butter, corn, soup and pepper to cooked rice; mix well. Pour in to a greased casserole dish; cover with grated cheese.
- Bake at 325 degrees for 30 to 35 minutes or until bubbly on top.
DIANE'S CORN PUDDING
When my BIL retired from the USCG, my sister threw a big party to celebrate. Their neighbor Diane brought a large casserole of this corn pudding over to share. It was so good, not a bit was left. Diane gave my sister the recipe and she passed it along to me! (Diane made it w/ fresh corn!) This is the exact recipe I recieved; however, I reduce the amt of sugar called for as I find fresh corn pretty sweet.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 8 x12 inch casserole dish.
- In a mixing bowl, combine cream corn, niblet corn, eggs, sour cream, muffin mix, and butter. Pour into prepared casserole dish.
- Bake in a preheated oven for 30 minutes or until lightly brown.
- Remove from the oven and sprinkle cheese over the top. Return to the oven for 15 minutes or until the center is firm.

- In a large skillet, saute the garlic, onion and carrots in oil over medium heat, until tender. , Transfer to a greased 2-qt. baking dish; add chicken broth, barley, salt and pepper. Mix well. Cover and bake at 350° for 1 hour. , Stir in corn and parsley. Cover and bake 10-15 minutes longer or until the barley is tender and corn is heated through.
