LIME GRANITA AND CANDIED LIME ZEST



Lime Granita and Candied Lime Zest image

Number Of Ingredients 7

1 cup of freshly squeezed lime juice
1 cup sugar
2 cups of water
Candied lime zest, recipe follows
5 limes zested
1 cups water
1/2 cup sugar

Steps:

  • Put all ingredients except lime zest in a pot and bring to a boil. Strain and pour into shallow pan. Place in freezer and every twenty minutes stir with a fork until ice crystals form and it is nice and fluffy. Candied lime zest: Cover the zest with cold water and bring to a boil. Strain zest and repeat process 3 times. After the fourth time add 1 cup water and 1/2 cup sugar and cook slowly until zest is soft. Remove zest to parchment paper and cool. Use as a garnish for the granita.

1/3 cup plus 1/4 cup butter, softened, divided
2 to 3 tablespoons minced fresh cilantro
1-1/2 teaspoons grated lime zest
1 teaspoon salt
1 teaspoon plus 2 tablespoons lime juice, divided
1/2 teaspoon garlic powder

Steps:

  • Soak the corn in cold water for 1 hour. Meanwhile, in a small bowl, combine 1/3 cup butter, cilantro, lime zest, salt, 1 teaspoon lime juice and garlic powder; set aside., Carefully peel back husks from corn to within 1 in. of bottom; remove silk. Spread each ear of corn with butter mixture. Rewrap corn husks and secure with kitchen string. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill corn, covered, over medium heat for 25-30 minutes or until tender, turning occasionally., In a small microwave-safe bowl, melt the remaining butter; stir in remaining lime juice. Cut string and peel back husks. Brush corn with butter mixture.

4 ears fresh corn
1 tablespoon fresh lime juice
1/2 teaspoon lime zest
1 tablespoon butter
1/8 teaspoon salt
1 dash fresh ground pepper
2 tablespoons cilantro, chopped

Steps:

  • Microwave method for cooking corn: husk corn and wash off any loose silk. Place wet corn into Ziploc bag. Place bag in microwave and cook 4 minutes; rotate ears and cook 2 more minutes. Let sit 2 minutes to finish cooking. Cool five minutes and then slice kernels off the cob.
  • Combine corn kernels, lime juice, lime zest, butter, salt and pepper. **Can be made ahead up to this point.
  • Just before serving, add cilantro and toss to combine. If desired, garnish with lime slices and sprig of cilantro.

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mash butter, chipotle peppers, lime zest, and salt together in a bowl until evenly mixed.
  • Place corn on the grill, place lid on the grill, and cook corn, turning occasionally, until husks are charred, about 20 minutes. Serve corn with spicy butter.

4 ears corn
4 tablespoons (1/2 stick) unsalted butter, room temperature
2 tablespoons coarsely chopped cilantro
1/2 teaspoon grated zest of lime
1 1/2 teaspoons freshly squeezed lime juice
1/4 teaspoon chili powder
Coarse salt and ground pepper

Steps:

  • Peel back husks, leaving them attached at the base of the ear. Remove and discard silk; pull husks back over corn. Place a triple thickness of all-white paper towels in the microwave. Place ears, side by side, on towels. Microwave on high 8 to 9 minutes or until crisp-tender.
  • Meanwhile, in a small bowl, stir together butter, cilantro, lime zest and juice, chili powder, 1/8 teaspoon salt, and a pinch of pepper until blended.
  • Remove husks; serve with cilantro-lime butter.
