Corned Beef and Cabbage Slaw Sandwiches image

Get the flavors of a traditional corned beef and cabbage dinner in a new way. This sandwich combines deli corned beef and fresh, crunchy cabbage slaw.

Number Of Ingredients 12

2 tablespoons white vinegar
1 tablespoon olive oil
1 teaspoon pub-style mustard
1 teaspoon salt
¼ teaspoon pepper
¼ of a head green cabbage
¼ cup shredded carrot (about half of one large carrot)
2 teaspoon grated horseradish (fresh or the bottled, refrigerated prepared horseradish from the store)
¼ cup mayonnaise
2 tablespoons butter
4 potato sandwich rolls
12 ounces deli corned beef, sliced thinly or shaved (you can also use thin slices of homemade corned beef)

Steps:

  • In a medium bowl whisk together the vinegar, oil, mustard, salt, and pepper.
  • Put the cabbage on the cutting board flat side down, and use a sharp knife to slice it into thin shreds.
  • Add the shredded cabbage and shredded carrot to the vinaigrette, and toss everything together. Cover and refrigerate the slaw for 45 minutes to an hour to let the flavors meld. (Once it's chilled, if the slaw has a lot of liquid at the bottom feel free to drain this off so that the slaw won't be too sodden for the sandwiches.)
  • In a small bowl, mix together the grated horseradish with the mayonnaise. Cover and refrigerate it until you're ready to assemble the sandwiches.
  • In a medium skillet, melt the butter over medium high heat. Slice the potato rolls in half and place a couple of them cut side down in the skillet. Grill the rolls just until they begin to brown. Repeat until all the rolls are grilled.
  • (If you have a toaster oven or a wide-slot toaster, you can also just toast the rolls instead of browning them on the stovetop. Omit the butter if you're using a toaster or toaster oven.)
  • Spread the horseradish mayonnaise onto the rolls. Divide the corned beef into 4 equal portions and pile the meat on the bottoms of the rolls.
  • Top each with a scoop of the drained cabbage slaw, and then with the roll tops.
  • Skewer each sandwich with a toothpick or sandwich pick, and serve immediately.

3/4 cup mayonnaise
3 tablespoons chili sauce
1 can (14 ounces) sauerkraut, rinsed and well drained
12 ounces shredded deli corned beef
2 cups shredded Swiss cheese
30 sliced rye bread
1/2 cup butter, softened
Thousand Island salad dressing, optional

Steps:

  • In a large bowl, combine the mayonnaise, chili sauce, sauerkraut, corned beef and Swiss cheese. Spread over 15 slices of bread, about 1/3 cup on each; top with remaining bread. Lightly butter the outside of sandwiches. Toast on a hot griddle for 4-5 minutes on each side or until golden brown. Serve with Thousand Island dressing if desired.

1 ½ tablespoons prepared horseradish
salt and ground black pepper to taste
¼ cup olive oil
3 cups shredded cabbage
1 cup thinly sliced red onion
1 cup grated carrots
10 slices rye bread
2 tablespoons Dijon mustard, or to taste
1 pound deli sliced corn beef, or more to taste

Steps:

  • Prepare coleslaw: whisk vinegar, Dijon, horseradish, salt, and pepper together in a large bowl. Continue to whisk while adding oil in a stream; whisk until dressing has emulsified.
  • Add cabbage, onion, and carrots to the dressing; toss until well combined. Cover and chill in the refrigerator, 8 hours to overnight.
  • Prepare sandwiches: spread each bread slice with mustard. Lay 5 slices on a work surface. Arrange coleslaw and corned beef over top, cover with remaining bread slices. Press together firmly, cut, and serve.

1 cup very thinly sliced savoy cabbage (you can substitute green cabbage)
1 tablespoon rice vinegar or white wine vinegar
1/2 teaspoon sugar
1/4 teaspoon celery seeds
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
2 teaspoons ketchup
2 teaspoons drained sweet pickle relish
1/4 teaspoon paprika
8 slices rye or marbled rye sandwich bread
8 thick slices Swiss cheese
1 pound leftover corned beef, coarsely chopped
3 tablespoons unsalted butter, at room temperature

Steps:

  • For the slaw: Put the cabbage in a bowl, sprinkle the vinegar, sugar, celery seeds and salt and pepper to taste over the top and toss well. Let stand, tossing frequently, until the cabbage wilts, about 20 minutes.
  • For the sandwiches: In a small bowl, stir together the mayo, ketchup, relish and paprika. Spread the dressing on one side of each slice of bread. Put a slice of cheese on each piece of bread; divide the meat among 4 of the slices. Top each sandwich with some slaw and invert the remaining cheese-covered bread slices onto each sandwich. Spread 1/2 tablespoon of the butter on the top of each sandwich.
  • Melt the remaining 1 tablespoon butter in a large nonstick skillet or griddle over medium heat. Arrange the sandwiches buttered-side up in the skillet and cook until the bottoms are golden, about 4 minutes. Carefully flip the sandwiches and cook until the undersides are golden brown and the cheese is melted, about another 4 minutes. Slice the sandwiches diagonally and serve.

3 pounds corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch pieces
1 large head cabbage, cut into small wedges

Steps:

  • Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
  • Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
  • Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

8 slices Jewish rye bread
1 pound thin-sliced corned beef
½ pound prepared coleslaw

Steps:

  • Spread about 1/4 of the Russian salad dressing onto one side of each of four bread slices; top each with 4 ounces corned beef and 2 ounces coleslaw. Finish sandwich construction with remaining bread slices. Halve sandwiches diagonally before serving.
