Steps:
- Preheat oven to 350 degrees F.
- In a very deep pot, bring enough oil to fill the pot by 2/3 of the way. Heat the oil to 350 degrees F.
- Add the hen slowly to the oil and fry for 8 to 10 minutes on each side until golden brown and have reached an internal temperature of 165 degrees F.
- Remove the hen from the oil and drain on a paper towel.
- Whisk together in a large bowl, the hoisin, honey, red pepper flakes, and the scallions. Brush mixture over the cooked hen on both sides and reserve the extra sauce for dipping.
- Place in oven for about 7 minutes. Take out. Flip over and brush reserved hoisin sauce on flipped side. Place in oven for another 7 minutes.

- Mix olive oil, 1 tablespoon Dijon mustard, lemon zest and juice, orange zest and juice, garlic, salt, and black pepper together in a large resealable bag. Add hens, seal bag, and coat hens with marinade. Refrigerate for at least 1 hour, flipping the bag 1 or 2 times to redistribute marinade.
- Preheat oven to 450 degrees F (230 degrees C).
- Mix orange juice, soy sauce, honey, 1/4 cup Dijon mustard, onion, ginger, and black pepper together in a bowl.
- Remove hens from marinade and transfer to a roasting pan, discarding leftover marinade.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a cookie sheet generously with cooking spray.
- Combine apricot preserves, Sriracha, Worcestershire, and butter in a small pot and melt over medium heat. Stir constantly to prevent from sticking.
- Clean hens and pat dry with paper towels. Coat outsides and insides with oil. Season with mango-habanero seasoning; insert sprigs of basil inside of the hens.
- Place hens on the prepared cookie sheet and cover with foil.

CORNISH HENS WITH SWEET VERMOUTH GARLIC GLAZE

- Put oven rack in middle position and preheat oven to 450°F. Pat hens dry and sprinkle with salt and pepper. Roast, cut sides down, in a large heavy shallow baking pan (1 inch deep) until just cooked through, about 30 minutes.
- While hens roast, simmer vermouth, garlic, thyme, and 1/2 cup water, uncovered, in a 2-quart heavy saucepan until garlic is soft, about 15 minutes. Discard thyme. Mash garlic into sauce with a fork and simmer until reduced to a glaze (about 3 tablespoons). Brush glaze onto hens and roast 5 minutes more. Pour remaining 1/2 cup water into saucepan, swirling to dissolve any remaining glaze, and reserve.
- Transfer hens to a serving dish and let stand, loosely covered with foil, 5 minutes. Straddle baking pan over 2 burners, then add reserved liquid from saucepan and deglaze baking pan by boiling over moderate heat, scraping up brown bits, until reduced slightly. Season pan juices with salt and pepper and pour over hens.
ROASTED CORNISH HEN WITH BALSAMIC GLAZE
Steps:
- Preheat the oven to 425° F. Remove all visible fat and the neck and giblets from the Cornish hens. Rinse the hens under cold water and pat them dry inside and out with paper towels. Season the birds generously with salt and pepper, inside and out. Place one rosemary sprig, 2 sage leaves, and 1 bay leaf in the body cavity of each bird.
- Heat the oil in a heavy, flameproof roasting pan or very large ovenproof skillet over medium heat. Add the scallions, carrots, celery, porcini, and the remaining rosemary and sage leaves and cook, stirring, until the scallions are wilted, about 4 minutes. Smooth the vegetables into an even layer and nestle the prepared birds, breast side up, over them. Roast, basting frequently with enough of the chicken stock to keep the vegetables well moistened, until the vegetables and hens are golden brown-about 45 minutes.
- Carefully tilt the pan and spoon off enough of the roasting juices to measure 1 cup, not including fat. Stir the balsamic vinegar and honey into the measured juices until the honey is dissolved. Return the birds to oven and roast, basting occasionally with the honey mixture, until the birds are a rich mahogany color and the leg joint moves easily when you wiggle it, about 15 minutes.
- Remove the birds from the oven, transfer them to a platter or plates, and cover with a tent of aluminum foil to keep them warm. Strain the pan juices through a sieve into a small saucepan, pressing as much of the liquid from the vegetables as possible. Skim the fat from the surface of the sauce, and bring the sauce to a simmer while carving the birds. With a pair of kitchen shears, cut along both sides of the backbones to remove them. Cut the birds in half through the center breastbone. Cut each half into leg and breast portions. Arrange the pieces on a platter or plates, and spoon some of the roasting juices over them. Pass the remaining sauce separately.

- Make the hens: About 2 hours before serving, preheat the oven to 400 degrees. Cover the bottom of a large shallow baking pan with the onion rounds. Tie together the legs of each hen with cotton string. Arrange the hens, breast side up, on top of the onion rounds, leaving some space around each bird so the skin will crisp. Season with salt and pepper.
- Make the glaze: Mix all the glaze ingredients (except salt and pepper) together in a small bowl.Spoon about 2 teaspoons of the mixture over each hen.
- Place the pan of hens in the preheated oven and reduce the heat to 325 degrees. Roast the hens for 30 minutes, basting with their pan juices once or twice. Then raise the heat back to 400 degrees, baste each hen with about 2 tablespoons of sauce, and continue roasting and basting with pan juices for 20 more minutes, or unril the thickest part of the breast reads 160 degrees on an instant-read thermometer. At this point spoon a bit more sauce over the hens and run them under the broiler briefly, so they turn a deep, rich brown. Watch them carefully so they don't burn.
- Remove the hens from the pan to a platter and let them rest in a warm placefor 10 to 15 minutes. Set the hens' roasting pan on two burners and remove the onions from the pan. Add any remaining basting sauce/glaze to the pan and raise the heat to medium-high. Using a wooden spatula, scrape any brown bits sticking to the pan and stir as you boil the pan sauce for 3 minutes, or until it's rich tasting and almost syrupy. Taste and adjust for seasoning.
- To serve the hens, place them on a warm platter, scrape the reduced pan juices over them, and scatter with the optional pine nuts. Serve hot.
