I found this on the net a couple years ago. It was fast, easy and good. The onion and pepper wasn't even noticed by my step-son.

Steps:
- Wash and cut potatoes (you can peel or leave skins on).
- Place potatoes, ham, corn, pepper, and onion in a crock pot.
- Whisk together soup, milk and flour and pour into crock pot, mix together and cook on low for 7-9 hours.
- It took me 9 hours in my 5 quart.

- 1. Combine potatoes, ham, corn, green pepper and onion in a 3 1/2 to 4 quart crockpot; mix well.
- 2. In a small bowl, combine soup, milk flour, and black pepper; beat with wire whisk until smooth. Pour soup mixture over potato mixture and stir gently to mix. Top with shredded cheese.
- 3. Cover and cook on low setting for about 8 to 10 hours or until potatoes are tender.

Steps:
- Peel potatoes, I usually use about 6 for a 2 quart baking dish.
- Slice the ham.
- Make Basic White Sauce:Melt butter or margarine.Add flour and mix.Add chopped onions.Add milk and stir until mixture thickens.
- Add cheese to white sauce and stir until melted.
- In the meantime, slice potatoes.
- Place one layer of potatoes in a 2 quart baking dish.
- Top with ham slices.
- Add another layer of potatoes, another layer of ham slices and so on.
- Pour the cheese sauce over all.
- Cover and bake at 350 degrees Fahrenheit for one hour.
- Remove the cover and bake another 1/2 hour until cheese bubbles and top browns.

- Layer half the potatoes, half the ham, and half the onion in an 2-quart baking dish; repeat the layers.
- Heat milk, peas, flour, butter, salt, black pepper, garlic powder, and onion powder in a saucepan over medium heat, stirring constantly, until thickened, 7 to 10 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
- Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper.
