HOW TO COOK A SPIRAL HAM AND A GLAZE RECIPE
You could add in a splash of bourbon to this glaze or a few tablespoons of adobo sauce (from a can of chipotles), too. I use the same amount of glaze regardless of the size of my ham. Anything over 12 pounds, however, and I'd increase the amounts by at least 50%; you can always serve extra glaze on the side (just warm it slightly in the microwave just before serving).

- Let your wrapped ham sit on the counter for about an hour.
- Preheat the oven to 275F. Line two pieces of foil in different directions on top of a large baking sheet. Remove all the packaging from the ham and discard (keep the glaze if you're using that in place of the one posted here, otherwise you can discard it). Place the ham on top of the foil.
- Mix together all the ham glaze ingredients. Spread the glaze all over the top and sides of the ham and between each slice (you can use a brush but I find that using my hands is easiest). Pull up the sides of the foil and wrap the ham gently (not loose but not too tight, either), using additional foil if necessary.
- Place the ham in the oven and bake it for approximately 18 minutes per pound, opening the foil to baste with the juices a couple of times during cooking.
- Remove from the oven and baste once more with the juices (you can serve extra at the table if desired).

INSTANT POT HOLIDAY HONEY HAM
Whether it's the holidays or not, this honey ham is done so easily and perfectly, you can do it when you sleepwalk into the kitchen for a midnight snack.

Steps:
- Using a great knife, carve the ham into desired-sized slices and set aside
- Make the sauce by mixing the honey, pineapple, brown sugar and ginger ale together in a mixing bowl
- Using stackable pans, pour in a little sauce on the bottom of each pan, layer with the sliced ham and evenly distribute the sauce/pineapples into each pan (If you don't have these pans and wish to use aluminum foil instead, see the "Jeffrey Sez" section of the recipe)
- Place the trivet in the Instant Pot with 1 - 1.5 cups of water. Rest the stacstackable pansable pans on top of the trivet
- Hit "Manual" or "Pressure Cook" High Pressure for 3 minutes per pound (I used 3.5 lbs so I cooked for 10 minutes). Quick release when done
- Using the handle from the stackable pans' caddy, carefully remove from the Instant Pot, uncover the pans and transfer the ham, pineapple and desired sauce to a casserole dish or serving bowl
- Enjoy!

PERFECT GLAZED HAM

- Dry a bone-in, fully cooked half ham (do not use a country ham) and bring to room temperature. Preheat the oven to 375 degrees F. Trim the ham skin, leaving the fat intact. Score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Put the ham flat-side down on a rack in a roasting pan; add 1 cup water. Bake on the lowest oven rack, 40 minutes, adding more water if the pan gets dry. Meanwhile, make the glaze: Whisk 1 cup jam or marmalade with 3/4 cup brown sugar, 1 cup dijon mustard, 2 tablespoons cider vinegar and 2 teaspoons Worcestershire sauce. Brush the ham with half of the glaze; cover loosely with foil and bake 45 more minutes. Brush with the remaining glaze and bake, uncovered, until the glaze is browned, 40 to 50 more minutes. Let rest 15 minutes before carving.
- Don't toss your ham bone! Add it to simmering soups, beans or braised greens for extra flavor.
- Give your ham a great crunch: Sprinkle one of the below mixes onto the glaze before the last 40 to 50 minutes of cooking.
- Spring Herb Mix 1 cup panko (Japanese breadcrumbs), 3 tablespoons each chopped parsley and chives, and the grated zest of 1 lemon.
- Cornmeal-Thyme Crush 1 cup cornbread stuffing mix; toss with 2 tablespoons chopped thyme, 1 1/2 teaspoons ground coriander and 1/2 cup cornmeal.
- Spicy Sourdough Grind 3 cups cubed sourdough bread in a food processor; toss with 1 tablespoon chili powder and 1 bunch chopped scallions.

- Preheat the oven to 350°F.
- Remove the ham from the packaging and place it into a large baking dish. Pour the water in the dish with the ham.
- Cover the dish with foil or a lid. Allow the ham to cook covered for about an hour, about 15 minutes per pound.
- Now, you can stop there, this will heat the ham through, and since it's already cooked, you can eat it. However, it's much better to add a glaze.
- Make the glaze by mixing together the butter, brown sugar, orange zest, cinnamon, ground cloves, allspice, and the pinch of salt.
- Pull the ham out of the oven and drain out the water. Brush the top and sides of the ham with one third of the glaze mixture.
- Put the ham back into the oven, uncovered, for 10 minutes. Remove it from the oven and add another third of the glaze. Put it back into the oven for 10 more minutes. Remove it from the oven and add the final third of the glaze. Bake for a final 10 minutes uncovered.
- Remove the ham from the oven, and let it rest, uncovered, for 15 minutes before slicing and serving.

RED CURRANT HAM GLAZE
My replication of the red currant glaze that use to come with Costco's Kirkland Master Carve Ham. This glaze is enough for half ham with a little leftover to use at the table.

- In a small saucepan, add all the ingredients. Stir to combine.
- Put the pan over medium heat. Cook until warm. Set aside.
- When the ham is about 20 minutes from being done or at 120 degrees. Remove the ham from the oven and apply the glaze with a pastry brush.
- Return the ham to the oven and finish cooking. Internal temperature needs to be 140 degrees.
- Save any leftover glaze to be used at the table.
