- Cocina las costillas con 2 cdas. del aderezo en una olla de hierro tipo Dutch Oven o en una sartén grande y profunda a fuego medio-alto durante 4 min. de cada lado o hasta que estén doradas de ambos lados. Retira las costillas de la olla; tápalas para mantenerlas calientes. Agrega el aderezo restante y las zanahorias a la olla. Cocínalas y revuelve a fuego medio-alto de 5 a 7 min. o hasta que estén ligeramente doradas; retíralas de la olla.
- Vuelve a colocar las costillas en la olla; agrega los chiles. Cocínalos y revuelve a fuego medio 2 min. Combina el caldo, la salsa para asar, el jugo de naranja, la miel y la harina y revuélvelos con un batidor de varillas hasta que estén bien mezclados. Vierte la mezcla sobre las costillas; hazlas hervir. Pon la tapa. Mantén un hervor suave durante 1 1/2 hora. Agrega las zanahorias. Cocínalas 30 min. o hasta que las costillas y las zanahorias estén tiernas.
- Retira las costillas, las zanahorias y los chiles de la salsa; deshazte de los chiles. Quítale el exceso de grasa a la salsa. Incorpora la salsa de soya y la cáscara de naranja a la salsa. Sirve las costillas, las zanahorias y la salsa sobre el arroz.
