Zucchini rolls are fun to make and fun to eat! With just 15 minutes prep time, this EASY zucchini lasagna roll ups recipe is perfect for a light, low carb summer meal.

3 medium Zucchini ((~1 1/2 lb))
2 tbsp Olive oil
1/4 tsp Sea salt
1/8 tsp Black pepper
6 oz Whole milk ricotta cheese
1/4 cup Grated Parmesan cheese
1 large Egg
1/2 tsp Italian seasoning
1 cup Mozzarella cheese ((shredded))
10 oz Tomato sauce ((no sugar added))
1/2 tbsp Olive oil
1/2 tbsp Balsamic vinegar
1/2 tsp Italian seasoning
1 clove Garlic ((finely minced))
Sea salt ((optional, to taste))
1/2 cup Mozzarella cheese ((shredded))

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C). Line a large baking sheet with parchment paper.
  • Cut off the ends of the zucchini. Use a mandolin to slice the zucchini lengthwise into thin sheets, 1/4 inch (6.35 mm) thick.
  • Arrange the zucchini slices in a single layer on the lined baking sheet. Brush both sides with olive oil, and sprinkle with salt and pepper.
  • Roast zucchini slices in the oven for 15-20 minutes, until soft and mostly dry.
  • Meanwhile, in a small bowl, stir together tomato sauce, olive oil, balsamic vinegar, Italian seasoning, and minced garlic. Adjust salt to taste if needed. Spread 3/4 cup (177 ml) of the sauce at the bottom of an 8x8 square glass casserole dish (this one is the perfect size). Reserve the remaining sauce for later. Set aside.
  • Meanwhile, in a medium bowl, stir together the ricotta, Parmesan, egg, and Italian seasoning.
  • Arrange the zucchini slices in a single layer on a large cutting board. Pat dry with paper towels to soak up any extra water or oil.
  • Spread a tablespoon of ricotta mixture over each zucchini slice. Sprinkle with a tablespoon of mozzarella. Roll up tightly and place sideways into the baking dish. Repeat with all the zucchini slices.
  • Top each zucchini roll with 1/2 tablespoon (7 ml) of the remaining sauce, then 1/2 tablespoon (7.05 g) of mozzarella.
  • Bake for about 10 minutes, until the cheese on top is melted. Garnish with fresh basil.

3 large zucchini, trimmed (about 4 pounds), sliced lengthwise into 24 ⅛-inch-thick strips
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
3/4 pound ground Italian sausage, casing removed
1 cup part skim ricotta cheese
1/3 cup freshly grated Parmesan
1 large egg
1/4 cup chopped fresh basil leaves
2 cloves garlic, minced
1 1/2 cups marinara sauce, divided
2 cups shredded mozzarella, divided

Steps:

  • Line a baking sheet with paper towels. Lay zucchini slices flat in a single layer onto the prepared baking sheet. Sprinkle each side with 1/4 teaspoon salt; let stand 15 minutes. Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat. In a medium bowl, combine sausage, ricotta, Parmesan, egg, basil and garlic; season with salt and pepper, to taste. Preheat oven to 400 degrees F. Spread 1 cup marinara sauce sauce onto the bottom of a 1o-inch oven-proof skillet; set aside. Spread 1 tablespoon ricotta mixture evenly along each zucchini slice; sprinkle with 1 tablespoon mozzarella cheese. Roll up and place in the prepared skillet; repeat with remaining zucchini slices and filling. Top with remaining 1/2 cup marinara sauce and sprinkle with remaining 1 cup mozzarella. Place into oven and bake for 25-30 minutes, or until lasagna rolls are heated through and the cheese is beginning to brown. Serve immediately.

1 tablespoon tomato paste
Shredded Parmesan cheese, optional

Steps:

  • Preheat oven to 425°. In a small bowl, combine ricotta, 1/2 teaspoon Italian seasoning, salt and pepper. Slice zucchini lengthwise into twelve 1/8-in.-thick slices. Top each slice with 1 rounded tablespoon cheese mixture. Roll up and secure with toothpicks; place seam side down in an ungreased 8-in. baking dish., Combine tomatoes, tomato sauce, tomato paste and remaining 1 teaspoon Italian seasoning; pour over rolls. Cover and bake until bubbly, 20-25 minutes. Remove toothpicks before serving. If desired, sprinkle with Parmesan cheese.

2 c water
2 Tbsp butter
3 1/4 c bread flour
3 Tbsp dry milk powder
1 tsp salt
2 tsp rapid yeast
FILING
8 oz cottage cheese
2 Tbsp fresh dill
1 egg, beaten
1/2 c finely chopped onion
1/3 c parmesan cheese
pepper & salt
1 butter

Steps:

  • 1. In the 2 cups of water & butter and place this in the microwave for 2 minutes
  • 2. In Bread machine add the water mixture, then flour milk, salt, yeast in that order. Put bread machine on dough cycle.
  • 3. In the meantime saute onions in a tbsp of butter till browned and tender. Set aside to cool.
  • 4. Combine the filing ingredients and place in refrigerator.
  • 5. When dough is done, spray your counter top with non stick spray and roll out to 1/2 inch thick to an oblong shape. Put the filing down the middle without touching the sides. From one end roll up. Secure edges. Cut into 12 rolls. Place in a sprayed muffin pan and let rise to double.
  • 6. Heat oven to 400F and bake for 20 minutes. When removed from oven brush melted butter on top of each one. Serve warm.

4 zucchini, chopped

2 cloves garlic, crushed
½ teaspoon salt

Steps:

  • Heat the olive oil in a skillet over medium heat; cook and stir the onion until translucent, about 5 minutes. Stir in the sugar, then add the chopped zucchini, dill, and rice. Cook and stir until the zucchini is softened, about 5 minutes. Pour in the water, sprinkle with salt and pepper, and bring the mixture to a boil. Reduce the heat and simmer the mixture until the rice is cooked, about 20 minutes. Turn off the heat, and let the mixture cool to lukewarm.
  • Make a sauce by mixing the yogurt, garlic, and salt in a bowl. Serve over the lukewarm zucchini and rice.

2 cups sliced zucchini
1 cup chopped onion
1 -2 tablespoon olive oil
2 cups cottage cheese
3 eggs, beaten
1 cup cooked rice
1 pinch salt
1 pinch pepper
1/2 cup soft breadcrumbs
1/2 cup parmesan cheese
1/4 cup melted butter

Steps:

  • Saute the zucchini and onions in the olive oil, then set aside.
  • Mix together the cottage cheese, eggs, rice, salt and pepper.
  • Layer the zucchini/onion mixture and the cottage cheese mixture in a greased casserole dish.
  • Mix the bread crumbs and parmesan together, then sprinkle over the casserole.
  • Drizzle the melted butter over all.
  • Bake for 40 minutes at 350 degrees F.

I have made cottage rolls often but couldnt find a recipe here on Zaar so I thought I would post my old standby. It is like a corned beef flavour wise but it is a ham made from pork shoulder. It is much cheaper than pork roast, ham or corned beef usually.

1 (3 lb) cottage ham (Cottage Roll)
1 medium onion, chopped
5 carrots, peeled and sliced in 2 inch lengths
5 medium potatoes, peeled and cut in quarters
2 cups largely chopped cabbage (optional)

Steps:

  • Place cottage roll in roasting pan or crockpot.
  • Surround it with potatoes, carrots, onion and cabbage if you like.
  • You can add as many as will fit or what you need for supper or use any size cottage roll that will fit.
  • Sprinkle with pepper and cover roast 3/4 with water.
  • cover and Bake at 300 degrees for 3 hours or in crockpot on high 6 hours or low 8-10 hours.
  • Cottage roll should fall apart like a pot roast.
  • Serve with mustard (dijon is my favorite).
  • The leftover stock can be spiced up as a gravy or makes a great bean or pea soup base.
