COUNTRY FRUIT COBBLER
Dessert doesn't get any better than a favorite fruit combo transformed into an easy, warm-from-the-oven cobbler!

Steps:
- Heat oven to 350°F. In 1 1/2-quart casserole, melt butter in oven.
- Meanwhile, in medium bowl, mix flour, sugar, baking powder, salt and milk. Pour batter into casserole onto butter without mixing with butter. Spread fruit over batter.
- Bake about 1 hour or until top is golden brown. Serve warm.

- Preheat oven to 375°F. Mix 1 cup of the sugar, tapioca and cinnamon in large saucepan. Gradually add water. Stir in walnuts. Bring to full boil on medium heat, stirring constantly. Remove from heat; stir in apples. Pour into 8-inch square baking dish.
- Mix remaining 1/3 cup sugar, flour, baking powder and salt in medium bowl; stir in cheese. Mix butter and milk. Add to flour mixture; stir just until moistened. Spoon over apple mixture.
- Bake 35 to 40 minutes or until golden brown. Cool. Top each serving with 1/4 cup of the ice cream.

COUNTRY FRESH APPLE COBBLER
This recipe is so easy to throw together and reminds me of a dessert my grandmother would make when all the family came to visit. Created for RSC#10.

- Cobbler:.
- Preheat oven to 350°F.
- Place apple slices in a bowl and coat with juice from one lemon. Set aside.
- Place pecan pieces in a pie tin or similar oven-proof container, and place in the oven for about 7 minutes, or until toasted. (Watch carefully to prevent burning.) Let cool.
- Meanwhile place butter in a large casserole or 11x13 baking pan. Place casserole in oven until butter melts, and remove.
- Spread apple slices in single layer across the melted butter in the bottom of the casserole. Sprinkle the pecan pieces, lemon zest, cinnamon, and brown sugar over the apple slices and drizzle the syrup over all.
- In a medium bowl, mix together the flour, baking powder (if not using self-rising flour), sugar, and milk. Slowly pour the mixture over the apple slices and lightly spread the batter to cover the apples.
- Place in the oven and bake for approximately 30 - 40 minutes until brown on the top. Remove to cool.
- Topping:.
- Whip cream until soft peaks form. Add sugar and continue to whip until peaks are stiff (but not overly stiff like butter).
- Serve cobbler in bowls topped with a few tablespoons whipped cream.

I have found that with age the desire to do everything from scratch because it's "better" has flown away. These days I generally look for things that are going to get me out of the kitchen...well..at least in the summer. This is a good way to get out quick. Prep time is opening the packages.

- Preheat oven to 400 degrees F.
- In nonstick 12-inch skillet, combine frozen vegetables, undiluted soup, milk, and pepper; cover and cook over medium-high heat until vegetables are thawed, stirring once. Stir in chicken.
- Transfer chicken mixture to shallow 3 1/2- to 4-quart casserole. Top with biscuit quarters, leaving space between pieces.
- Bake 20 to 25 minutes or until biscuits are browned and mixture is heated through.
