COUNTRY CLUB EGGS- A GREAT MAKE AHEAD BREAKFAST CASSEROLE
I've tried alot of breakfast casserole recipe but this is the one that my family loves and I always come back to. We always have this on Christmas morning and it's also good for a make ahead dinner on a busy week night. I usually serve this with fruit of some kind and either a sweet roll or coffee cake.

Steps:
- Brown sausage in skillet, stirring until browned and crumbled. Then drain.
- Combine all ingredients in a large bowl and mix well.
- Pour mixture into a greased 9x13 casserole dish.
- Regfrigerate at least 8 hours or overnight.
- Preheat oven to 350 degrees.
- Bake for 45 minutes or until center tests done.
COUNTRY HAM BREAKFAST CASSEROLE

Steps:
- Butter a large baking dish and evenly spread out the torn bread to cover the bottom of the dish.
- In a large bowl, beat to combine the heavy cream, cheese, ham, milk, scallions, salt, pepper and eggs. Pour the egg mixture over the bread and top with the paprika. Cover and refrigerate for at least 1 hour and up to overnight.
- Remove the dish from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F.
- Uncover the dish and bake until puffed, golden and cooked through, about 45 minutes. Let cool 5 minutes, sprinkle with the chives and serve.
POTATO AND EGG CASSEROLE
This is a casserole that was used for Lenten meals by my in-laws. It is Hungarian in origin and everywhere I take it, I get requests for the recipe.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
- In a 9x13 inch casserole dish layer potatoes and eggs, sprinkling each layer of eggs with seasoning salt, ending with potatoes.
- In a small saucepan over low heat, melt margarine with sour cream. Pour over potatoes and sprinkle lightly with seasoning salt.
- Bake in preheated oven for 30 minutes.

- Preheat oven to 325°; coat a 13 x 9 inch baking dish with nonstick cooking spray.
- In a 10-inch skillet over high heat, cook the sausage, breaking it into smaller pieces, until it loses its pink color.
- Drain off the fat; return to skillet and add in onion; cook, stirring, until it is softened, 4-5 minutes.
- Remove the pan from the heat and transfer the mixture to a large mixing bowl; add in the hash browns.

- Cook ham in oil until it sizzles. Add pepper, onion and mushrooms. Season to taste. Saute until tender.
- Beat eggs and milk in a medium bowl.
- Spray 13 X 9" casserole with Pam. Line with 1/3 bread; sprinkle with 1/2 ham mixture and 1/2 cup cheese. Repeat. Top with bread.
- Pour egg mixture over layers and top with cheese.
- Refrigerate 1-24 hours.
- Bake uncovered at 350 for 1 hour or until set.
COUNTRY-STYLE SCRAMBLED EGGS
Steps:
- In a 9-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Cook and stir potatoes in drippings over medium heat for 12 minutes or until tender. Add onion and green pepper. Cook and stir for 3-4 minutes or until crisp-tender; drain. Stir in bacon. , In a large bowl, whisk the eggs, milk, salt and pepper; add to skillet. Cook and stir until eggs are completely set. Sprinkle with cheese; stir it in or let stand until melted.

- Preheat oven to 325°F.
- In a skillet, cook crumbled sausage in large skillet over medium heat until brown, stirring occasionally. Remove sausage and drain on paper towel.
- Cut bread into 1-inch cubes. Place in 9 x 13 casserole dish. Sprinkle cheese and then sausage evenly on top.
- In a blender, mix eggs, milk and Gravy Mix. (You could also use the Sausage Country Gravy mix instead) Pour mixture over bread, cheese and sausage.
- Bake covered lightly with foil for 40 minutes. Remove foil and bake another 5 or 10 minutes or until knife inserted in the center comes out clean.
- To make the night befoe: You can cover the dish and refrigerate overnight. In the morning, bake 50 minutes then 10.
- Remove from oven and let stand 10 minutes before serving.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine ground beef, onion, and bell pepper in a large skillet over medium heat. Cook and stir until vegetables are tender and beef is browned and cooked through, 10 to 15 minutes. Season mixture with salt and pepper while cooking.
