1/3 cup vegetable oil
3 cups sugar
3 eggs, beaten
1 cup crushed pineapple, with juice
2 cups mashed bananas
1 cup chopped pecans
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 1/2 teaspoons vanilla extract
1/4 teaspoon nutmeg (grated preferable)

Steps:

  • Mix vegetable oil,sugar, and eggs. Add pineapple, banana, and pecans.
  • In a separate bowl, mix flour, baking soda, and salt.
  • Add to sugar mixture. Add cinnamon, vanilla, ans cherries.
  • Grate nutmeg over mixture.
  • Pour into a tube pan and bake at 525 to 350 degrees for 1 1/2 hours.

2 cups butter, softened (4 sticks)
4 cups sugar
6 large eggs
4 cups all-purpose flour
1 cup whole milk
1 teaspoon pure vanilla extract
1 teaspoon almond extract

Steps:

  • Freheat the oven to 300 degrees; grease a 10-inch tube pan with butter, dust the bottom and sides with flour, and set aside.
  • In a large mixing bowl, cream the butter and sugar with an electric mixer and add the eggs one at a time, beating after each addition.
  • Alternately add the flour and milk, stirring till the batter is smooth.
  • Add the two extracts and stir till well blended.
  • Scrape the batter into the prepared pan and bake till a cake tester or knife blade inserted in the center comes out clean, about 1 1/2 hours. (Do not bake till the cake is dry.).
  • Cool the cake in the pan on a rack for 5 minutes, then turn it out on the rack to cool completely.

This a really good down-home style, back to basics pound cake that my whole family enjoys! This recipe was handed down to me with the stipulation of placing the cake in a cold oven, and it turns out perfectly every time.

3 cups all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter, softened
½ cup shortening
2 ⅔ cups white sugar
5 eggs
1 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon extract

Steps:

  • Do not preheat the oven. Grease 10 inch tube pan and line bottom with wax paper or parchment paper.
  • Sift together the flour, baking powder and salt. Set aside.
  • In a large bowl, beat the butter, shortening, and sugar on low speed for 10 minutes. Add the eggs one at a time, blending well after each addition. Alternately add the flour mixture and milk, mixing well. Add the vanilla and lemon extracts.
  • Pour batter into the prepared pan. Set the oven temperature to 350 degrees F (175 degrees C. Bake for 1 hour and 20 minutes, or until a toothpick inserted into the middle of cake comes out clean. Allow cake to cool in the pan for 1 hour. Remove to a cake rack and cool for at least 3 hours.

1 egg yolk
2 teaspoons vanilla extract
3 cups cake flour

Steps:

  • Preheat oven to 325°F Grease and flour a 12-cup Bundt pan, tube pan or two 9-by-5-inch loaf pans.
  • Combine butter, cream cheese, sugar, eggs and egg yolk, and vanilla in large bowl; beat until smooth.
  • Add cake flour ½ cup at a time. Stir together until smooth.
  • Pour into pan. Bake 70 minutes or until a toothpick inserted in the center comes out clean. Serves 16.
