Weeknight? Cook and toss a pasta dish and have it on the table in less than 30 minutes.

1 cup uncooked rotini pasta (3 ounces)
1/2 pound new potatoes, cut into 1/2-inch wedges
1/2 cup broccoli florets
1/2 cup baby-cut carrots
1/4 cup snap pea pods
2 teaspoons butter or margarine
1 tablespoon chopped fresh parsley
1/2 teaspoon dried dill weed
1/4 teaspoon salt
1 ounce fully cooked ham, cut into thin strips

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in 3-quart saucepan, place steamer basket in 1/2 inch water (water should not touch bottom of basket). Place potatoes, broccoli and carrots in basket. Cover tightly and heat to boiling; reduce heat to medium-low. Steam 5 minutes. Add pea pods. Cover and steam about 2 minutes longer or until potatoes are tender.
  • In medium bowl, toss vegetables with butter, parsley, dill weed and salt until coated. Stir in ham and pasta; toss.

2 ounces fully cooked lower-fat, lower-sodium ham, cut into thin strips

Steps:

  • 1. Cook and drain pasta as directed on package. While pasta is cooking, place steamer basket in 1/2 inch water in 3-quart saucepan (water should not touch bottom of saucepan). Place potatoes, broccoli and carrots in basket. Cover tightly and heat to boiling reduce heat to medium-low. Steam 5 minutes. Add pea pods. Cover and steam about 2 minutes longer or until potatoes are tender. 2. Place vegetables in medium bowl. Add margarine, parsley, dill weed and salt toss until coated. Stir in ham and pasta toss. I found this recipe on a can of tomatoes. It tastes great right after it is made or even the next day. The addition of bacon adds a nice smokey flavor to this pasta salad. You could easily add some chopped cooked chicken and serve this on a bed of lettuce for a complete lunch.

4 cups shell pasta, cooked
2 (14 1/2 ounce) cans diced tomatoes with garlic and olive oil, well drained
4 slices bacon, cooked and crumbled
1/4 cup green onion, sliced
1/4 cup red bell pepper, diced
1/4 cup yellow bell pepper, diced
1/2 cup mozzarella cheese, diced
1/3 cup fresh basil, chopped
1/2 cup balsamic vinaigrette
salt and pepper

Steps:

  • In a large bowl combine pasta, tomatoes, bacon, onions, peppers, cheese, and basil. Drizzle with the dressing and toss until thoroughly mixed. Season with salt and pepper to taste.

1 lb. medium shell macaroni, uncooked
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 env. GOOD SEASONS Italian Dressing Mix
1/4 cup olive oil, divided
1 bag (6 oz.) baby spinach leaves
2 cups cherry tomatoes, halved
2 medium yellow or orange peppers, coarsely chopped
1/2 cup KRAFT 100% Grated Three Cheese Blend

Steps:

  • Cook pasta as directed on package.
  • Meanwhile, sprinkle chicken with dressing mix; toss to coat. Heat 1 Tbsp. of the oil in large nonstick skillet. Add chicken; cook and stir 5 min. or until cooked through. Remove from heat; set aside until ready to use.
  • Drain pasta; place in large bowl. Add chicken and all remaining ingredients; mix lightly.

16 ounces rotini pasta
4 boneless skinless chicken breast halves, cut into bite size pieces
4 tablespoons olive oil
3 garlic cloves, minced
1 1/4 teaspoons salt
1 1/4 teaspoons garlic powder
1 1/4 teaspoons dried basil
1 1/4 teaspoons dried oregano
1 cup sun-dried tomato, chopped
1/4 cup parmesan cheese, grated (optional)

Steps:

  • Cook and drain pasta as directed.
  • While pasta is cooking, in a large pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked.
  • Add sun-dried tomatoes and cook for two minutes.
  • Remove from heat and toss with pasta.
  • Serve with grated Parmesan cheese if desired.

I came up with this pasta dish when cleaning out my pantry. It's savory, delightful, and doesn't require a lot of savvy and is quick to get on the table.

7 ounces fusilli pasta
1 teaspoon olive oil
1 small shallot, minced
2 ounces oil-cured black olives, drained
2 ounces sun dried tomatoes in oil, drained and chopped
1 ounce capers in brine, drained
1 (3 ounce) can tuna in water, drained
2 tablespoons grated Pecorino Romano cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, heat olive oil in a skillet and saute shallot until soft and translucent, 3 to 5 minutes. Add olives, chopped tomatoes, and capers. Mix well and remove from heat.
  • Drain pasta, add to the skillet, and toss to coat. Mix in tuna in chunks. Top with Romano cheese and serve.
