ONE SKILLET COWBOY RICE
One Skillet Cowboy Rice is a quick and hearty meal for any busy night of the week that includes beef, bacon and Zatarain's Black Beans and Rice Mix.

Steps:
- Heat skillet over medium heat. Add the chopped bacon and stir occasionally until bacon is crisp. Using a slotted spoon, remove the cooked bacon to a paper towel lined plate. Set cooked bacon aside.
- Add the chopped onion to the bacon grease in the skillet. Cook for a few minutes until the onion is starting to soften.
- Add the ground sirloin and cook until no longer pink, breaking up the beef with a wooden spoon or spatula.
- Add the corn, Zatarain's Black Beans and Rice Mix and the water to the skillet with the cooked onion and ground sirloin.
- Bring the water to a boil. Reduce heat so the skillet contents are gently simmering. Put the lid on the skillet and cook for 25 minutes, or until rice is tender.
- While the rice mixture is cooking, turn the oven to the broil setting.
- When rice is cooked, remove the lid from the skillet and top the cowboy rice skillet with the shredded cheese.
- Put the skillet under the broiler for a couple of minutes to melt the cheese.
- Top the skillet with the cooked bacon, sour cream and pickled jalapeños and serve immediately.
COWBOY BAKED BEANS RECIPE (OVEN OR SLOW COOKER)
Cowboy Baked Beans (aka Calico Beans) are loaded with ground beef and applewood smoked bacon. A great party food recipe for large groups.

- Decide if you are going to make them in a slow cooker or bake in the oven. You can use a deep casserole dish or large pot like a dutch oven. I like a large heavy cast iron pot so I can cook in it and finish baking all in one. Slow cookers are great for parties to keep them warm for several hours.
- Chop the sliced uncooked bacon into small pieces, over medium heat, brown the bacon in a heavy cast-iron skillet or a large cast iron dutch oven on the stove top using a wooden spoon. Tip, you can cut the bacon into small pieces with clean kitchen scissors right into the pot-I find this faster!
- Remove the crispy cooked bacon to a small bowl with a slotted spoon. Don't remove the bacon drippings from the pan. Next add the chopped onion and brown for 5-6 minutes until translucent, add the minced garlic, stir for one minute.
- Next, brown the ground beef, cook for 6-8 minutes. Next, add the bacon, back in with the cooked ground beef, onion, and garlic.
- Next, add 3 cans of baked beans (don't drain), 2 cans of kidney beans (drain), 1 can of cannellini beans (drain), and 2 cans of black beans (drain).
- Add the remaining ingredients; brown sugar, cider vinegar, ketchup, and yellow mustard. Stir all the ingredients well to combine.
- Place into the slow cooker or large dutch oven or large deep casserole dish. The baked beans usually doesn't all fit in one standard 9 x 13, you need a deeper dish.
- Cook in slow cooker crockpot on low for 2 hours OR bake 350 degrees for 1 1/2 hours in a large covered dish. Serve hot.

- In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. SKILLET COWBOY RICE CASSEROLE
Steps:
- In a large skillet cook the onion and peppers in a few drizzles of olive oil. Season lightly with salt and black pepper.
- Cook for 3 minutes over medium high until beginning to brown then add the garlic. Cook for 1 minute or until fragrant.
- Add th ground beef and chorizo. Continue to cook until no pink remains in the meats. Drain any excess fat from the pan.
- Increase the temperature to high. Add the beef broth, rice, pintos, Rotel tomatoes, corn, Sazon, chili powder, cumin, garlic salt and lemon pepper. Bring to a boil stirring until combined.
- Cover and lower the heat to low. Simmer for 20-25 minutes until the rice is tender and most of the liquid is absorbed.
- Uncover and mix in the cilantro. Top with cheese. Remove from the heat and cover allowing the cheese to melt or melt under the broiler in the oven.
- Serve immediately.

- Cook your bacon over medium heat on your stove until crisp, drain and crumble
- In a different skillet, brown your beef and sausage over medium heat
- Toss your onion in with your meat mixture and cook until the onions are tender, drain
- Put your meat and onion mixture and your bacon in your crock pot
- Pour your undrained pork and beans, undrained pinto or chili beans and the rest of your ingredients to your crock pot
- Give it all a gentle stir
- Cover and cook on high for an hour. After an hour reduce heat to low and cook, covered, for an additional 2-4 hours

- Place the potatoes in a bowl; toss with the salt and pepper until the potatoes are well coated. Heat the oil in a heavy oven-safe skillet and drop in the potatoes carefully, a few at a time.
- Flip potatoes several times with tongs during cooking to ensure even browning.
- About halfway through cooking, add the onion and mix while cooking. When they're done, the potatoes should be crispy. Sprinkle on the rosemary leaves. Spoon out unwanted oil, if you wish.
- While potatoes are cooking, in a nonstick pan, saute the Italian sausage over medium-high heat for a few minutes, or until it is no longer pink.
- Add the sausage to the potatoes and onion. Mix it very well and break eggs (sunny side up) into the pan; add few dashes of salt to season eggs. Try to go in between the potatoes, allowing the egg whites to go all around and under potatoes and sausage; try not to break egg yolks. Once the egg whites are getting almost cooked, turn on the broiler to high, and set a baking rack in the middle of the oven.
- Place the pan under the broiler and let it cook for a minute or two, just so the egg whites are completely cooked; the yolks may be still a little runny/soft. If you do not like runny/soft eggs just let them cook under broiler longer. Sprinkle chopped chives or scallions on at the end and dig in!

- In a large skillet cook your bacon till crispy. Drain on paper towel and crumble.
- In the same skillet cook sausage until brown and crumbly. Drain on paper towel. Reserve drippings.
- In the drippings cook onion, celery, and garlic until translucent.
- In your slow cooker add two cans of Bush's baked beans.
- Add the cooked veggies.
- Add drained and crumbled bacon and sausage.
- Add ketchup, brown sugar, garlic salt, mustard, pepper, and worcestershire sauce.
- Mix well.

EASY COWBOY BEANS
My family eats this as a main dish, usually with cornbread, but it's a wonderful side dish for picnics, potlucks, and camping. We like it sweet, so we add another 1/4 cup of brown sugar, but you could also spice it up by adding jalapenos or another kind of chilies. It's even good cold! It freezes very well, too.

- Cook bacon until crispy. Drain and crumble. Put in large pot.
- Brown ground beef and onions together. Drain. Add to pot. (Bacon can be cooked with the ground beef and onions if cut into chunks. I use kitchen shears to just cut through all the slices--into about 1-1/2" chunks.).
- Add the rest of the ingredients to the pot. DO NOT drain the beans! Stir everything together.
- Bring to a boil, then turn down heat and simmer for about an hour. If you're going to let it simmer, don't add the lima beans right away, as they tend to fall apart.
- These are generally better the next day, but are might fine the same day!

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! - Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
