LAURA BUSH'S COWBOY COOKIES
A sweet treat fit for a president.

Steps:
- Heat oven to 350°F.
- Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
- In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.
- Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
- For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
- Bake in 350°F oven 17 to 20 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies to rack to cool.

These are yummy. If you can manage to get them to cook just the right way, they aren't crunchy, but soft and the tiniest bit chewy, and melt in your mouth!

- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats and chocolate chips. Drop by rounded teaspoonfuls onto the prepared baking sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing.

It's a great cookie, one of the kids' favorites. This doesn't call for nuts, but I sometimes add about 1/2 cup of chopped walnuts or pecans.

- Preheat the oven to 350 degrees F (175 degrees C). Sift together flour, baking powder, baking soda, and salt; set aside.
- In a medium bowl, cream margarine, oil, brown sugar, and white sugar until smooth. Beat in eggs one at a time. Gradually stir in the sifted ingredients until well blended. Mix in oats and butterscotch chips. Drop from a teaspoon onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Let set up on the cookie sheets for a few minutes before transferring to wire racks to cool completely.

BEST COOKIES EVER!!! My favorite childhood cookie! These cookies were my mother's favorite cookie to bake and later she would bake them for grandchildren and as gifts. They are crisp and tasty!

Steps:
- Mix softened butter and sugars together. Cream well and beat until fluffy.
- Add eggs and vanilla. Mix well.
- Mix in flour, rolled oats, chocolate chips, pecans and coconut.
- Drop onto a greased cookie sheet leaving one inch between cookies.
- Bake at 350 degrees for approximately 11 to 15 minutes. Bake until edges begin to brown. (Cookies are better not too brown.).
- Let cool one minute on cookie sheet and then place on paper towel to finish cooling.
- Enjoy!

- Sift together flour, soda, salt & baking soda in a large bowl. Beat together shortening & sugar till creamy; (electric mixer works great) blend in vanilla & eggs till fluffy. (time to put electric mixer away and get some arm muscle) Mix in dry ingredients slowly & blend well. Stir in oats, chocolate chips & nuts. Drop by spoon onto cookied sheet sprayed with pam. Bake in preheated oven 350 degrees for about 8 minutes, Allow to cool for 1 minute then transfer to a cooling rack. They will seem a little soft at first, but they will harden up, but not so hard their crunchy, just chewy and wont fall apart.
