CARBONARA WITH CRAB
Big lumps of crab are the secret to this twist on pasta carbonara. Crab, celery, lemon and sherry create a bright flavor that mixes with rich, creamy yolks, fatty pancetta and sharp cheese.

Steps:
- Gather your ingredients.
- Bring a pot of water to boil for pasta, 4 to 6 quarts.
- Place crab meat in bowl and run your fingers through it to check for connective tissue, sharp pieces and shell. Pull into long thin strands and small bite-size pieces.
- Chop the pancetta or guanciale into 1/8 to 1/4-inch dice.
- Peel and chop the shallot, finely chop the celery and pile with it. Peel the garlic cloves and chop or have a grater at hand. Stem the thyme and chop.
- Line a small bowl with a baggie if you wish to save the egg whites. Crack and separate the eggs, with yolks in medium glass mixing bowl. Whisk up eggs and whisk in cheeses, salt and pepper.
- Salt water for pasta and drop the pasta.
- Heat a large skillet over medium to medium-high heat with EVOO, 3 turns of the pan. Add pancetta or guanciale and render 2 to 3 minutes. Add shallots, celery, garlic, thyme, salt and pepper. Stir a minute or 2, then add sherry or white wine and crab. Toss to warm through and let sherry or wine absorb. Add juice of 1 lemon.
- Add 1 cup starchy boiling water to eggs to temper them. Drain pasta and add to crab. Toss with eggs and cheeses off heat for 1 full minute. Adjust salt and pepper, serve.
- Muddle orange at bottom of a rocks glass. Add remaining ingredients. Fill glass with ice and stir gently. Top with club soda if desired. Garnish with lemon twist.
CRAB BRUNCH CASSEROLE

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
- In large bowl, mix the eggs, milk, croutons, cheese, onion, and parsley. Stir in the crabmeat. Season with salt and pepper. Spoon into the prepared baking dish, and sprinkle with Parmesan cheese.
- Bake 1 hour in the preheated oven, or until a knife inserted into center of the casserole comes out clean. Serve immediately.

RHUBARB COBBLER

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch square baking dish.
- In a saucepan, mix sugar and cornstarch for filling. Stir in the rhubarb and water. Bring to a boil. Cook and stir for 1 minute. Transfer to the prepared baking dish. Dot with butter, and sprinkle with cinnamon.
- In a medium bowl, sift together flour, sugar, baking powder, and salt for topping. Cut in the butter until the mixture resembles coarse crumbs.
- In a small bowl, mix together milk and egg. Add all at once to dry ingredients, stirring just to moisten. Drop by teaspoonfuls on top of the rhubarb mixture. Sprinkle with sugar.
- Bake for 20 minutes in the preheated oven, until crisp and lightly browned.

HOT CRABMEAT COBBLER
(must try this!) I found this recipe hidden in my mother's recipes and will be making it for her. She loves, but rarely has, crabmeat. This sounded like the best, unique crabmeat meal I have seen! Hope you think so too!

Steps:
- Heat oven to 450°F.
- Melt butter on top of double broiler, add in onion and green pepper.
- Cook over boiling water until tender--approximately 10 minutes.
- Blend in the mustard, flour, msg, milk, and cheese.
- Stir constantly until cheese has melted and mixture has thickened.
- Add crabmeat, tomatoes, Worcestershire, and salt.
- Blend, combining thoroughly.
- Pour mixture into 2 quart casserole dish.
- In bowl, sift in flour, baking powder, salt, and cheese.
- Cut in the shortening until particles are fine.
- Add the milk.
- Mix only until flour has moistened.
- Drop by rounded teaspoons over hot crabmeat mix.
- Bake 20-25 minutes.

CHARLESTON CRAB CRACK
A traditional crab crack is one of my family's favorite things to make when we all get together. After the crab is boiled, you dump it out on a table covered with newspaper and everyone digs in and gets crackin'. A little drawn butter and some homemade cocktail sauce is all you need to serve with the sweet blue crabs.

- For the crabs: Place a large pot of water over medium-high heat outside or indoors. (I like to use a Low Country boil/turkey frying pot.) Add the beer, seafood seasoning and onion and bring to a boil. Boil 10 minutes to season and allow the flavors to develop.
- For the cocktail sauce: While the water boils, stir together the ketchup, horseradish, Worcestershire sauce, lemon juice and garlic in a medium bowl. Season with salt if desired.
- Add the crabs to the boiling water. Cook until the crabs are reddish-orange and cooked through, 15 to 20 minutes. Drain the crabs and spread on a table covered with newspaper or butcher paper. Sprinkle with additional seafood seasoning. Serve with melted butter and the cocktail sauce.

- Slice the crab apples with skin on.
- Add sugar and cinnamon to crab apples set aside.
- Combine the 6 ingredients for crust use any depth pan you want it will just increase the cooking time.
- Put your crab apples into pan with your water use the 1/2 cup water if your pan is a deep dish. Then top with your crumb topping completely.
- Bake at 375 for 15 minutes then 350 for 40 minutes.
- If using a glass dish bake at 350 for 15 minutes then 325 40 - 50 minutes until golden and the edges are slightly crispy.
